I had the brisket while my wife ordered the pulled pork sandwich, and both were outstanding. The brisket had a beautiful bark and was so tender it practically fell apart with a fork. It delivered exactly what great Texas barbecue should: plenty of smoke flavor with nothing more than a traditional salt-and-pepper seasoning. No barbecue sauce needed--and that's exactly how I like it. The apple slaw was crisp, light, and refreshing, providing the perfect contrast to the rich meat. My wife chose the cornbread, drizzled with honey and served with honey butter, and it was absolutely over-the-top delicious. To top it all off, the wonderful young woman working the counter surprised us with a complimentary banana pudding after hearing about the drive we'd made just to eat there. It was such a thoughtful gesture and perfectly reflected the hospitality of the place. You can tell there's a tremendous amount of passion and pride going into every aspect of the food and service here. If you're nearby, treat yourself. I have to admit though - BBQ and sides are very subjective if you have a great BBQ boss/ soul food chef in your family... truly everything on our table was AMAZING. The tortillas were super fresh and the meat was perfectly grilled. I love that many of the trucks here use handmade tortillas. We visited all three trucks to check out their menus and I decided to order a quesadilla at Lucha Sabina. Some people near us were enjoying something called a Tlayuda from this same truck and it looked amazing! I will have to give that a try next time with my husband because it is big enough to serve two. I had heard that the mushroom tacos were delicious so I asked if they could make a mushroom quesadilla and she said yes. She mentioned avocado would make it extra tasty so of course I added it. I'm so glad she offered that up because it was a key ingredient in my yummy quesadilla. It was grilled perfectly and I was all smiles from the first bite. This place was a hit with all my buddies too. We liked that they gave us each a beeper so we could sit down and chat until our food was ready. My friends all enjoyed their selections but none of us tried anything exotic, just tacos, burritos, and quesadillas. People working were very personable and helpful. And then there's the paella, without question the best paella ever. The flavors were incredible, the presentation was beautiful, and it was the highlight of the event for many of our guests. The pork ribs were awesome! The meat was so tender with a nice char. The extra BBQ sauce on the side was delicious. I chose the regular BBQ sauce but they also had a spicy one , too. I asked for two sides of baked beans and they were the best baked beans I've ever had...so flavorful with a little spicy kick. I can't wait to ask my friends where Camacho's will be at next to enjoy more delicious BBQ :)
