    It was one of those brutal Fresno summer days where the steering wheel doubles as a branding iron and just standing in the sun feels like a cardio workout. I was walking around the River Park Farmers Market when I spotted a line forming at SAP BBQ. I've been tryna find them for a while since I follow them on IG. Normally a long line at a farmers market means one of two things: people know something I don't, or everyone collectively made a bad decision. Thankfully, it was the first one. I jumped in line and by the time I got to the front I had already worked up an appetite and probably lost half a pound in sweat. I ordered the smoked pork belly with sticky rice, brisket, sausage, mac and cheese, and potato salad. Basically enough food to make my doctor shake his head in disappointment. Let's start with the pork belly. Good lord. Smoky, rich, perfectly rendered, with those beautiful caramelized edges that make you immediately start calculating how many years of your life you're willing to trade for another order. The sticky rice was the perfect sidekick, soaking up all that porky goodness. The brisket was legit. Thick slices with a beautiful smoke ring, juicy throughout, and enough bark to keep things interesting without overpowering the meat. Every bite had that melt-in-your-mouth texture that separates good BBQ from people just throwing meat near smoke and hoping for the best. The sausage had a nice snap when you bit into it and was packed with flavor. No dry sausage here. The mac and cheese was creamy, cheesy, and exactly what you want alongside smoked meat. The potato salad was solid too, cool and refreshing enough to balance out the richness of everything else. The servings were kinda small for these but it's all good. Ok the sauce. They give you this little Container of Lao sauce that goes really well with the meat. It had a beautiful flavor. By the end of the meal I was sitting there in the heat, completely stuffed, questioning my life choices but in the best possible way. If you're at the River Park Farmers Market and see a line at SAP BBQ, do yourself a favor and get in it. Some lines are a waste of time. This one is an investment. Would absolutely come back.     Found this place on Instagram! Pop-up Laos/Texas BBQ that can actually sometimes be in 2 places at once! We found them at the River Park Saturday market near H&M with one person manning the orders and sending out orders. The bbq is already cooked and he simply cut up the meat and boxed them up as orders came in. We ordered the 2 meat 2 side combo with ribs, brisket, Mac & cheese, and sticky rice ($23)and added an ala carte pork belly ($12). To start off with, we were pleasantly surprised by the portion sizes which was more than enough for lunch for my husband and I. All of the bbq had a nice peppery crust and great smoky flavor. My husband loved the brisket which was juicy and moist with a "healthy" trim of fat. I enjoyed the pork ribs and pork belly which were cooked to perfection. The 2 pork options were similar enough that I'd probably just got with ribs next time and then try a different meat option. They also offer chicken and Lao sausage which I'd love to try next time. Without being familiar with Lao food, I'd say expect traditional Texas BBQ with a spicy BBQ sauce instead of your stand sauce.

    This place is don't sleep on it. All the meats are good, sticky rice is a great way to eat bbq. And their sauces.. addicting.

    Place is located inside the gas station. Tried the Brisket, Lao Sausage and Pork Belly. The Pork Belly was the most flavorful out of the 3 of these. Brisket was good and wasn't dry. The Lao Sausage was okay, tasted the smoked more than the sausage.

    2 meat combo with cornbread and mac & cheese

    I've been hearing about Sap BBQ for a while now but finally got a chance to try it at River Park farmers market. We had the pork belly combo plate with cornbread (boohoo sticky rice ran out) and the 2 meat combo plate (brisket and Lao sausage) with cornbread and mac and cheese (regular). Both included the pepper sauce. Everything was delicious. The brisket was juicy and had excellent smoke flavor. The pork belly was perfectly rendered and the Lao sausage had great Southeast Asian flavor with lemongrass, etc. the pepper sauce took it over the top. The only mediocre thing was the regular mac and cheese but then again I'm not usually a fan of mac and cheese. Overall, this is excellent bbq... and I've been to Franklin's, Terry Black's BBQ, and Smitty in Texas. Would highly recommend Sap BBQ!

    Not bad for a hidden place inside a gas station. The food was great. Tastes like homemade. Some very comfy food for certain people. The two work was nice. They forgot my meat on the side but they were very understanding and gave it to me. No question ask. Great services Overall 4.5/5 to me.

I can't explain it. Never had nothing like it in my life. The line was long, the menu was tiny and fixed, but the ramen was to die for. If you can find this pop up, go! Man it was soooooo good. Completely unacceptable quality if you want to maintain the allure of a fancy restraunt serving 40+ dollar cuts of meat. Rice was mediocre, mashed potatoes were decent but again probably a cost cutting side. So all in all, the food wasn't something to brag about. The interior has some nice paintings of bare chested ladies. As a champion for women, it seemed a little extreme that in my sight i could see 6 titties, but as a man, excluding my champion for women title, I thought it was great. However, being with my mom and my woman made this dichotomy even more perplexing. The strangest part of all of this was when I went in the men's restroom there wasn't another topless woman painting. Instead it was some old dude. Wth? That's when I relaized it was like the rest of the experience here - unique, a bit outdated, and all over the place. Still enjoyable, but also pretty sad and confusing.
