I was in Auburn and looking for a place to have a good cup of coffee. I pulled up Roast & Toast without realizing it was Simple Roast's new shop. I am going to be honest, I have had coffee over the years from their standalone kiosks and have found most of their drinks to be overly sweet with barely a taste of coffee. I did have their regular coffee several times and it was good. I know they have a good following and this is just my preferrence to have flavor but still a good coffee taste. [[HIGHLIGHT]]I walked in and noticed how clean and comfortable looking everything was.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]It's not huge inside but there's a decent amount of seating if you want to sit down and enjoy your coffee.[[ENDHIGHLIGHT]] I didn't realize they had food as well so I will definitely try some next visit. I asked the barista about any homemade syrups, because I like to find interesting flavors and some unusually delicious combinations. They have a full selection of bottled syrups but the barista pointed out that if there are homemade syrups they will be featured on the drink specials. I selected the special Matcha Latte with espresso, homemade fig syrup and homemade plum bitters.....WOW!! It hit every note for me. The employees were friendly and the barista who helped me... thank you for being patient with my questions. This lovely spot is also open in the evening for cocktails! Super cute and I love the concept of coffee by day, drinks by night! Had a couple of espresso martinis here for my birthday which was great! It can get rather cramped so take a peek in and make sure you'll have a spot to perch should you want to stop in for a drink! I've also been here during the day, you just have to go all the way down to the end to order a coffee. I've had mixed service experiences, mostly super attentive and friendly but one barista during the day wasn't the most customer friendly. I ordered the special eggnog espresso. It was such a treat. Perfectly strong espresso with just the right amount of holiday sweetness with the eggnog topping. Matt Pierson, owner of Simple Roast Coffee which has two huts in Auburn, has built an extremely loyal fan base for his coffee since they opened almost a decade ago. Founded in 2016 with a drive-thru location in Sennett, Simple Roast has grown significantly, including a second drive-thru in Towne Center Plaza and a team of nearly 30 employees.The company announced on Facebook the opening of Roast & Toast at 99 Genesee St., a site previously known as Rudolph's Sugar Shack and revealed the café's dual nature: a cozy café by day and an upscale, speakeasy-style cocktail bar by night. I've been going to Simple Roast Coffee since it opened, and it's some of the absolute best coffee in the area. I don't drink, but what interested me in Roast & Toast was the fact that they offer mocktails on their bar menu, and I love me a good mocktail. It's in a great location with plenty of parking. Very nicely decorated inside, and has one of the best looking bar/coffee counters I've ever seen. Also, the absolute best, nicest public bathroom I've ever been in. I tried one of every mocktail, the wife tried a couple cocktails and we split a tiramisu dessert and everything was delicious. Employees were very friendly and accommodating. We came in as a decent-sized group, all with backgrounds in the service industry -- so we're typically very understanding. But this experience was just unacceptable. The shop was busy, which we expected, but we waited over an hour for our food. Even the first two people in our group who ordered still hadn't received something as simple as a parfait and gluten-free fruit toast. When we followed up, we were told, "Oh, we don't have that," -- which made it obvious they had closed out the ticket without actually completing the order. We asked for a refund at that point, but instead, they insisted on correcting their mistake. What we got was a rushed, carelessly assembled dish with soggy bread from the sloppily poured compote. There was a clear lack of accountability, and the food did not reflect the time we waited. If you're looking for food that's well-prepared and timely, I wouldn't recommend this place. read more

Roast & Toast is a new concept from Auburn favorite and local coffee chain, Simple Roast. Brewing coffee by day and mixing cocktails by night the concept is something exciting. Personally, I prefer the coffee menu over the cocktail menu due to the pricing. However, the ambiance is great for both. The iced mocha latte is my go to for the morning.
