    I've known Parker long enough to appreciate both his approach to BBQ and his execution. Catering is not easy - even with a food truck kitchen / smoker. Parker buys good ingredients and blends the meat, the sides and the dips / relishes to fit the menu. If you were wondering what the "Barks" part of the name is, here is the answer: "Bark is the combination of the spices that you rubbed on your meat and the smoke from your smoker, combining with the meat protein in a chemical reaction. Good bark on a brisket or pork shoulder will make the meat flavor out of this world" Parker is 'creatively grounded' meaning he thinks about the entire menu and the flavors of each item. No one item overpowers another - you won't find yourself eating a plate where every item competes with the others. It's a thought-out BBQ ballet (tbh I just made that up but it's true). I went to an outdoor dinner where Parker did a Spanish Parilla - splayed whole lamb and pig. Over a wood fire. There is no 'recipe' for this...it's all about getting a good fire, searing the meat, then backing off and allowing it to cook to the proper temperature. Takes due diligence and a watchful eye. His kitchen staff are all experienced and friendly. Give Parker a call / email and challenge him - I know he will come through for you (your winery / company / wedding...)

    I came across this place at the Lodi Street Faire and I'm a sucker for barbecue so I knew I had to give them a try. First they quite the line which was a great indication that they were serving up some great bbq, then I saw the championship trophies and then after I looked at the reviews I knew I was in for a treat. They have a great menu with a variety of options. They have pulled pork sliders, smoke roasted chicken, ribs, brisket sandwich, wings, breakfast burritos and then a slew of sides. What caught my eye was their special Rib Tips, these are so hard to come by so there's no way I could've passed on them. I also ordered a side of their macaroni salad. The rib tips were cooked to perfection, they were very tender and seasoned well and that sauce had a nice sweet, savory and smokey flavor. These were probably the best rib tips that I've ever had and they give you a nice amount for the price. The macaroni salad was very good as well, it had a bit of a kick and the bell peppers gave it a nice flavor and crunch. One of the better macaroni salads that I've had as well. The customer service is also great, the staff here are very friendly and the prices are decent considering it's barbecue. I'll be back if I happen to be back in the area and find their truck again.

    Got the chance to try out this amazing food truck while they were at the Lodi Street Faire. A coworker recommended them to me and I will be eternally grateful that he did. I'd been craving some good BBQ and these guys seriously delivered. We tried the rib tips, macaroni salad and the BBQ baked beans. Rib tips were tender with a sweet bbq sauce which is what I prefer. Macaroni salad was a little on the sweet side as well with crunchy fresh chopped red peppers in it. But the absolute star of the show were the beans-sweet, a bit spicy and smoky, they had bits of pineapple, sliced jalapeños and chucks of brisket-PHENOMENAL. The dish that everyone seemed to be ordering was the brisket fried rice which I dropped the ball on. However, now that I know about this truck I will definitely be visiting them again in the near future! It was obviously a popular truck as they had a constant line but they got the orders out quick and efficiently and service was super friendly. Prices were what I expected for good bbq. I highly recommend checking them out if you're into really great BBQ.

    Came to the farmer market with a couple friends, seen this bbq spot and stopped to try this out and OMG!!!! Its soooo goood 10/10 yallll omgggggg! The only thing my friend recommended is that they put bbq on of the sandwich:)

    Super tasty food truck that has selections of BBQ. They came to my work to cater us for the holidays. I had the Salt and Pepper Brisket sandwich with pickled red onions, the fingerling potatoes, and the harvest pasta, which was a seasonal side. I also tried my friends sliders and BBQ pork ribs, and the fudge brownie. Everything tasted great and Parker was super nice as well as the rest of the crew. Definitely check it out!

    Everything is fantastic! The pulled pork is moist and delicious! The tri tip is perfect and the ribs.....amazing!! Highly recommend

While everything on the menu sounded great, I was really just in a munchie mood and decided to order just fries. The staff were super accommodating and graciously gave me one of each sauce to try, which I really appreciated. The ordering process was easy, and as promised when I placed my order, the fries were ready within a few minutes, sauces and all. For $6, I was happy with the size of my order. The sauces were also unique and I enjoyed alternating between them for a different experience each bite. My favorites were the Caesar and the spicy ketchup. My coworkers said they liked their orders as well. The garlic fries looked and smelled amazing but I didn't want garlicky breath for the rest of the conference, so I'll have to try those next time!

They're pretty quick but when they're busy, it's a wait. I wanted to call them the other day so I could go in and out and couldn't find her business card in my glove box. Also, they only take cash. Let's talk about the sopes -- these things are unreal. Thick, fresh masa with perfectly crisp edges, loaded with your choice of meat, beans, fresh toppings, and that house-made salsa that hits just right. Nowhere else in town makes sopes. Then there's the mulitas -- a must-try, especially with al pastor or carnitas. Crispy, cheesy, meaty heaven stacked between tortillas. They don't hold back on flavor. And of course, the classics: the carne asada is juicy and full of chargrilled flavor, and the birria is rich, tender, and perfect whether you get it in tacos or on its own. La Fondita may not have a flashy online presence, but that's part of the charm. It's authentic, consistent, and always delicious. On my first bite of sopas I must have bit into a pepper because my mouth was on fire. I waited a bit and then went back to it but for some reason it was so spicy. In contrast the flautas had zero flavor. They give you 5 so it was filling but incredibly bland. The burrito was meh and there wasn't much meat or crema, mostly beans. I don't think I would come back to this truck.
