Not only did he provide excellent suggestions for the menu, he also sent over sample floor plans so the bride could decide on the layout/placement for everything at the reception. He is willing to work with you to provide the best menu possible within your budget. Because of his attention to every detail, he made sure that everything came together seamlessly so that you can just enjoy your event. And that we did! Everything was delicious - starting with the Local Oysters on the half-shell, Chicken sliders, Smoked Salmon Canapés, and Tomato & Pesto Crostini during cocktail hour. For our meal, we had a wonderful mix of Steamed Veggies, Grilled Honey Mango BBQ Glazed Chicken (YUM!), Charleston Shrimp And Grits (with turkey bacon instead of pork in the gravy, yay!), and Garlic And Herb Mashed Potatoes with gravy. Not only was the food delicious, Curtis also provided a beautiful ice sculpture and carved melon that was the perfect decoration for the oyster bar! We were also impressed with his staff. He was able to be flexible with the space he was working in as well as the menu still getting all fresh and local food. Once my parents arrived, We started the evening off with a fresh made whipped ricotta cheese Crostini there he had made earlier that day!! it was unbelievable! We had three toppings that we could put on top including Olive Tapenade, Sun Dried Tomato Jam, and Local Honey from a bee farm right in Charleston!! We absolutely LOVED this starter and had plenty of leftovers that I was eating it all the next day on the boat as well. The second course started with a shaved Kale salad that was our family friends favorite part of the meal!! It was a shaved kale salad with lemon, dried blueberries, pecorino cheese and pine nuts. sounds so simple, but it was one of those things that was just so memorable and delicious!! The next dish was a roasted beet and tartar salad that was out of this world. my parents are huge beet lovers, but I personally am not and believe me when I say I cleaned my plate on this one! It was cubes of roasted beet, goat gouda (which was amazing), fine herbs, lemon, and cubes of jicama. This was such a pleasant surprise and such a different type of beet salad that everything loved. The fourth dish of the evening was vermillion snapper ceviche. THIS WAS SO GOOD! locally caught fish from that morning which you could just taste the difference in how fresh it was compared to at home (we are from Missouri so not a lot of seafood going on there). This ceviche has Persian cucumbers, chilies which gave it a little subtle kick, lime, Thai basil, and corn nuts for a bit of a unique crunch which we loved! I just couldn't believe how fresh this dish tasted which really shows how out of the way chef ty goes to get the most fresh and local food available. I mean shopping for the food day of?! comon! amazing! The fifth dish was something that my mom and I talked about trying to make at home! it was grilled pepper shrimp with watermelon, pickled watermelon rind, and mint. It was so refreshing and so delicious with the peppered shrimp that you would never think to put the two together!!! Well see how my mom's and my dish turn out, but Im sure it will not be as delicious as chef ty's! The Main event was my dad favorite part of the meal. And let me tell you we had gone to halls chophouse the night before and my parents literally said that Chef Ty's steak was the best meal they had had all week. Chef Ty served 30 day aged prime New York Strip Steak with a local purple potato puree, roasted mushrooms and an incredible bordelaise sauce. The meat was so delicious, it just melted in your mouth. If you ever have Chef Ty for an event I highly highly highly suggest having him prepare this for you!! it was life changing. Finally after all this food you would think we wouldn't have been able to eat anymore. But then Chef Ty brings out personalized Vanilla Creme Brûlées out to the boat with Gingered Sugar on top and makes them table side right in from of us!! he tops them with fresh south Carolina Peaches on top and within minutes they were completely gone. We all had a great time participating in the meal preparation during the cooking lesson she gave us at our home. All of us agree that the quality and taste of the food she had us prepare was on a par with the best restaurant meals we have experienced. While the paella tasted excellent, I personally thought the marinated grilled lamb "lollipops" appetizer we prepared was an amazing taste experience. The dessert of chocolate lava cakes with raspberry ice cream put us all over the top at the completion of the meal. Chef Emily somehow managed to get us a first class meal while giving each of us personal attention, including our 10 year old granddaughter, as we learned to execute her recipes and cooking techniques. She even did all the shopping before and cleanup after too. My expectations were exceeded and I am glad I chose her when I went searching for a chef to give us a high level cooking lesson in our home as a birthday gift for my wife.
