Went here for a slice of cranberry pie, and wouldn't you know it I got there and they were sold out. %$#*#@* Got apple crumble and it was very good. The crust was just as it should be, the slice held its shape, no liquid making the bottom crust soggy, etc. Very good. I also got a Chicken Pot Pie handpie. It was good, had less creamy sauce than I expected, but I think this might have been because that'd be a handpie mess. I wonder if the actual "pies" would have that typical sauce. The best pies in Brooklyn! We went here for pi day for the $3.14 slices and they were so amazing , sfaff was so nice and friendly and made great conversation. It's a open kitchen so you can see the baking when you step in and the counter is one the side with a full service coffee area with fresh baked pastries made in house .They make all kinds of speciality espresso drinks too, I usually go to Variety Coffee but will walk the extra 2 blocks to come in here for my coffee from now on since the vibe is great , coffee is really good and the baristas make sure you get exactly what you want and is very friendly unlike most coffee spots in Williamsburg. Pie Corps was a welcome addition to the neighborhood! Where else can you can you get a full meal and equally delicious dessert to share. Their new sides that you can order with their savory pot pies are such an easy fix after a long day at work. My boyfriend and I like to stop in and enjoy our pies in their cozy cafe across from McGolrick park, the kitchen is a great open space like others said before. You can see all the fresh pies coming straight out of the oven. We love to get two slices to share after dinner. Okay seriously, why are there no pie shops in Boston? I have to visit my bestie in Brooklyn to get my pie fix on. I heart this pie shop so hard that upon waking during a weekend visit, my bestie looks at me and says "Pie Corps?" And I sleepily nod while envisioning the pies that are on display in their glass case next to the register. During this visit, I had the Peach Hibiscus Pie, which tasted like a pie trying to let go of summer and start fall - buttery crust that flakes away in your mouth, peach reminiscent of the ripe summer sun, and the hint of sweet hibiscus. It's a recipe for some food lovin'. The next day (yes I went two days in a row - don't judge me, I love pie) I had a mushroom, egg, and cheese hand pie, and it was equally delicious. It was hearty and filling - perfect for a foggy day inside with a book and some coffee. The pie is awesome! At first I was turned off by the $36 a pie price point so I purchased 4 individual slices at $5.00 a piece to give it a try. I bought the apple with rosemary caramel sauce and blueberry pie, which also had almond in it. I loved it and so did the folks I bought the pie for. This place is right by my house, super cozy and staffed by friendly people. I'm not 100% sold on the concept, but I'm happy to see interesting new businesses pop up in my area. But since I'm not, I'm just... moderately pleased, I guess. The pies are good - both the savory and sweet kinds. The breakfast pies (bacon/egg/cheddar, croque madame) are my favorite. The crust is really tasty, but, um, holy butter. Don't get me wrong - I love butter. I dip my radishes in butter, for the love of God. So I'm not exactly complaining. But it's the most buttery crust I've ever tasted, so much so that it borders on excessive. I hate to be the jerk complaining about price, because clearly the pies are fresh and handmade with plenty of love, but $6 for a tiny hand pie? $12 for a pot pie? Ouch! I love this bakery, to me, it's much more than just a place I buy simple confectionaries. They know my name, what I like, and are always baking something lovely, filling the neighborhood up with filo dough and butter crust wafts. Every time I pass through the front door, I get the feeling like I'm walking into my aunt's place in Queens for a snack, and the same wooden chair I left the day before is patiently waiting for me to return. It moves me. But that's just my general feeling of Pie Corps, that's my vibe of the place. It may mean something different to you but it will have a meaning, it will leave a mark, good food does that, it stains your palette and ruins you for Hostess and Entenmann's crap. The people, each set of hands that bake, stew, marinate, and prepare my delicious meals are all putting alot of love into their craft and it shows. Food, to me, is extremely personal. At Pie Corp, they use quality ingredients and their recipes on certain items are second to none. I just had a smore's pie. Smore's... Simple, yet amazingly executed, and now, armed with a spliff, I'm happily sitting here, writing this review, while the rest of the mushroom barley soup I took home with me awaits on the stove top. Thanks to CoarseHorse.com, I found this pie crust intensive class and signed up immediately. I went to put this review on their website, but couldn't figure out how to do so, so I figured I'd do it here! What an AMAZING class this was! When the teachers informed us that we were going to make our own pie and crust, I was a little skeptical, expecting the pies to be as small as my hand or the crust to already be pre made--but this was not the case. We spent over 3 hours not only making and learning about how to make our own, hands on, pie crust and apple pie (which was a full 12 inch size pie btw!), we talked about the science of pie crust, what happens to gluten during different steps, why and how it does so--I was mesmerized and took plenty of notes (as did everyone else) during the class. I would take another class from them in a heartbeat! And just as a true test of learning, I was able to recreate my crust skills at home last week without my teachers at my side. I couldn't be prouder or happier of the money spent on this class to learn how to make the perfect crust! read more

Don't bother w/ this place! Yesterday, we tried 3 different savory hand pies: the ham & cheese, the chicken pot pie, and a fennel & sweet potato. The woman at the counter offered to heat these for us and we were happy to have her do it but it struck us that these should already be piping hot (made to order, perhaps?). Anyway, she reheat them and brought them out to us. The crust was warmish but the filling was COLD - not room temperature, COLD. So, cold that it made it hard to taste the filling at all. Everything just tasted like cold air. Worse, the crust on all 3 were limp. The name of this place is PIE CORPS. They should have the pie crust down to a flaky and buttery art but it was lifeless. We planned to order a slice of pie after our meal but decided against it. Ever since this business was sold and is under new management it has gone downhill and has crashed into the mountainside. I recently went inside a purchased a three dollar plain croissant. After two bites, I could tell it was completely stale. I returned it to the the vacant eyed hipster girl working the register, and upon asking her when it was baked she replied "probably yesterday" and then proceeded to give me the I only work here face and told me it's the "store policy" to sell the remaining batch from the day before. Okay, for the uninitiated so this artisanal bakery sells stale, day old pastries for full price and they give you an attitude and no apologies when you protest. This place is great if you don't feel like drinking instant decaf, or going the caffeinated way (as thus lies the way of narcotics.) Pie Corps is one of those places and it has easily made its way into my weekend routine. My husband and I have been here for breakfast the past 5 weekends straight, and we always walk out happily raving about the food. [[This place is more like an artisan bakery with a thoughtfully decorated retail counter at the front: not a lot of seating and you sometimes have to wait in line because there is only one cashier. That is the only trade-off. They seem more focused on wholesale and catering than retail sales, but man are they serious about their pie!! If you only want java, you're better off going a couple blocks over to Variety to save time and moulah.]] It's easy to be seduced by a Slice of the lovely handmade pies on display near the register (honey lavender, grapefruit custard, s'mores, pecan, apple rosemary, to name a few) but the chalkboard menu has much more to offer for those craving something more savory.
