I tend to enter Square One through entrance 9. It gets me to Conspiracy Comics, Torrid, and Tanghulu. Between the two sets of doors is Sansotei Ramen. For a while, I have flagged dropping by this ramen joint. I decided to have an early dinner after work a couple of Wednesdays ago. Parking is much better on a weekday. I got a spot between Walmart and entrance 9, and walked over. I walked through the door after reading the helpful sign to push it. Push it real good, according to Salt-N-Pepa... haha I was immediately greeted by a woman who would be my server. She led me to a table and I got a menu to peruse. A male staffer was chowing down and a woman behind me was almost done eating when I sat down. It was quiet and nice. A group of three women came in towards the end of my stay. I am normally a miso or shoyu broth person. I looked at how creamy the tonkotsu looked and wanted it. I got it with thick noodles and corn. I also got a Diet Pepsi and gyoza. The former came first. It came in a cup. The carbonation was nice. It tasted crisp. It was cold. I loved it. My ramen and gyoza came together. It was different, but I was fine with it. The gyoza was excellent. The filling was delicious. Each wrapper held everything together. It was pan-fried perfectly. The dipping sauce made each gyoza yummy. I loved the tonkotsu ramen. I normally don't like the smell of tonkotsu. It was different here. The pork smell was down to a minimum. The broth was creamy and full of body. I loved it so much that I drank the whole thing. I have never done that with tonkotsu broth ever. I got thick noodles. They were chewy and bouncy. So good! The chachu was excellent. I got two decent slices. They were so yummy with the egg, black fungus, and green onion. The corn elevated this bowl of ramen. I have been thinking about this ramen ever since. It was excellent. I paid for my meal at the counter. I used a credit card to pay. I tipped and tapped. Done! I used the washroom before I headed into the mall. It was was a single stall for everyone. It was clean and inviting. I particularly liked the complimentary sanitary products for women. This ramen place was excellent. I can't wait to return. (144)

We ordered the laksa and Hainanese chicken. The laksa was quite coconutty and had a nice flavor to it. There was a bit of toppings to it, but the portion was overall small. The Hainanese chicken had a lot of chicken, but was served on plain rice. Service was oddly slow, even when there were only two tables there. but overall, it was worth trying.

The service is a tad slow, considering we were the only customer at the time. However, the staff were very nice and friendly. I got the Hainanese chicken. The portion is very generous and we got two big pieces of chicken. The chicken was very tender and my daughter liked it. The scallion sauce is also pretty close to what I would have back home. Unfortunately the rice was just plain normal rice with scallions. I was expecting the authentic Hainanese rice to pair with my chicken. My husband got the meat lover laksa. He said it was very flavourful which is a surprise. Most laksa in Canada is quite mild compared to what we would have back in SE Asia. He did really enjoy his meal. The toppings were also quite generous.

Came here out of curiosity since the concept felt a little different from your usual ramen spots,…read moreand I have to say, it really does feel like a "remix" in the best way. The menu leans more creative and slightly fusion-inspired rather than strictly traditional Japanese ramen. I tried one of their signature bowls, and the broth stood out right away--clean, layered, and a bit more refined compared to the heavier styles you usually see. There's a subtle balance of flavors that keeps it interesting without feeling overwhelming. The toppings were thoughtfully done, especially the seafood elements, which added a nice freshness. The noodles had a good texture overall, though I've seen mixed opinions on consistency depending on timing. The space itself is modern and cozy, with a relaxed vibe that works well for both casual dining and small groups. That said, this might not be the place if you're expecting a very traditional ramen experience. It leans more toward a creative, almost "elevated comfort food" style, which I personally enjoyed, but I can see how it might not be for everyone. Overall, it's a unique take on ramen with a lot of attention to detail. Not your typical bowl, but definitely worth trying if you're open to something a little different.
