But past this, you are greeted by an enormous bar that has the feel of a Mexican cantina. This is where the magic happens. There have been numerous myths about the recipe for their Urban Legend margaritas. It's been a well guarded secret for decades in regard to this mixture of tequila, lime, salt, and my best guess, gasoline. My wife and children dragged me to The Rio this evening for a reluctant birthday dinner with my toxic mother-in-law. I cannot imagine a more appropriate venue for such an unenjoyable occasion. "Rio" is Spanish for river, and much like a corpse washed up on a riverbank, the food here was cold, lifeless, and should have been left where it was found. The meal began with complimentary chips and salsa--a gesture that, in hindsight, felt more like a warning than hospitality. The chips were stale, flavorless, and possessed all the structural integrity of damp packing material. The salsa somehow achieved the impossible by being both chunky and watery at the same time. Enormous pieces of tomato floated aimlessly in a thin, soup-like liquid, forcing me to send chip after chip on a salvage mission. Most shattered under the strain, and the survivors emerged as soggy, pastel pink wafers that tasted as though they had merely been rinsed in salsa-flavored water. My disappointment was profound, rivaled only by the disappointment of contracting a venereal disease from a toilet seat without even getting the satisfaction of earning it through an ill-advised encounter with a local prostitute. Unfortunately, the entrée did nothing to redeem the experience. I ordered the grilled skirt steak tacos, a dish so uninspired that it makes a Taco Bell dollar-menu taco seem worthy of a Michelin star. They arrived cold and astonishingly bland--much like my mother-in-law's personality. Each tortilla featured a hearty dollop of what the menu insisted was salsa. In reality, it had the texture of three-month-old yogurt and the flavor profile of elementary school cafeteria spaghetti sauce. The greatest insult of the evening arrived with the check. These culinary crimes cost more than $20 for a single plate--roughly an hour of my life spent working, exchanged for a meal that inspired nothing but regret. A restaurant is truly exceptional when it makes you briefly consider divorcing your wife simply because she's descended from someone who voluntarily celebrates a birthday here. If you're searching for somewhere to celebrate a special occasion, I'd recommend bringing your dog instead. There's at least a 50 percent chance he won't be able to distinguish the food from his kibble, making him the most satisfied customer in the building. read more

First time here. There were 5 in our party. Nice decor. It took almost an hour to get our food. Our server was good about refilling our chips but overlooked refilling our water carafes. Food was good. I had the Grilled Chicken Quesadillas and we all shared the Rio Trio Sampler (guacamole, chile con queso, classic green salsa) which were all tasty. Someone at our table had the Grilled Skirt Steak Burrito. I sampled the steak and it was flavorful and the green chili was spicy. Impeccable service at a very nice location. Flavorful salsa and perfectly toasted chips. A bit of a smaller menu will limit your choices somewhat, but any choice you make should be pleasing. After ordering guac and the carnitas taco from 477 next door this past weekend, I knew this place deserved a full visit. No Walked in and after being sat at the booth, the hostess brought back the complimentary chips and salsa and a bottle of water. She was a lady of few words, which is totally fine. Came in for lunch and Raquel was my friendly server. I knew I wanted to try the green chili soup so I got the lunch special of quesadillas and green chili soup (you can pick a side salad or soup with this meal). I was undecided between the chicken quesadillas and the veggie quesadillas. I asked Raquel her opinion and she suggested the chicken. She was right! It was perfect amount, served with a scoop of sour cream and guacamole, with a little pico in the salad. Everything was delicious and the correct temperature! Since it's the past day of my vacation, I ordered the blood margarita (seasonal) and it was perfect! They are finishing up the remodel of the place and it will look great! I've been to The Rio before but never reviewed it. As a staple of downtown Greeley it's always been just so-so, but tonight was a pleasant surprise. With all the COVID mess their menu has been paired down but we enjoyed the quieter atmosphere and attentive service. Our wait staff was quick and friendly and the food was super hot & delicious. A big improvement over other times we have been in the past. I enjoyed the crab & shrimp enchiladas, there were actually chunks of crab and full shrimp inside in a tasty tomatillo sauce. The inner decor makes you feel like you're being transported to another world. It definitely didn't feel like Colorado. Our party of ten was going to take about 20 minutes to be seated, so we headed over to the bar to wait. There's a lot of tequila. A lot. We got some various drinks and helped ourselves to complimentary chips and salsa while waiting for our table. Sure enough, our table was ready 25 minutes later and we sat for dinner. 8 out of our ten got quesadillas with a generous portion of sour cream and fresh guacamole. I don't understand why the Rio doesn't have better reviews. I've always enjoyed the food. Recently I've been eating low carb which is difficult in a Mexican restaurant. The Rio is the only Mexican place I've found where you can get a side of celery and radishes to dip in the guacamole. Love that! We've had consistently good service here for years. I love their bulk carry out trays for feeding a crowd. The atmosphere is comfortable, I like sitting on the patio in fall when it's cooler and the maple tree over the patio turns colors. read more

Is this part of the same Rio grande chain in colorado? Hmm, I just remember this being much better. The location of this restaurant in the small town of greeley can not be ignored. It is huge! If you're looking for outdoor dining they may have the largest patio not just in greeley, but in a 20 mile radius. It is big and covered. With such wide options for mexican I think this one experience was just a bit sub par. Ordered the green chille which was really watery, no thickness to it at all. I realize that's a personal preference thing, but it just lacked flavor. I also really noticed the size of salsa they give you is super small, good thing our waitress was paying close attention and refilled without being asked. If you have a party of 4 you might want to ask for extra. Hey it makes sense they may not want to create too much waste. My kid ordered a braised pork burrito ($12). The pork had flavor but I'm not sure that you can wrap a tortilla around pork and call it a burrito. I mean shouldn't there be other things inside the tortilla (rice, beans?) Good thing she ordered it smothered son in e without that...youd just have a bit of lettuce/tomatoes on the side and a very lonely bit of pork inside a tortilla shell... The atmosphere gets a 5 as does the location and the service. They are famous for strong margaritas and even place limits on how many you can have in one visit. If you are driving and not ride sharing, their mini margs, either frozen or on the rocks are a good choice. We love the chips and salsa that arrive at the table shortly after you do. This location is large and accommodates many people with a broad range of age and diversity. The front patio is also a choice if the weather is nice. Parking is on streets nearby, but you may need to park and walk in as the parking competition is pretty fierce. read more

What a pleasant surprise! Came to the Rio on a Friday afternoon, wanted a quick lunch, sat at the bar, and was really treated so well. I had 3 tacos (steak, chicken, fish) - all of which were nice. Chicken was probably the least interesting flavor-wise but tasted just fine. Needed a touch of salt on all three but that's a personal taste thing. My partner had a steak quesadilla and it was really tasty. We ordered their hottest salsa on the side and it was surprisingly delicious / manageable. Highlight of the visit: what appeared to be the manager behind the bar came to ask us how the food was - after asking him about some hot sauce he ended up walking us through the story of the restaurant and the origin of the food&sauces.
