A great restaurant. Beautiful, firstly. The Hotel Jerome is gorgeous. Their Bar too. Food wise, the menu has obvious Italian influences. And while the Boar Sausage with Mustard and Spätzle was good - their signature dish is clearly the lamb ragu papardelle. It is of the quality you would get in a Roman restaurant. Pasta clearly hand made, that day. Meat must have simmered for days. Their wines are 'comprehensive'.....and we enjoyed a fantastic Piedmont. Service is discreet and prompt and their pricing within the expectations you get when you have completed your meal. Ingredients like these dont come cheap, so they aren't. We stayed at the Hotel Jerome so we came here for breakfast daily, which was incredible. But what I don't think people know is how fantastic their dinner is! We had a mishap with one of our reservations while in aspen, so we came back to the hotel and the Prospect was able to squeeze us in. We started with the tuna appetizer as well as the meatballs, which were both to die for and I'd order them again in a heartbeat. The meatballs are garlicky, the sauce is wonderful, and the polenta they are served over is very flavorful and compliments the meatballs perfectly...and best of all? They're not dense like so many meatballs can be, they're the perfect texture. Highly recommend! Plus they gave us some killer cornbread to start. For dinner I opted for the vegetable pot pie...wow, what a great decision! It was so unique and flavorful, with a touch of sweetness and I was so happy with my choice! Everyone else I was dining with felt the same way, from the chicken to fish to the cavatelli pasta, we were all beyond pleased with our meals. Oh, and the wine was spectacular too. What a meal. Overall, we couldn't be happier about our reservation mishap elsewhere because we wouldn't have gotten to experience this! 5 stars all the way, I know we will dine here for dinner again when we return. read more

Lovely restaurant but service for the prices weren't on point. I know employees are difficult to hire currently. The waitress didn't know the menu and one order was brought out incorrectly. Usually with a restaurant of this caliber the manager apologizes. They offer the Prospect and the J-Bar menus. So we ordered from each. At the end they put on a 22% gratuity. So watch your bill. We were a party of 6 and the bill was about $300 a couple. read more

This is one of the best places to eat outside in all of Aspen. The menu is fun and affordable. At the beginning of summer, the service was a bit uneven, but they have definitely upped their game. Ate lunch for the 2nd time at this Jerome Hotel restaurant called The Prospect. There is inside and outside seating. The outside seating has umbrellas and gorgeous flowers. There is an outside bar. Our waiter was wonderful. I had the divers scallops and my husband had a Caesar salad, both were wonderful. read more

Unfortunately we had a very disappointing experience here, mainly considering the high price of the food and cocktails. Ambiance is nice. Server was polite. Food was average. Biggest issue was the length of time it took to get our food and then, after a very long (guessing 30 minutes!) wait, they served our appetizer salads at the SAME TIME as the entrees. We politely complained that we had expected to get our salads prior to our entrees as is the norm with virtually any restaurant in the US. She mentioned we had to REQUEST our $24 Caesar salads first. My wife and I stopped here for lunch as most of the restaurants in Aspen were closed for the winter. We were very disappointed with the food and service, to say the least. Our burgers were bland and soggy as the bread was soaked with grease. My wife pulled a 4 inch hair from her burger which we showed our waiter and he offered to comp us a free soup for the breach in quality control. Used to come here a few times a year as a treat and always had the best time and the best service. It was always a bit pricey but worth it because the service was exceptional and we always felt appreciated. Went this morning for breakfast for the first time since before COVID. We made a reservation as well. When we arrived we went inside and checked in with the host. The host did not greet us but just stared at us until I explained we were there and had a reservation. She told us we needed to go outside to be seated. We went back out the front and around outside where the same host met us. She just stared at us again until I again explained who we were and what reservation we had. We were seated and waiting about 7 minutes before being brought water. Then had a waiter come take our drink order. About a 10 minute wait for tea and coffee, then we had a different waiter take our food order. All the tables around us were getting the complimentary daily muffins with jam and butter which I remember having. We were not brought them. When we finally got our food I asked about the muffins. A different waiter brought us muffins but no butter or jam. They were very dry too. I asked two separate waiters for the butter and jam and they came about 15 minutes later. I think we had 5 different waiters in total and 4 different bidders. Nobody asked us how we were or showed any friendly welcoming attitude. The food was good as always even though they've doubled their prices since before COVID. They have an automated 22% gratuity which I am fine with usually, just not when we are treated so poorly. I so used to love coming here for breakfast but this was such a horrible experience that I will not be returning. I don't know how a place that is known for its friendliness and great service can treat its guests so poorly. I work in the restaurant industry in aspen and would never give this type of service and expect to keep my job. Maybe it's because we were there midweek and not on the weekend but still shocking. Wait staff needs to communicate and be assigned tables. And it's the Jerome, a certain level of expertise and level of service is expected. Bummer because it seems most places in aspen have become like this. The Little Nell will replace the Jerome as my favorite breakfast place in town. read more

Had a solid dinner here with a group of friends. I chose the three courses. The beet salad was delicious. The yellowtail crudo was just ok and I only ate a few bites as I found it too citrusy. And the main dish of halibut over spinach was delicious. Overall, I think the price point was a bit high coming in at over $300 for 2 people with 3 courses each and no cocktails but that said It was a pleasing atmosphere with friendly attentive service and I would dine here again. read more

I have lived in Aspen for 30 years now and the Hotel Jerome WAS always one of my favorites. Recently all of the restaurants at the Hotel Jerome have been adding a service charge to their bills, even if you only have a small group....or just cocktails. AND THEY DONT TELL YOU! So, recently I had dinner there with a friend. We had a $95 bottle of wine and 2 very average salads and the bill was $300. It was $250 with the service charge, which is already way too much for an inexpensive bottle of wine and 2 salads, and then I added a $50 for a tip not knowing they had put a service charge on already. And I just realized this is why my bill was recently $100 for 2 bowls of soup and a glass of wine...outrageous! Aspen is expensive but this is just too much. I won't be eating there again until they either stop adding the service charge or let you know that it is on there. read more

Just ate dinner with my entire family at the restaurant was well decorated. The warm tungsten lighting added a coziness to the atmosphere. The food was a little too heavy and rich in flavor all around. I was going to give three stars, except the service was outstanding. The hostess Genna (?) was beyond accommodating with a busy restaurant. Our waiter Assim from Mexico City was also incredible. They make up for the lack of quality service at some places throughout the city. My rigatoni was great, and my family loved their dishes. Holy Moly - if you love house made jam, well this place is...yep, you guessed it - your jam. Located in the uniquely masculine, yet luxurious and stunning lobby of the Hotel Jerome, Prospect is a stark difference to the warm colors of the dark wood and decor of the lobby in its white walls and bright, breezy hues. Decor that certainly wakes you up for the day and puts in a light mood, which it certainly did this particular Saturday morning. Greeted nicely at the door and seated immediately, we were ready to eat and drink. And we did just that. The server, a lovely and polite gentleman from Transylvania (yes, it's real and it used to be Hungary. I had a airhead moment), was so attentive and got our delicious bloody marys out to us immediately. Speaking of that bloody mary - perfectly spiced with candy bacon, blue cheese stuffed olives, and just the right amount of vodka. Considering the thickness of the Bloody Mary, I am happy I opted for the english muffin with the house made jam, but the hubs really loaded up with the Huevos Rancheros. The huevos rancheros were so unique - almost in a more constructed style all piled up neatly between two fried, flat corn tortillas. Like a huevos rancheros pancake. Mediocre experience especially relative to the price. We had several orders of halibut, all badly overcooked and a very bland dish overall. Wine pairing was quite unspectacular. And service was lacking, from mixing up orders to being absent (never checked in after delivering). Nowhere near the experience or quality one should expect for this price. Let me just say, I had never been to Aspen before and didn't know anything about Prospect, but I did hear a lot about the Hotel Jerome since we were headed into aspen for the Food and Wine Classic. The food was OK, the service was extraordinary. I got the flat Iron steak, my mom got the chicken, my grandmother had the lamb. The chicken was the best thing we had, the flat iron steak was tough and it wasn't the way I had it cooked, it was just tough and not tasty. The chicken was moist and came with a tasty puree. The lamb bones were huge and I really expected it to be better since this is the place you would want to get Lamb. The servers were amazing though, they called my mom a taxi when she wasn't feeling well and even directed me to a place to get medicine. Located inside the Hotel Jerome an Auberge property , beautifully decorated "Prospect" restaurant will leave you wanting to come back to try the rest of their Menu & amazing service. Our waiter "Pierce" reminded me of the butler I would love to have if I was a multimillionaire! Just to give you an example my son has been experiencing nose bleeds due to the altitude, Pierce noticed our situation & immediately brought us a box of tissues without us asking for it.. The lunch menu has a diversity of dishes to satisfy a hungry crowd. For apps we ordered the spinach & artichoke dip it comes with warm soft pretzels & veggies, we also ordered the short ribs soft taco , they were both delicious . We also ordered the turkey bacon club it comes with crunchy seasoned shoe string fries (amazing) , the lobster salad & the burger with all the fixings & shoe string fries . Those fries r so good I kept stealing them from my husband . For dessert we ordered the cookie skillet , is served with vanilla ice cream & topped with toasted meringue , scrumptious ! We also ordered the vodka melon Napoleon delicious & refreshing. Espresso & cappuccinos r served with amaretti cookies everything was delicious but the service was over the top!!! The ambiance of the hotel is amazing. I wish the food and service we had lived up to it. Our waiter was new, we understood this and offered lots of grace, but the service was awful. I ordered the trout. I found it to be on par with something I would order at Olive Garden. The fish was dry and had little flavor. The orozo was nothing special. If you are dining in aspen, skip this and go straight to the Rustique. Money better spent! read more

This will be short. Very pricey and the food wasn't that good... I got their "Big Bowl of Chicken Noodle Soup" (with seasonal vegetables). Well the seasonal veggies were onions, celery and carrots... so that was a little confusing seeing as how it was nearly $20 for the SMALL bowl, that had very ordinary veggies. The service was OK. Wow! Some of the reviews on this place are harsh! Can't say we had anything like the bad experiences of many other guests. It probably isn't the best restaurant in Aspen, but certainly was an enjoyable brunch spot. We started with a flight of bacon (I mean, come on, how can you pass up on that?). Six distinctly different bacons, each with their own wonderful taste. It's a tad pricy, and I could have gone for more bacon (duh) but it was scrumptious. I then moved on to their house smoked pastrami sandwich. Not a New York pastrami, but the meat was excellent, with a bit of smoke and plenty of pepper. It's served on a hearty bread, and accompanied by some decent fries. We had no complaints with the service either. Of course, it was summer, and it wasn't terribly busy (even though it was the weekend of the Aspen Food and Wine Classic), so that may have been a factor, but no complaints on our visit. The hotel itself is absolutely spectacular, they have done an amazing job of restoring and modernizing it while retaining a lot of the old history and ambiance. It is worth going just for that (if you don't want to eat, at least hit the lobby bar). read more

Wonderful lunch in The Garden! The setting and scenery were beautiful, service was 5-star and the food was delicious. We had a few cocktails - nice sized and well priced - and shared a few items off the menu so we got to try a few different things. The baked oysters were delish! The hummus and fresh veggies were so good, and served over ice so they stayed crisp and cool outside. The mushroom avocado toast was interesting. Good but not sure I'd order again. And the salad with avocado and grilled chicken was fresh and tasty. It's easy to spend money on food in Aspen. My suggestion is to spend it in a place like this. Highly recommend. read more

Generally speaking the Jerome hotel is a piece of art, with a certain atmosphere that is no where to be found. so when combined with excellent food - you have a winner! i had the ravioli with broccoli to start with, which was remarkable, and the rocky mountain trout for entree, which was spectacular! for desert don't miss out on the hazel nut muse. my friend ordered the triple chocolate cake which was to big and was left alone at one point... overall 5 star hands down! read more

In full disclosure, this was our 3rd choice for Sunday brunch during X-Games weekend. Unfortunately, in retrospect, it should have been our last choice. We probably should have taken the half empty restaurant as a red flag, but being Hotel Jerome, it couldn't be bad, right? How wrong we were. They were "out" of juices to start with, then a 45 minute wait for a Waffle, Eggs Benedict & Huevos Rancheros. When we finally got this, they were Luke warm, the muffins on the EB as well as the tortilla were dried out (obviously from sitting under the warmer for too long). The single piece of ham on the EB did even cover 3/4 of the muffin and the 3 pieces of warm asparagus were very eldente. The only positive was that the Waffle wasn't soggy. i don't like giving bad reviews, but this place just blows. the concept is nice, they serve food in Jars and on Boards which is a nice idea... for some. i went there with my parents and an admittedly difficult friend of theirs. she's quite privileged, nevertheless, she had insisted we go there after having been there once because she loves the J-Bar and wanted to like this place. it all started with drinks. 20 min after ordering them, still nothing. and we were one of maybe 3 tables in the place. then ordering. our host has a tremor and had tried a 'jar' before, and found that she could not eat out of it. however, she saw a trout dish she wanted, that happened to come in a jar. she asked the waitress if she could have it on a plate... the answer was "no, its a jar dish, i cannot change what the chef makes". Really? this is aspen you fool, not mcdonalds. when someone asks for something slightly off the menu, please try to accommodate? same dish, different presentation, to accommodate a person with a disability? cut to the chase, after some mutually rude back and forth about 'jars' and their popularity between our host and this impossible waitress, she decided on the pasta... which came cold... nice. i had a $36 trout dish. the trout was meager, dry and on top of a bed of pilaf or something. it was totally forgettable. the salad however, was excellent. lots of arugula on a bed of lettuce and other goodies. so if you like salad... the atmo was strangely country club diningesque, which is probably a function of that room. i don't see it sticking around.... read more

I came here for lunch and immediately was enthralled with the decor and charm of the hotel. The restaurant is stunning and inviting. I was really looking forward to their food but was mildly disappointed. I ordered their super food bowl and the flavor profile was off so I sent it back ( I hate doing this) I really didn't enjoy it. I then ordered the lunch bento box which was much better and had options of a scallop, arugula salad and pasta side. This was much more appealing and definitely the way to go. Prospect is attached to the Hotel Jerome. Outside eating area was terrific and a perfect place to have a drink. If it ever came. It took 25 minutes for my drink to get to our table after sitting down. My wife's wine came earlier, somehow the waiter managed to spill the wine on her leg and in her purse when he was pouring her glass to taste.
