That density extended to the coffee cake as well, where it was more welcome. The peanut butter-banana combo made for a winning pair, and the topping was tasty as well. First off, this isn't just a random food truck. There is such an incredible story behind it. It's run by Gary and his best friend Alex, who have been friends since grade school back in Mexico City, Mexico!! You can feel that deep history in the way they run their business. There's a level of trust, energy, and authenticity that you don't usually see, and it trickles down to the entire team!!!Every employee I interacted with was genuinely happy, welcoming, and proud to be there (which says a lot) especially during these times. The chicken quesadilla was good but could have used a bit more seasoning. It was good sized and stuffed full of chicken, onions, peppers, and cheese.
