These are square and no-kidding as big as my hand. Each. Four of them. Yeah, beignets are mostly air but one order was plenty for the two of us. I ordered the Eggs Pontchartrain---pan-fried trout filet, poached eggs, smothered in sauce bearnaise. I ordered the side of grits, plain, though I've also had their cheese grits. Both are stellar. Fabulous breakfast plate! Wife N went with the classic Benedict, ham, poached eggs, hollandaise, plain grits on the side. Delicious as always. Coffee is dark and fabulous. The gumbo was chock full of chicken and andouille sausage pieces and had the perfect spiciness to it. This gumbo may be the best I've ever had, including that in southeast Texas and Louisiana. Nikki was wonderful through the year to stay in touch as other elements of the wedding changed. We had a beautiful wedding on May 31st this year and hiring Ragin' Cajun was a great decision. Along with that, we had bbq beans, mashed potatoes with gravy, coleslaw and rolls/buns. Nikki also made a beautiful wedding cake, complete with gorgeous icing flowers. We also had appetizers between the ceremony and reception. Joe and Nikki worked and served food during the reception. Everyone ate as much as they wanted and they packed up the leftovers! The amount of food they provided was amazing. We ended up having lots of food leftover to feed wedding guests during the next days and I also froze so much of the meat. Many guests commented on how good the food was....and it was SO good. The meats were tender and flavored perfectly. I just got out some of the chicken and brisket I had frozen to heat up for dinner tonight and it still tastes great. We started with the Steelhead Carpaccio. Delightful flavors of salmon, grapefruit, and pistachio prop up the lime cream. All at once makes for a delicious and complex play on a basic Carpaccio. Mains: I went with a Crab Caccio e Pepe, a delicious creamy take on crab and pasta. Just the right amount of Grana Padano and black pepper create the underlying notes for this crab and pasta dish. Delicious. Wife N went with the Blackened Ahi. This was extremely tender, and cooked perfectly (which is to say, absolutely raw with the exception of the flawless eighth-inch sear all around). Fingerling potatoes, horseradish cream and a sweet onion jam routed out the flavors here. Perfect. Place is a bit loud, but has all the vibe you'd expect from an oyster bar. Love Jax!
