The same could be said for the pork cowboy, a grilled pork chop with a crispy, slightly charred crust, topped with a melting pat of herb-seasoned butter. I wasn't crazy about the pork riblets which were kind of tough and chewy, and not at all spicy for Nashville hot. Next time I will opt for the wings.
