Recently, the hotel underwent a major renovation and opened a new restaurant called Le V. Beautifully located on the grounds of the hotel, le V quickly reminds its patrons why summer nights should be enjoyed outside along the Côte d'Azur. From the beautiful light wood furnishings to the lush landscaping and linens, Le V invites you to soak in its Provençal ambience. While the interior is equally impressive, I would highly recommend enjoying your meal outside amongst the manicured gardens and pool. We started off with a round of Aperol Spritzs - generous portions and very tasty - and the Panier de Legumes, a lovely basket of vegetables with an anchoiade (anchovy paste) and a tapenade (olive spread) . While the menu said that the Panier serves 2, four guests can easily enjoy it as an appetizer. Simply fresh and scrumptious. I then sampled the Salade de Poulpe, the octopus salad with candied tomatoes and roquette salad. The dish was flavorful, lightly dressed, and a great entree to the main dish. After debating on what to choose for the main dish, I ordered the Dos de Loup, the sea bass with zucchini in basil and lemon butter. While the dish was beautifully garnished and pleasing to the eye, I found the sauce to be a bit bland. The fish itself was done to perfection but lacked seasoning. Perhaps a spicier accompaniment would have enhanced the flavor of the sea bass. For dessert, the Pavlova aux Fruits was light and fruity and deserving of a dessert wine or eau de vie. While the meal was not perfectly executed, I found Le V to be well worth a visit and a lovely spot to enjoy cocktails and a meal in the South of France.

Me and a buddy spent a few days in Vence and dined a lot while we were here. Had several foie gras throughout the week and this place (although the foie gras itself is the same as the other restaurants) garnished it with very nice fruit and some greens. Paired well with the foie gras, making it not to rich and fatty. Totally recommend the beef fillet. Nice and juicy. And with a nice bottle of bourdeux, the beef just melts in your mouth. Depending on the time of year, the mosquitoes do become an annoyance if you're eating out in the patio while enjoying the views, so bring some bug spray (just in case).

Or, at least, they were French tourists. The food was excellent, with every dish beautifully presented and very tasty. I noticed that, for my American palette, the dishes were under salted, but they provided this wonderful herb salt with the main course that added a more luscious flavor to the steak I ordered. The avocado salad was simply amazing; the best dish I've had so far in France on this trip. Service was a bit rushed as the server seemed somewhat impatient with our bad French, but I can understand as they seemed to be understaffed. Bathrooms: very small, but beautifully decorated and very, very clean. I love the gold fish art piece and the bit of exposed stone wall. (See photos)

And as for the dining experience, it's very comparable to a 1-2 star Michelin restaurant. From the first to the last course, you'll remember the experience. They take care of you until you leave the lobby. I had so much foie gras during my stay in Vence, but Le Saint Martin served the most memorable one ever. And the beef and the various cheeses courses were also phenomenal. They also make their own sweet wine (or cognac), nicely aged, and very smooth to the last drop. I would come back just for another sip. Highly recommended. Make the reservations. Come a little early to take on the views, and hang out in their lounge.

All staff are incredibly gracious and welcoming, English speaking as well so if I needed anything and my french husband wasn't around I wasn't stranded. The hotel is located near Nice with shopping, beaches, shops to rent scooters or motorcycles (like we did!) and the airport but is far enough away it's peaceful and quiet, the hotel itself has quite a history of its own from the Knights Templar to Winston Churchill, it also has ruins on the property from the third century. This hotel is also home to an exquisite two star Michelin restaurant, while it is a bit pricey I would definitely recommend you make a reservation and dine in, the only downside is they allow smoking in the restaurant, what a great way to ruin a meal... My only other quibble is the bar is quite over priced, the drinks are good and I cannot fault them for quality but a €28 cocktail is a very poor value.

The Linguini featured lots of delicious clams, but was a bit too oily for me. The Risotto was divine. Perfectly cooked and the Parmesan flakes added fantastic flavor. The shrimp was also large and delicious. I wish there had been more because they were yummy! Although it was way more food than we needed, we savored every last bite! The place is super relaxed. 5 maybe 6 tables which made the difficulty of reservations more understandable. Prix fix menu - 4 appetizers to choose from, 4 entrees and 4 desserts. We were there with somewhat of a limited diet, but the options were awesome. We got a cauliflower appetizer and an artichoke one. Both were excellent. We all had the cod for dinner also delicious - served in a bath of traditional fish soup and with potatoes. The dessert was also excellent - we got the goat cheese in olive oil and garlic, the cream cheese with blueberry compote, lemon cheesecake and cinnamon "tiramisu". Every bite was full of flavor and such cool takes on the food. Now the intangibles - we arrived for our 9pm reservation, restaurant closes at 9:30 and we probably didn't walk out until 11:15 and there was still another table of 8 people dining. The host/waiter, Sebastian, was awesome. So friendly and we at no point felt rushed. In fact the opposite. When our daughter was slow in finishing her meal he joked with her instead of hurrying us along. Once we finished our main dish, he casually brought us our dessert and because we didn't order his favorite (we didn't know) he brought us out an extra to enjoy. We felt a little bad so somewhat accelerated the dessert phase so we could square up and leave. Instead he was unhurried, he casually cleared our table and chatted with us for a bit. It took us another 15 minutes before we finally said could we get the bill. He brought it to us another 5-7 minutes later.
