Unfortunately, it didn't quite hit the mark for me. The macaroni and cheese was overcooked -- the pasta was very soft, almost mushy, and not the al dente texture I prefer. It was cheesy, which was nice, but there was a lot of liquid pooling at the bottom, making it a bit watery overall. It gave the impression it hadn't been drained properly before mixing. The brisket itself was okay -- not bad, but not memorable either. It didn't have the deep, smoky flavor I usually look for, and the texture leaned more toward average than tender. I wouldn't order this dish again, but I might give them another try in the future and explore a different item on their menu. The Coop spends most days serving on base, but keep an eye out for their local pop-ups. They're always worth chasing down. This time around, I ordered the Pepper Jack Chicken Burrito which was grilled chicken breast, maple bacon, melty pepper jack cheese, and their signature Coop Sauce, all bundled up in a warm tortilla. Every bite was the perfect balance of hearty, savory, spicy, and just a hint sweet from the bacon. Their Coop sauce is one of a kind. Tangy, and delicious. I decided on the Maine roll which has mayo. My roll was cranked out in less than 10 minutes and put in nice packaging with napkins and fork. The taste was solid with a lot of meat. I really liked it and thought it was a quality roll with soft buttery and toasty bread. Not sure I would rush back to return with the high cost.
