The environment appeared to be sporadic occupied with patrons, but noticeably empty for a Monday evening. The rooftop view of Republica is street level scenery of Dyckman Street which is absolutely nothing to be enthusiastic. There is a live DJ available depending on the day of the week and events scheduled. While my party of two are not Dominican of Latin persuasion, thus, the inevitable difference in customer service was very visible for inhospitable nonchalant and apathetic. Republica has three floors of dining space including rooftop lounge and seating with a rooftop cover for protection against the elements. Hookah is available for patrons who are inclined (absolutely, no thank you for me). Happy Hour is available, but very limited options. We both decided on two glasses of Pinot Noir, white wine at $8.00 each. It was served nicely chilled and propensity to detox my stress and high anxiety. Overall, I was not elated. A lot of the negative reviews for this place have criticized the quality of the food and the customer service. I only came here with friends for drinks and this place for fine for that. They have a roof terrace area with sofas for relaxing and you can even get hookah as well. We only dealt with one waitress and she was friendly. I think this is a great place for birthdays or just going out and looking for a good time. It's lively and has a club/lounge atmosphere. The rooftop is nice. The service is good a lot of people helping to clear tables and refill your water. The menu was a little unclear for brunch. We weren't given the itemized receipt at the end just the merchant and customer credit card copy. So couldn't tell if sangria pitcher was included or not, but the lady assumed we wanted a second pitcher bc it was empty. And we definitely couldn't finish--it was a strong and yummy sangria. I heard many good things about their presentation of drink and food. When my friends booked this spot for a NYE brunch I had to go. Everyone from your party, has to be there in order for you to sit. Went here this past weekend with the family to celebrate my dads birthday. After hearing so much "good" things about this spot, I decided to finally give it a shot. First of all, If you make a reservation, everyone from your party, has to be there in order for you to sit. In my case... (we weren't, so I had to wait. We made a reservation at 2:00 but we're running late and didn't check in till 2:30, they still accommodated us and had a seated. But there were a lot of tables available. They made it seem like a party brunch but although music was playing it wasn't very loud and they didn't turn it up until about 5:00 p.m. when we were about to leave as there is a 90-minute time limit on tables. Our waiter however adorable had the thickest Spanish accent and I could barely understand what he was saying, to my surprise you got to choose between a mimosa or sangria, then you picked one breakfast item and then a lunch item! All of this for $45 per person, tax and tip included in the bill. I was not looking forward to the food because the reviews on here are terrible but I was a good sport and gave it a try since my friend picked out the place. To my surprise the food was not bad at all, the pancakes and French toast were delicious. The salmon and steak were basic but not bad, definitely better than I expected. The Caesar salad was nicely dressed and the dressing was yummy. Overall I thought the food got a bad rap when it was pretty decent. What was disappointing was the brunch experience, we basically sat there for 2 hours with nothing happening, then went downstairs to where the DJ was playing and still it was pretty dead. My co-workers and I went to Republica for our Christmas party paying around 2000$ for 20 people (we did not have 20 people but they didn't allow us to reserve a party of the correct amount due to their plans I suppose that they have to offer). I came here today to celebrate a friend's birthday. The picture below is the table they first seated us at. This was a table that was given with a reservation made for 10 people. Only 8 of us ended up showing up but this was totally unacceptable. The only reason we ended up getting an actual table was because I was very persistent in changing where we were seated. If I had kept my mouth shut, all nine of us would've have to have our waters, utensils, plates of foods and pitchers of sangria and mimosa on that little table. This is one of my favorite spots in Dyckman. Weather you're going for brunch or dinner the food is immaculate everytime. The presentation of the food & drinks are just picture-worthy. Right now they're only letting people in by making a reservation. Also, they won't let you in until your group is completed, due to covid capacity and the 2 hour limitation you have once they've seated you. They have the rooftop open and the downstairs area open as well. Everyone wants the rooftop because is a nice vibe but if your tolerance for the heat is low i would consider sitting downstairs where is much cooler. Came here on a MONDAY at 4:00 pm...you would think since it was NOT a busy time that service would be top notch. That was so not the case.
