Even their chicken is noticeably better than elsewhere, at no more cost. To top it off, the staff are very friendly and knowledgeable. After paying the farmer (which was reasonably priced) and the processor, our pig was roughly $7 a pound! We ordered chops packaged for a family of 4, ribs, bacon and ham. The chops are packed with all different sizes, so it's super hard to cook for a family. It appears they didn't understand the cuts of meat. Also they did no trimming at all. I understand that a pig is fatty, but every pkg has at LEAST 1/2 inch of fat. Tonight I trimmed 9 oz. Of fat from 4 chops! The ham was not cured correctly. When cooking the ham steaks, blood seeped from the meat! It was really gross. I gave them one star because they tried to make to it right with the ham. They took the ham back and re-cured it for us.
