Quite a large establishment! A friend recommended it to me and I was amazed by its sheer size. It is a fantastic place to go with friends, enjoy some great brews, share some great food, and watch the game along the way. There aren't any limits with Pilot Brewing. It's able to cater to any group of friends or family! We share a lot of the appetizers and the one that stuck out for me was probably the Poke Nachos with ahi tuna. My husband and I joined a few friends for trivia, which Pilot Project hosts on Thursdays at 7pm. We have bopped around to different trivia locations, but it was our first time at Pilot Project. Right off the bat, the main hall where the trivia was located was not the right spot to be hosting this event. The acoustics were terrible and we could barely hear the questions despite the host using a mic. He did come around to each table at the halfway mark and at the end to repeat questions if we needed, but overall the trivia experience itself was a little lacking for this reason. Onto the food and drinks, both were decent! My first time at Pilot Project was for the Pride party Yelp event and I already knew they had some tasty items on their menu. I got a draft margarita and my husband got a shandy - Brewer's Kitchen Mañandy. My margarita wasn't anything "special" but it tasted good and exactly what I wanted. My husband loved his shandy and even I liked it despite not usually being a beer-drinker. It was light, summery, and floral. We decided on some apps for dinner and got the cheese curds and fried cauliflower. The cheese curds had a polenta beer batter, which was very different from other fried curds we have had. It was VERY crispy and crunchy as a nice contrast to the smooth cheese inside. Most of the curds were big and stuffed with cheese, but the smaller ones were pretty empty. The chive garlic crema it came with was very garlicky (in a good way). It initially paired well with the curds, but then I wanted to try the curds with other dips, which worked out well because the cauliflower came with two dips! The first thing we noted about the cauliflower was that they looked very pale and they were not crispy at all, which could be on par for the tempura batter and we just didn't realize. The cauliflower itself was also pretty bland and definitely needed to be eaten with the dips. It came with a plum gastrique and a cherry pepper aioli. I personally thought the gastrique was too sweet alone, but with the aioli it was okay! Overall the dish was good, but I think we expected a more flavorful and crispy fried cauliflower that we've had elsewhere and this just didn't hit that spot. read more

Checked out the new pilot project for the first time in MKE this weekend and I was impressed! I had been to the space before as MKE brewery but not as the pilot project. I am not the biggest fan of the building as it is very big and warehouse feeling but it does have a lot of room and outside seating. The food was outstanding! Everyone was pleased with their meal and honestly it was one of the better meals I have had at a brewery. I definitely am going back for food. The service was okay as you don't have a waiter as you order everything via your phone. It's nice because things come out fast but it took awhile for them to clean our plates and you can't really ask questions about menu. Overall, if you're looking for a casual night out with good beer and good food. I'd recommend pilot project! read more

The food and beer saved this place from a harsher review. We were looking specially for a rooftop bar and looking at the website which stated our roof is open no reservation needed on a sunny day decided to go to Pilot Project. Unfortunately when we arrived we were informed that the roof was closed for the day. We ended up sitting out front at one of the picnic tables which doesn't have any wait service, you scan a QR code which gives you menu ordering and payment options. Kind of like ordering off door dash. It's not that bad of a system as you can keep your tab open, order drinks and then food and even more food before closing out. Started with one of their beers, the Two Falls Hazy India Pale Ale which I guess I expected on draft but came in a can. The vessel didn't matter as the beer was delicious. I'm not sure if it was brewed and caned on site but I do recommend it. Next up we ordered the pretzel bites as I thought the French onion dipping sauce sounded unique and worth a try. I thought the portion of pretzel bites was very generous and the dipping sauce was amazing, Again I recommend trying them. Next up was the Arrabbiata margarita flatbread which states in the menu that it is made with with a spicy chili sauce which was no joke very spicy as advertised. Food is brought by runners kind of no frills, had to ask for one of them to brink us napkins. I almost gave them 3 star for the whole experience but the food was great. Enjoy! read more

Guys! I have never seen a bigger bowl of cheesecurds. I went to pilot project for a beer on a Wednesday night, I was happy to see the space was very busy with crowds of community tables playing Pixar trivia. We had a group of 5 and were seated at a couch/lounge area. It was self ordering via a QR code which you could also pay your tab - how efficient! The waiters then brought the beer or food to your table, I tried the hard kombucha which I really enjoyed. We also tried the cheese curds. Now, I do think they were heavily breaded either the polenta beer batter but with that being said they were very crunchy and the garlic chive crema paired very well. The serving size is huge! Our group of 5 left many cheese curds on the table because we were full (this never happens!). I would recommend the pilot project next time you want to grab a beer with friends! read more

Wildly impressed with the food here! We expected them to have tasty beer, which they did, but the eats stood out to me even more. My husband and I stopped in for a bite ahead of the Bucks game on a Sunday. To our surprise the place wasn't at all busy, but that meant we got to snag a spot at the bar. This was my first time in the space since Pilot Project took over, and they didn't make any changes to it whatsoever, which isn't a complaint because it's a really cool venue. Hopefully they can continue to fill it because it's a ton of space! I'm not a huge beer drinker myself (don't get me wrong, I really enjoy it, but it just sits too heavy on me). This being said, my eyes went straight to their hard kombucha options. Wow, TASTY! Of the two flavor options, I went with the ROVM - Hibiscus Berry. As with all kombuchas, it was fairly carbonated with a punch of flavor and tartness. I loved the strawberry/raspberry notes and the drink overall with very fresh. A great option for those who don't drink beer but want to enjoy this place! Gluten free, and low sugar as well. My husband on the other hand... big beer drinker. He enjoys trying different varieties, and had nothing but good things to say about the Brewer's Kitchen Hazy IPA and Funkytown American Amber Ale. On to the food. Which is worth noting because this isn't your typical bar/pub menu. We split the burrata Brussels salad and the acorn squash flatbread... both fantastic and so flavorful. The salad had citrus, elderflower and hazelnut, which could all be tasted. As for the flatbread, it had a thick, warm bread base, and the squash puree was lovely. Topped with goat cheese, chile garlic rosemary oil, and crispy kale. Chefs kiss. I will say, that as tasty as these dishes were, they do seem overpriced. $17 for a flatbread... oooof. Luckily it was dang good. I'd look forward to coming back here when the atmosphere is a bit more bustling, or during a fun event. Great space for it! read more

Ambience: modern, spacious, and loud due to the warehouse interior and high ceilings Food: We had the big pretzel which was ample and fresh with a honey mustard dip. The cheese curds which were just okay. This was a disappointment because recommendations from YouTube gave them top ratings for Milwaukee. They didn't come out hot and didn't have any stretch; but they did come with three sauces: whole grain mustard, tasty dilled yogurt, and an okay cheese sauce. For brunch we had the avocado toast which was just fine and an ample portion. Two of us ordered the Caesar salad, one with ahi tuna and the other with salmon. Both were ample portions, but one was sent back due to getting the protein wrong. It was replaced quickly. The salmon was a little overcooked. I had the vegan mushroom root vegetable hash subbed with real scrambled eggs. That was just okay as well. I was expecting more variety of vegetables, but they were mainly just sweet potatoes and regular potatoes. Feedback overall on the food was it looked good but was unremarkably seasoned. Drinks: Bloody Mary bar was pretty good. You can choose your alcohol base and they had a house and Zing Zang mix option with different salt rims, plenty of pickled veggies and hot sauces. A couple of us ordered the different beers and enjoyed them. Coffee was hot and strong. Service: friendly but understaffed both at the bar this Sunday and for table service. Our food came out before the drinks came to the table. We had to wait to get attention. I don't fault our server, she just had too many tables. Beautiful little bier garden style brewery. I love the sky lights. The concept is really unique as well, kind of like a "test kitchen" of breweries. I like places that have the WR code order & pay system. I think it streamlines things a lot better. I will say the dish/ glass clearing could be a little more prompt. We had to put our empty stuff at another table to make room because they kept bringing stuff out but leaving the empty glasses. We ordered their cheese curds, which to me were a little too heavy on the breading. Also the rosemary fries. I wasn't fond of the sauce that came with the fries. We stopped by Pilot Project on a Saturday afternoon, and we were promptly seated next to the beautiful wall of plants. The space hasn't changed too much since MKE Brewing left, and it is still open and full light. We were warned when we sat down that it would probably take a while if we wanted any food, as the kitchen wasn't accepting orders - they had been slammed by the Marquette game crowd. We ordered flights, always a good option. The wide variety of breweries and beers available is very fun, and we all enjoyed what we chose. Our server was extremely pleasant through our visit, and we really appreciated her as she was doing a wonderful job (thanks, Elexia)! She seemed to be the only person serving tables at the time. This would be my only issue with our visit - why weren't there more people serving tables on a busy Saturday afternoon, especially a game day? When we arrived at 1pm things were pretty slow, however by the time we left at 5 things were very busy again. There were several times throughout our visit we were waiting quite a bit to be able to order drinks. I didn't order food but my friend opted for the Fonduta cheese appetizer which she enjoyed. Over all, Pilot Project is a great concept and we had a really nice visit. The only issue was the slow service, due to a lack of staff on a busy day. read more

Hubs and I needed to get out of the house and he suggested the old space for MKE. I hadn't been since it was MKE, and clearly also forgot what it looked like previously. I love all the greenery and the light fixtures. Issa vibe. I sampled a couple of beers before committing to the farmhouse ale, and it was muy deliciosa. I tend to lean towards Belgians and it was giving dubbel vibes. I'm not going to lie I don't like ipas, so I don't know which one he got but I think it was the 1st one on the menu. He said it was very good and I'll take his word for it. We did have guys come up to take our order, so we could be full on lazy and didn't even have to approach the bar. They use toasttab so I mean easy peasy everything. Oh we grabbed an order of the rosemary fries, and they were just the level of salt I like to accompany my beer intake. I work in the building connected to Pilot, and the last restaurant was definitely a go to lunch spot/happy hour place. Since the change in ownership, this is my first time checking it out. I like the new decor and the service was top notch! Lots of bar top, table, and couch seating for really any occasion or size of group. I don't think I recommend going there for lunch. There's not really a lunch menu and even the sandwiches are pretty heavy for a mid day meal. I got two of the flat breads and they were super tasty! I suppose a flat bread and salad option would be good if you go over lunch but it's pretty pricey. The deviled eggs were amazing but only came with 3 for $9 so not very shareable amount a group. They have good happy hour specials M-F and I'm excited to continue trying their beers. read more

We dined at Pilot Project tonight for the first time. As it was with Bottle House, the physical space is really great. Our host was also really nice! The menu and ordering is all done through a QR code. We were disappointed when reviewing the menu because many items were not available. All three pastas were listed as sold out, so was the burrata/Brussels dish, one of the salads, and at least two others. The other downside is that you can have things removed, but there is no note section in the order system to request any changes. Our group of three each ordered on our individual phones. Which meant that my meal came almost ten minutes after my two friends' which wasn't a huge deal but kind of a bummer for them to have to sit with their meal in front of them (I told them they could eat, but they were polite!). Both the dishes we ended up with were good, so we were happy about that. They enjoyed the gem/kale caesar salad and I had the meatball sub. The meatball sub was huge and impossible to eat as a sub but still tasty. However, at like 7:45pm they were very loudly cleaning up and removing dishes from the tables, etc. We were then promptly asked to leave at exactly 8pm, while we were in the middle of a conversation. It was very disappointing. Unfortunately no one in our group was a beer drinker so we can't fairly assess that - which I'm sure is a big part of why most people would be going here. All in all, I'm not in a rush to go back - but maybe will give it a try in a few months once they're more established. read more

The real project at pilot project is the service. Whichever two bartenders were on the rooftop on the 28th of June 2025 from 8-10pm were the worst possible bartenders ever! The rooftop was very slow this evening with the actual bar top more than half empty yet it took 10+ minutes to get any sort of recondition. No "We will be with you shortly" not even any eye contact. The bartenders were too busy frolicking off in La La land to do the one thing they got hired to do... tend the bar. I will say everyone who was downstairs tonight was absolutely lovely and matched the levels of service you would expect from tip based profession. Frankly I'm just disappointed in the complete lack of care that was upheld tonight. The rest of the place was lovely but after an experience like that I question how much I really care to go back. read more

I made a reservation for 6 people on a Saturday night at 5:30. I naively thought the earlier reservation would mean easier parking. Not the case. We ended up several blocks away. When we got to the restaurant, the other people in our party said they tried to order cocktails and a Charcuterie board (both of which were on the online menu) and were told the restaurant didn't have cocktails because they didn't have their liquor license, and they didn't have any Charcuterie. We decided to abandon the idea of dinner and go up to the rooftop, but were told it was booked for a private party, so that was the third strike for us. We decided to go elsewhere. read more

First of all, the space is gorgeous. The bartenders were super friendly and we got a little bit of a private tour which was awesome! We got to see the old Pabst sign which was the highlight. I did a flight and all I tried were delicious, especially recommend the Field of Arrows or the Copitas which had such a unique smokey flavor, just like a mezcal. We also tried the pretzel bites with the French onion cheese, delish! (Ask for a second order of pretzel bites though, lots of cheese but not enough bites in the order). I think it would make a great date spot or a nice spot with a bunch of friends. Lots of room and tables. The bar has ample seating as well.
