    Honestly, I've been waiting for Pancho to open since the signs went up in the window. I'm an always say yes to tacos kind of person, so I was ready to try this new place. But! I was prepared to be disappointed - gotta temper the expectations, ya know? There was zero disappointment here, in fact, the food was so good it distracted me from my margarita (best new pandemic skill, just sayin'). I can't wait to go back and try more menu items, but so far, I highly recommend the nachos, the elote, and any of the meats - the birria, mojo pollo, and carnitas were out of this world. Trust me on this one - go, enjoy, thank me later.

    Unremarkable except for the grease dripping off the quesadillas. Fresher and healthier food at Chipotle. Will not be a redo unfortunately.

    10/10 would recommend. The atmosphere of Pancho was so inviting, staff was really great, and food was even more amazing. I was so excited to try Pancho because I've only heard amazing things about it. It was small and there was a small wait for a table, but it was worth it for the food. There were so many options to choose from and can't wait to try everything on the menu.

    Decent. Not special. Expensive. Burritos need to intensify the flavor, serve sour cream on the side, with multiple salsa options.

    A lot of potential meat was tasty but tortillas for tacos had a rubbery consistency. I hope the quality continues to improve

I did have a bunch of their sauces and salsas. None really stood out except their green sauce, which was used sporadically. Birria Tacos - These were very good. The consommé was flavorful, while the beef was tender. The tortilla was crisp too even with the consommé added. Elote Corn - This was rather plain. There was only a crema and cotija cheese present. It seemed like chili powder was supposed to be added, but I did not taste or see any. The corn could have been cooked a little better too. Guacamole - This was tasty. It appeared fresh and paired well with the chips given. I really liked the texture of it too. Chicken Flautas - These were deep fried tortillas with chicken, sour cream, lettuce, and cotija cheese I believe. These were solid. The chicken could have been seasoned a little more, but the tortillas were crisp and held up. Choriqueso Con Tortillas Tostadas - This was melted jack and Oaxacan cheese topped with Mexican chorizo over toasted nixtamal homemade corn tortillas. The cheese and chorizo was excellent, with lots of flavor. It did not look the best but tasted good. The corn tortilla was either old and stale or just fried way too long as it was very tough to chew. It could have made for a great bite. Will I go back? Debatable.

We decided on sharing the mixed grill fajitas. It was so good. There was a good amount of shrimp, chicken and steak. It had great flavor, and the homemade tortillas were very good. The green spicy sauce they provide isn't spicy but adds good flavor. We couldn't finish between the two of us. The food and service was excellent and would come back again.

The menu is extensive so there are a lot of options and undoubtedly something for everyone. Guacamole and chips were fresh, when eating the salsa the green one is rather spicy so keep that in mind (we love spicy so it was perfect). Tacos as an option is great because you can get them all the same or mix it up and order fish, pork, shredded pork and or sausage. The meat is slow cooked and accompanied by melted cheese, onions, and cilantro.....the perfect combination to dance on your Palate. The fish taco was lightly breaded chunks of fish and was not in the slightest bit greasy. I would highly recommend you order a horchata drink....it's a non-alcoholic, sweet, and refreshing drink. Horchata is made by blending white rice and cinnamon sticks in water and letting them soak overnight. After the rice and cinnamon are discarded, the remaining liquid is then flavored with vanilla, sugar, and ground cinnamon.....a must try and a drink you will crave all the time.
