Honestly, this is some of the best food I have ever eaten and you can really taste the love and experience chef Nyawal puts into her food. I was expecting curry flavors similar to India or the sharp spices they use in the Middle East, but South Sudanese food is extremely distinct and a must try. This being my first order, Nyawal gave me a free sample of Jollof Rice with Beef Cabbage and Kop with Spinach in addition to my order of Beef Sombosas and Mein with Molokhia Chicken Stew. Every dish was extremely distinct yet amazingly delicious. Mein with Molokhia Chicken Stew | This dish definitely looks the most intimidating, but I have a love for stews and mashed potato like foods. The Mein (the potato looking starch under the stew) is a flavor sponge. The best way I can describe it would be sort of like thick grits but fluffy like mashed potatoes. The chicken is white meat but extremely moist and well cooked. The overall flavors are mild yet definitive and warm. You can really taste the experience and care the went into creating it and I would imagine that many Sudanese families eat something like this often on their dinner tables. If you're not into squishy textures this may not be for you, however, I think it is worth a try and is definitely top of its class. Sombosas | These were utterly outstanding and some of the best deep-fried foods I have ever tried. The skin is not too thick or too oily. The filling is strongly flavored with turmeric and has a great ratio of meat to vegetable. The sombosas are definitely more aggressive in flavor than the mein with molokhia stew and is a great flavor enhancer between bites. Jollof Rice with Beef Cabbage | This dish was mild, sweet, delicately spiced, and truly highlighted the flavors of beef and cabbage. If you are into cabbage rolls or even borscht, this is a dish that resonates in the same way but with Sundanese flare. The rice was beautifully yellow and perfectly al dente, giving the beef cabbage the perfect bed to rest on. Kop with Spinach | I've never had Kop, but it is very similar to couscous. I've only had the very small couscous or Israeli couscous which is huge, but Kop is instead irregular in shape and size creating a very interesting mouthfeel and texture. It gives me the same vibe as Dippin' Dots in the best way possible. This was only dish that was acidic and it was wonderfully bright while retaining the warm delicious flavors found in the rest of the foods. In this review I have used language as if I was an expert of the cuisine, but this was my first time experiencing it. The quality and execution of the food was so good I have no doubt in my mind that this must be some of the best you can get. The flavors of all the dishes are so well thought out and lovingly crafted and chef Nyawal uses typically pungent spices to create a harmoniously delicious symphony of flavors. All of the flavors I experienced today were very unique and I am so happy that I had the opportunity to try them. Nilotic Experience is an easy 5/5 and I would definitely order again.
