Unfortunately their food is pretty bland. I wish we had more places to eat here. My son's chicken tenders were raw, I'm glad I always check. They were very nice about correcting it, but had he eaten them he could have gotten really sick. read more

When work takes you to the far northern parts of Colorado, you explore. That exploring lead me to Sol De Jalisco for take-out several times now, and it's def "A-OK" in my book. Here's my short, but sweet, takeaways: 1. The fajita burrito is both massive and delicious. Def my favorite item on the menu. I've split it with a co-worker various times, and it's more than enough for two if you aren't famished. 2. The space, while I have not dined-in, appears to be cozy and fun. Love the brightly colored carved booths! 3. The staff has always been friendly and helpful. We came in on a Sunday and the place was pretty busy. We were seated immediately and given chips, salsa and beans. The beans were runny, flavorless and looked hideously unappealing. They tasted just as bad. The salsa was too hot. Service was slow and dismissive. We sat for some time before our drink order was taken. The margarita was delivered in a timely manner and was really good but I had to ask 4 different times for water. It took some time for our food bur when it arrived, my food was barely warm. I ordered cheese enchiladas and the cheese wasn't even melted. I sent it back and they just reheated the dish to 500 degrees. The sauce was disgusting. It tasted like tomato sauce and salt. No depth of flavors or seasoning. You would get better in a TV dinner. Gross, runny, watered down, flavorless beans and nasty flavorless rice. It was bad. I don't recommend this place at all. And to top it off, we had to endure the rudest people sitting at the table next to us. We had to listen to them talking about farting and their farting habits. We learned the woman farts more in the morning and wakes the guy up! I was tempted to suggest she take Beano. It was truly that bad. Horrible service and disgusting, repulsive, inedible food and the other diners were somewhat vulgar although entertaining. read more

Small town restaurant, family owned and operated. Greeted upon arrival, promptly seated. Chips, bean dip and salsa arrived...wow, excellent salsa. Great flavor, good substance. I settled upon the large combination dinners...two pork enchiladas, rice and beans...I couldn't get "chili relleno" out of my mind so I ordered 1 crispy relleno...yes, that's a lot of food...but I was successful in cleaning my plate...in fact, I could have licked my plate clean, but someone would have noticed . My meal arrived quickly, steaming hot...and tasty. If you haven't been here before, or perhaps it's been awhile...go give them a try, you won't be disappointed. I hope to see you there. read more

Don't go here unless you want to pay extra for things you weren't expecting to pay for. An order of chips and salsa togo was $15 (for not that much salsa) and the veggie burrito that was listed as having cauliflower, mushrooms, carrot and broccoli only had onions and peppers. When I called to see if they had changed the veggie burrito on their menu, they weren't able to give me an answer and hung up on me twice. I was being kind and polite and ended up spending $50 on two pitiful burritos and chips and salsa. That's INSANE. They also didn't tell us a bag of chips was going to be an extra $7 even though you get it for free when dining in. How is it that there isn't a decent place in Wellington to get any food? First time eating here at Sol de Jalisco in Wellington, Co. The restaurant is on the small side, but it is colorful & cozy. The dinning area was clean. I can't comment on the restrooms as I did not go into them. Wait staff was pleasant enough if a bit "stiff" and unsmiling. I did not see any over the top customer service, but our waiter was nice and efficient. He did check on us a couple of times. There were 6 of us, 3 1/2 adults (one is a teenager) and 2 younger kids. We were sat in a round booth. This area was smaller then you'd expect. The table would have been better suited for 4 adults. So the table was a bit crowded once our food arrived. Everyone at the table has eaten here before. I was the only newbie. They all seemed to thoroughly enjoy their meals. The chips and salsa were very good. The Salsa is nice and thick red sauce with lots of good veggies pureed into it. It was just spicy enough. My son in law ordered the Carne Asada, which is said "this is so good". My daughter ordered the Beef Fajitas, all three kids had Quesadilla's. Those were a hit! I had the Chicken Fajitas. The peppers and onions were slightly over cooked...but still tasty. The chicken however was just ok.. I am used to grilled chicken over seasoned sautéed peppers and onions. It generally comes to the table sizzling. This dish was not that. The entire plate had a red sauce covering everything. It was a flavor that I've never tasted before. Kind of sweet yet a tart smoky flavor. It was a bit bland tasting for all of that. No heat at all. I tasted Chili powder, salt, cayenne pepper, cumin & sugar in it. I'm sure there are other ingredients. I did ask the waiter what kind of sauce it was he said it was a special fajita sauce that they make in house. Apparently it takes 2 days to make.??? I'm not a fan. If I had known it was going to smothered in this sauce I would have ordered something else. I love Mexican, & TexMex cooking. I've eaten a lot over the years but I've never had a sauce on my fajitas... If I go back with my family again, I will not be ordering the fajitas. read more

The service and atmosphere isn't the issue. The food okay especially if you're in the area and you don't want to stoop down to Taco bell, then you're good. But I've had much better. They do miss advertise some of their food though. In the photos on their website, it looks like they make the tortillas fresh such as with the tacos, but what I got was just a crunchy shell that you buy from the store. It didn't seem like it was actually made here. My pick up order only took 10 minutes and I ordered a large combination plate of a cheese enchilada and 2 pork tacos that also comes with refried beans and rice... kind of tells me what I need to know. Plus the cheese inside my enchilada wasnt even melted all the way through.. all the food was somewhat warm/cold. Not hot. The pork meat was somewhat grey colored. The taste is fine like I said, but the quality really is not that great. For $20, that quality and the fact it wasn't hot or cooked through, was a lot. read more

Wow, I am so disappointed in this place! We went for the first time several months ago and weren't impressed. Tonight we thought we would try ordering their chips and queso to go. Apparently a large queso does not come with chips. So we ordered chips too. Our total came to $10! I live in town and want to support local businesses but I can go to Illegal Pete's and get chips and queso (that tastes way better) for $5. We will not be coming back here. read more

This restaurant has became the new rest stop and lunch place when going from Wyoming to Denver. Found the place on accident a couple years ago in the small town of Wellington, Colorado. And I've now been there a half dozen times. I've never had anything but a great meal here. They have an extensive Jalisco Mexican food style menu and boy do I mean a big menu, there's so many things that you can get that I have always had a hard time picking what I want. So many things I want to try here. The service is always good even when it's busy. They are always happy to give me my last soda refill in a to go cup. And the restaurant is clean and well decorated. Did I mention the food? yes the food is amazing. And very reasonably priced. I love that the salsa that comes with the chips and beans has a nice smoky chili flavor to it. My favorites here so far are the crispy chili rellenos, Tamales, and cheese enchiladas. Worth getting off the interstate while you're traveling for. read more

Just had a late lunch here today and not only was the decor delightful and colorful but the food was amazing. Our group ordered the chicken fajitas, chicken taquitos, chicken taco salad and the chicken strips for my picky granddaughter that declared that they were the best that she's had! The food was quite flavorful and well prepared, the bean dip was puréed to the perfect consistency and the salsa was a perfect blend of smokey flavor with a bit of heat. I believe we all deserve a second chance. So my GF and I went back to Sol De Jalisco for dinner. While the service was great, the food was either old or had no flavor, nowhere was that more evident than the Shrimp wrapped in Bacon. They were extremely old. The Rellenos barely had enough chiles to call it a Relleno. The food from both visits had absolutely no flavor. I doubt I will go there again. Pretty Sad..... read more

The food at Sol de Jalisco is rather unreliable - sometimes it's pretty good; others not acceptable. The chips and salsa aren't very tasty and that's not a good sign for what's to come! I've had a good platter of nachos and an absolutely rotten plate of fish tacos. The sauces and green chili do not taste home made. I don't know if restaurants can buy canned goods but I'm suspicious I'm disappointed as i was looking forward to a good ( didn't even have to be great) Mexican restaurant in Wellington. We have been here twice and both times the food and margaritas were 5 stars. I'm giving three stars due to the server being very rude both times. The first time we made sure to tip 25% knowing that this restaurant is in a small town and maybe we would earn a friendlier experience but no such luck. The second experience our female server was actually even more rude than or first experience. We had a party of three all in our fifties. All three of us have worked in restaurants sometime in our lives so we really cut a lot of slack when it comes to service but this place really needs some help. read more

Look, I get the guy from Arizona a few reviews down saying this place is crap. That's because out there they eat this so called Mexican Food that is like a healthy version that has a specific taste. You have to understand the restaurant follows the owners' culture and where their family learned their recipes. It's always different except the chains. Again probably what the Arizona guy is used too. Just give it a whirl. Make up your own mind. I liked it and have lived in New Mexico before for years and also worked at Consuelos (when it was a very popular restaurant in the campus west area of Fort Collins before becoming the express). I have been stationed in California, which the Mexican food is good there, but no where near New Mexican food. This place seems more authentic old Mexico.
