He worked with me on a menu and he delivered my vision. Even with extreme circumstances (another vendor broke our garage door 24 hours before the event) Chef Peter and his crew took it in stride. They were on time and hauled their heavy equipment in and got straight to work. He was basically cooking/grilling on one side of our building (back patio), having to run back forth to the interior kitchen and sink. He and his crew worked SO hard that night. They are very professional. Every plate was perfect, they cleared the tables and made sure everything was spotless when they left. I also hired Jacob the Bartender (he works with Chef Peter) and WOW! Crafted cocktails and excellent service. Every person who was late to my party was sat and had a drink in their hand in less than a few minutes. Jacob was a pleasure to work with. Great bartender. I could not ask for a better duo for the night. Also big thanks to Tomas and Erick - their waitstaff. Amazing night they pulled off. I'm a perfectionist. Type A host. Everything was supposed to have been cut and prepared in advance at what Anthony said was his commercial grade kitchen in Redlands. Nothing was prepared at all. He had to use my kitchen for everything. Food service started over an hour and a half late. Poor quality ingredients, quiche pie crust being low grade store bought, which reflects everything else that was finally served. He ran out of food almost immediately. He was very unprofessional laughing and talking with others loudly in my kitchen while he was running so late with putting the food out. I had halal guests, so Chef Tony made sure to source the meat from Halal markets. One of them reported that this is the best steak of his life. One guest licked the plate :) Lastly, the Tres Leches cake was a delightful finale to this remarkable culinary journey. The rum-rubbed berries were an absolutely fantastic touch, and alcohol versions were prepared specially for our Halal guests.
