This store although small has every type of kitchen knife you could ever want in a variety of different price points. I didn't catch our sales guy name but he was wonderful. Oh my! This was like walking into a knife gallery. Each line so beautiful. The sales person, Lorenzo, was knowledgeable and had such a great respect for the artistry of these knives. We stopped by merely by looking in the window and no knowledge of this place. It was such a treat and we walked out with two knives. I had a "good" knife but not a "great" knife now that I know about & have these. This morning I compared the two in slicing onion and shishitos. There is no comparison. With accuracy and speed like I've never known, the new knife slid thru the vegetables. I will never use my previous "good" knife again. My new "great" knives slice and chop like butter. I knew very little about them and they were so helpful and knowledgeable at finding me the perfect Santoku knife for what I was looking for within my price range. My knives were in sad shape and really needed professional sharpening after two years without, so glad to find Seisuke nearby on Alberta. Only open Mondays, due to Covid, but they were very accommodating, able to offer same-day service and a fair price, and all my blades came back to me even sharper than new! Very impressed! I was in the market for an entry-level chef's knife and Alexander was SO helpful and knowledgeable. I'd done some research online about different types of knives but most of it went right over my head. Alexander spent a good 20 minutes showing me different knives and going over their differences and pros/cons. I learned SO MUCH. As an amateur home cook, I honestly didn't think I'd ever need a fancy knife (or be able to truly appreciate the benefits of one), but having tried out a few of them in the store, I was genuinely amazed by the quality and how comfortable they are! We are disgusted with this company and you should be too. We are asking for anyone who agrees with fairness to boycott this company and their home based company Japanny in Japan. The manager Will is using his store to discriminate against people and make some kind of social statement that has nothing to do with Japanese products. If you read their social media as we did after the fact you can see strong evidence of this discriminatory behavior. We could not get our cards to work on their wholesale site. We have been dealing with the main office in Japan for years and have spent quite a bit of money with them. We emailed the main office and no reply so I called their store in Portland, Oregon. I spoke for the first time ever to this very bizarre manager named Will who told me with much reluctance that he would ask the main office why our cards not working. He never called me back so I called again. He told me that "we are not part of the store family" and "he did not like things that I said" and then he asked me out of the blue "if I was a Trump supporter?" My response was what do Japanese knives have to do with who I am voting for? I also told him that was very unprofessional and I would never ask him such an irrelevant and discriminatory question. He then said he and his company do not want to deal with us and hung up. I have spoken with this guy in my life for a total of maybe eight minutes and it was all about trying to figure out why our cards are not working on their site. The conversation NEVER touched upon any political position. We are puzzled why the Japanese home office (Japanny) would support such terrible behavior but obviously they have because they have responded to his claims with a shutdown of our account over fake issues that are irrelevant to business and this nonsense about "family." Thus we are asking people of all political positions to boycott this store, Seisuke, and the home company named Japanny, to send a message that it is bad business to mix politics with business and that it is reckless to use irrelevant information to inappropriately discriminate against any customer no matter what their views on anything are. read more

I have been to Seisuke enough times now that I think I could call myself a regular. I bought all of my knives there, have had them sharped and flattened multiple times. I also took a private sharpening class with my wife and parents. If I could give them more than 5 stars I would. The two guys that are pretty much always there, will and terry i think, are amazing at their jobs. I always leave with way more information than anyone should expect to get from any retailer. Great selection of knives, and the staff seems to know everything about each knife in the store. The sharpening class was awesome, and I new only bring my knives in to get service one in a while, and I use them daily at work. I cannot recommend them enough. read more
