There isn't much seating inside and on the day we were there it was unseasonably cold, so patio seating was out of the question. We were able to play a little table Tetris with some of the other diners and piece together a spot for the three of us. The interior is decorated with lucha libre masks and art, so it adds a funky vibe. There was one waitress holding down the restaurant and she was on top of it! She greeted us and was back within a few minutes to take our order. I'm primarily vegetarian, but sometimes splurge on seafood, so I couldn't pass up the Shrimp Al Fuego taco as I love spicy food. It was large for a street taco and was packed with large, juicy shrimp. I will say it was not that spicy, as advertised, (although I have a high spice tolerance) and a bit on the expensive side, but very flavorful. I do wish the tortilla was warmed or toasted to amplify the flavor. They had a huge selection of hot sauces, including some local ones, which was really cool. I was tempted to try a margarita, but they didn't have the seasonal huckleberry jalapeño available, so I decided to stick with water. The others in my party ordered the Marinated Steak taco and the Beef Adobada burrito. Everyone really enjoyed their food and it's definitely about I'd try again.

Both were quite tasty. They came with hot garlic bread rolls stuffed with mozzarella cheese. A big thing for me with salads is the quality of the lettuce. Sometimes you get old dead, dark green or yellow lettuce. Maybe the white parts are brown. It's just old. and should be thrown away. The greens they served were fresh with no blemishes or discoloring. The other toppings were fresh. This was a very pleasant lunch. Shout out to our server/barista, Nevaeh. I got 2 scoops of ice cream: cotton candy and huckleberry with a hot latte coffee. My friend got a scoop of huckleberry cheesecake with a white chocolate mocha. My ice cream was super tasty and the latte hit the spot. The ambience was quaint and cozy. The barista was smiling and friendly and even let us take a paper menu to go. When asked, she did inform me that the ice cream flavors change on a regular basis and more often during the summer. I can't wait to come back to try a new drink and dessert.

This is not your average taco shop. Not even remotely. Having grown up in Southern California, where tacos were less a meal and more a foundational food group, I'll admit that moving to Coeur d'Alene initially left me a bit taco-depressed. I missed the little neighborhood joints, the aroma of grilled meat, the paper trays, the late-night runs, the beautiful simplicity of truly great Mexican food. Then my daughter introduced us to Cochinito Taqueria. Her exact words were something along the lines of: "You may forget about your beloved deep-fried tacos once you eat here." She was right. Completely right. In fact, after our first visit, my brain essentially went: "Deep-fried tacos? I have no memory of such things." Because Cochinito isn't trying to imitate Southern California taco culture. It's doing something far more dangerous: It's creating its own. The tacos here are extraordinary. Not overloaded. Not gimmicky. Just deeply thoughtful combinations of texture, spice, acidity, freshness, smoke, crunch, heat, sweetness, and balance. You can taste the intentionality. And the house-made corn tortillas? Good grief. These aren't merely "vehicles" for ingredients. They are part of the experience -- soft, fragrant, rich with authentic corn flavor, and substantial enough to hold together these beautifully layered creations. I've now tried nearly every taco on the menu, and choosing a favorite feels a bit like being asked which sunset deserves the sky more. But if forced under oath? The Lamb Merguez taco may be one of the finest tacos I've ever eaten anywhere. North African lamb sausage, hazelnut salsa macha, queso fresco, tomato, mint chutney... Who thinks like this? And more importantly: Who pulls it off this well? Apparently Cochinito does. Other standouts: * Beef Short Rib Birria * Pork Belly * Fried Maitake Mushroom * Carne Asada * Fried Chicken * Pescado Every single one somehow manages to feel both elevated and comforting at the same time. And the menu just keeps going. The elote bowl? Fantastic. Queso fundito? Dangerous. Pozole rojo? Deeply satisfying. Cocktails? Exceptional. Desserts? Absolutely worthy of saving room for. Even the atmosphere deserves applause. The restaurant is immaculate, energetic without being chaotic, stylish without trying too hard, and staffed by people who genuinely seem proud of what they're serving. The service has consistently been warm, attentive, and knowledgeable. And perhaps that's the secret ingredient here: Pride. Not arrogance. Craftsmanship. The kind that happens when people care deeply about every detail and refuse to phone it in. Cochinito Taqueria has become our go-to taco house in the Northwest, and honestly, one of my favorite restaurant discoveries since moving to Idaho. It's inventive without becoming pretentious. Comforting without becoming ordinary. And memorable in all the right ways. Absolutely outstanding.
