    Bourbon tenderloin with macaroni and cheese

    This bbq joint really hit the spot! The seating area isn't the biggest, but they do have plenty of tables to seat yourself. We hit it right at lunch time and the place was packed. Even though they were busy our waitress was friendly and took care of us throughout our time there. I ordered the bourbon tenderloin with macaroni and cheese. The sandwich was delicious that bourbon glaze with bacon combo was top notch. This was one of the best bbq's that I've had in a while and I definitely recommend it!

    OMG!!!!!!! A+ with extra credit. Get the Hog Trough but with BRISKET! So much GOOD food for the money. The cornbread that comes with it is like CAKE its delicious if you like sweet cornbread--BEST EVER. I have had the Hog Trough with pork too and its also good. NICEST PEOPLE ON THE PLANET (so be good to them please)

    We ate here as a family and everyone enjoyed themselves. They support many types of people which made us even happier to eat there. The service was great. I got the root beer and the Mac and cheese with the brisket on top. The service was very friendly.

    Heard great things about Pauly's and decided to try it out with my wife. Tried the pick 2 platter, so chose pulled pork and ribs. Maybe it was an off day, but the pulled pork was more on the dry side, which should be moist. Also the ribs were kinda dry as well, was hoping for juicy and tender meat. The fried okra was mediocre, was served lukewarm. Coleslaw was ok, little on the creamy side for my taste. Sauces though were good. Overall would rate 3.5.

    Brisket, ribs, Mac n cheese, corn bread, and some loaded potatoes. All delicious!

    This is quite possibly the best BBQ in the area.If you happen to be near Arthur, Illinois I recommend stopping by. They have the normal fixins such as chicken, ribs, sausage etc. They also have brisket but only at special times or days. Be sure to get the brisket if they are offering it! I also strongly suggest you try the fried mushrooms. They are probably in my top ten of best fried mushrooms I've ever had. You get a lot too! The staff are also very friendly and the prices are fair. Get your hog on!

    We have ate at several BBQ places. This place has some of the best pulled pork that we have had. Nice atmosphere and reasonable prices.

The first kind of hiccup is that they must have recently moved building. Though they moved right next to their existing building, there was no signage and we had to rely on our own eyeballs. Which almost led us into the wrong building. Not a bid deal, realistically, but it threw us for a loop. Getting inside, it was super clean. Long bar, plenty of tables, modern, many tvs for many sports. Plus, the building itself seemed rather large. A chonker of a building, if you ask me. Our hostess brought us into what seemed like the back 40 of the building and seated us next to a garage door that overlooked a cement pad that will one day be a cement pad with things on it. Not even mad. Saw a train. Here's the money shot. Have you ever been happy adjacent? Have you ever been right up to the edge, the precipice, the peak, then turn around and leave? That was kind of the ideal feeling here. The ambiance and service and general-ness of the entire place was spot on. The food itself looked top-tier. But it felt a click away from perfection. Let's look into it. As a hefty man (fat, not the garbage bag brand), I'm a man of appetizers. Also of wings. Therefore, sign me up for 12 bone in wings for an app. Split into three flavors: Carolina BBQ, Buffalo, and regular BBQ. They came out looking and smelling delicious. The sauce flavors hit hard. But I was a little let down with the dryness of the wings. I know sometimes it can be difficult to knock a wing out of the park because those damn things just want to get crispy. But I don't want to fight chewing the meat off the bone. It felt like a battle me and my mush mouth would lose. Now, from what I understood, all sides were a la cart. Color me fine with that, fatty will order anyways. Especially since I saw they offered street corn AND hushpuppies. So naturally, that's what I ordered. The hushpuppies came out and were the round kind. Which I am no stranger to. They had good flavor, good done-ness, but missed the mark on the size. If they were hush people, they would have been premies. A little sad they didn't get to experience their full potential. Now, for this part I will say I was forewarned. My server did mention the street corn came in a bowl and was served cold. I thought I was better than somebody who judged street corn by its temperature. I was wrong. It did come cold. My wife and I split half rack of ribs, 1/3 poind of brisket and pork, jalepeno cornbread, peach Bourbon baked beans, and brisket mac and cheese. This is going to sound silly especially on how good the brisket and pork were - but I enjoyed the beans more than anything else. These beans were sweet and spicy with peaches, Bourbon, and red pepper in them for a truly amazing experience. The brisket and pulled pork were elite as both were tender and juicy. The ribs started off great and fell off the bone but the end was a little too tough. Jalapeño cornbread was sticky, sweet, and had the kick you would expect. Brisket mac was cheese but the brisket seemed out of place to me. There are 6 sauces: Carolina Red (mild), Georgia Mustard, Perfect 9 BBQ (vinegar tomato base), Triple S (medium), Sweet Chili, and Hot Carolina Red. All sauces were fantastic! Based on my review, Carol Lou's serves up a 5-star experience but 2 things holds them back. 1. They charge you for sauce. They charge $1 for an extra 2 oz container of sauce. You only get one choice of sauce with your sandwiches or meat and you don't get any on the side if you choose for them to dump it on the meat. Carol Lou's sauces are not made of gold and it is ridiculous to charge for extra sauce. 2. Sweet tea was rurnt and that is a Southern Word for bad and awful. It tasted old and it had gone bad. Other than those 2 things, the food is excellent but if you are a sauce-aholic and sweet tea lover like me, be prepared.
