When they served the herring, they asked if we knew the proper way to prepare and eat it. Since we did not, they happily walked us through it. They gave the same thoughtful attention to the table next to us, showing them how to debone their fish. The Patty shells, filled with chicken and white asparagus, were rich and comforting.
