Fed Up Truck - Mexican Mac and Shrimp Bowl

I arrived about 45 minutes after the set arrival time and there was a nice crowd. Loved to see the support from my neighbors! I was able to checkout the menu before heading down and had set my sights on their new Mexican Mac & Shrimp Bowl. This bowl was listed with the following -- mac & cheese, Cajun butter poached shrimp, queso, peppers and onions, black bean corn salsa, citrus crema, salsa sauce, jalapeños, and tortilla strips and cilantro. All things I love! Once I got to the window and placed my order I only had a short wait to receive my food. The guy at the window was super friendly! I brought the goods home and knew I was going to have leftovers for days. (Which I'm still enjoying!!!). As you can tell from the list of ingredients above I found the bowl offered a lot of fun combinations making for a great eating experience. The 2 things that would have elevated the bowl for me would have been salt and spice! I understand that serving a large range of clientele from a food truck would force seasoning to be on a lighter handed side versus a heavy handed side. But the reality is that I got to bring my bowl home and adjust the seasoning and spice level myself. :-) I'm definitely looking forward to seeing the FU truck again.

It was super easy to order as well. Street Food Finder is an awesome tool to order from any food truck on certain times/days depending on location. We ordered a few minutes before 6 since we were really hungry (hours tonight were 6-8 pm). The website kept me updated on when the food would be ready - I received a text as soon as the food was ready. I had a Jalapeños Bacon Burger with tator tots, my husband had the Ultimate Buffalo Chicken with Fried Pickles. Everything was perfectly cooked and delicious! We were very happy with our order, and hope that they come back soon. Unfortunately, we were so hungry that I didn't get a picture of the food!

I never normally order a double burger but now that I have a food loving babe, I have to share and I normally don't! Lol! Would totally order again!!! Also, I'm almost 100 percent sure it's just the entire fam in on this truck, how cool! Support y'all! Eat food and feel good all over!

On the day of our wedding, there was not one request that Mary did not accommodate, and there wasn't a single thing out of place. Mary blew away our expectations and delivered top level service for us and our guests on our wedding day. We actually had our wedding on the beach and took a party bus to and from The Arch. Mary made sure our ride was on time and knew where to go and made sure it returned promptly to take us back to the Arch for our reception. Mary arranged to give us a few minutes alone to have our cocktail hour as newlyweds, which was fantastic as we actually got to sit down and eat! The venue included the tables and chairs which was a huge help with the feel of our wedding day. I cannot say enough great things about the venue and the staff at The Arch. The staff was professional, friendly, and attentive. There was not one thing that I would change about my wedding day.

Thereafter, she would not leave the couple alone. She monopolized their time apologizing for her behavior, including standing between them when they finally had an opportunity to sit and eat. Multiple family members tried to intervene about her very strange behavior, but she continued to make their special day about herself. Note, my concerns aren't about the chaotic wedding. We know things can happen. It's how she handled it that was unacceptable.

The chicken salad is unlike any chicken salad I've ever had before. If I was a chef, maybe I could explain it better but this is not remotely close to what you get in the grocery store where someone plopped a can of chicken, mayo and pickles together. Every quarter, our Scout Troop does a Court of Honor where we recognize the accomplishments of the girls from the last few months. Each Court of Honor is set up for a pot-luck dinner where each family brings in something to share. I thought about making mac n cheese myself, which I'm highly capable of doing, but thought, why not support a small business who I know can make some kick-ass mac for the girls. Pickup was easily scheduled and completed. I arrived at the event with a huge tray of gourmet mac n cheese, and I think maybe I brought enough back home for me to have as a side for my next meal. Total winner with the families involved in our event. Excellent flavors and texture in each bite. Would recommend The Good Cooker for meals at home or for catering any event in the future.
