My wife's friend invited us to this secret sushi speakeasy, hidden behind a false bookcase within the Peery Hotel lobby, as she has been friends with the chef for several years. Serving the finest bespoke omakase sushi (mostly nigiri) that I have had anywhere outside of Japan (and even better than many places I've dined in that country over the past 20 years), Sushi by Bou is about as close as you can get to tasting the flavors of the Land of the Rising Son, while still stuck here at home in the (current) Land of the Orange Don. You're going to be here for a bit, so settle in, order a cocktail (or two), and when your timeslot arrives, belly up to the bar, and prepare for one of the most extravagant, decadent, and delectable dining experiences you will ever have the pleasure of bragging about to your friends later. It won't be cheap, but by the end of it, you won't care, and you'll probably be emptying your wallet further, and begging for more. Not that we left hungry, mind you: oh, no no no, quite the contrary, as we were stuffed to the gills by the end (unlike the fish we just ate). I could probably iterate upon which of the courses were my favorite, or those of my wife or her friend, but that would be pointless: each serving was unique, and perfect in its own way, and fixating on one would be to the detriment of all the rest, as well as the overall experience: it's the completeness of the journey, rather than all the savory stops along the way, that really makes this a special dinner outing. If your experience with sushi is limited to whatever slides you way on a conveyor belt, or ordering a couple of rolls off of a menu, do yourself a favor, pony up the dough and treat yourself, just once, to Sushi by Bou (or a similar omakase experience), and allow your horizons to be broadened, and your world to be forever changed, the way that only truly masterclass cuisine like this can accomplish, without setting your foot on foreign shores. Left Utah 6 months ago and came back to try all the new spots that opened up. The price for the omakase experience cannot be beat. The flavors went well together. I will say the omakase definitely started out very fresh and yuzu forward for the first half of the sets, then they became more umami and savory for the last half of the sets. I think it would flow better and keep my taste buds wanting more if they mixed up the sets alternating from super fresh and citrusy to savory and umami. Our chef that night was super kind and always kept the next set on deck so we were not waiting long! The vibe of this space is a speak easy and hides behind a bookshelf in a hotel. I'm so glad we're getting quality omakase spots in SLC! We reserved a week in advance and booked for the 12 course. We arrived a bit confused, but asked the concierge to then discover that this is a speakeasy. It was a cute bookshelf door that led us into the room. We got started pretty quickly. The courses are: yellowtail, tuna, prawn, salmon roe, albacore, chopped tuna, scallop, miso cod, fatty tuna, salmon, wagyu&uni, and unagi. My favorites were the miso cod, fatty tuna, and prawn. I especially loved the pieces with yuzu shavings which brightened the taste. My one complaint is that there wasn't enough wasabi served with the pieces. Having experienced omakase on the coasts, sushi chefs typically smear a bit of wasabi on their finger tips onto the fish. Instead, I asked for wasabi on the side and placed it on myself. They also offered an option of Australian or Japanese wagyu for ~$14 more. I stuck with the Australian beef, and it tasted pretty tough. The sushi chef and I chatted and he didn't seem very knowledgeable about sushi, but rather was there as a job. Nothing wrong with that, but I enjoy learning about fish and the chefs' experiences. Came here for the omakase and was impressed by the quality and the flavors of the sushi. The chefs took great care with each course and we left satisfied. The cocktails are also innovative and delicious. The restaurant is in the Peery hotel and hidden away giving a speakeasy vibe. Reservations are essential and you must come on time as the seating is timed. Therefore there really wasn't much time for chit chat since you have to quickly finish each course before the next one arrives. I'm really glad they opened a new sushi spot in downtown. There's a hidden speakeasy-style entrance, which was fun to find. This is one of my fav omakase style experiences so far. Every course was good, and the chefs were fun to interact with. Drinks were solid too. The only downside was the wait, which took a while to get seated. The vibe is intimate and elevated, but still relaxed enough to actually enjoy yourself. Service was great from start to finish attentive, friendly, and paced really well so you never felt rushed through the experience. The omakase itself was fresh and beautifully presented, with some really standout bites along the way. It's definitely more of a quick, curated experience rather than a long, traditional omakase, which honestly made it feel modern and approachable. Parking wasn't bad for the area, which is always a win. Drinks were decent overall I wouldn't say they were the highlight, but I did really enjoy the ginger beer. This was our first omakase experience but won't be our last. We opted for the $70 12 course experience and left feeling full enough, part of us wished we had gone for the 17 course because those 5 extra plates looked delish. They do have a rewards program (app) which I joined beforehand but wasn't asked about it or given the opportunity to scan in. I was slightly bummed by this because after 3 visits you earn a bougie upgrade. The restaurant has newly opened so hopefully the rewards get sorted out! The restaurant is inside the Peery Hotel and the restaurant itself is pretty small. There are 10 spots per seating and each seating is an hour long. You can arrive early and sit in the lounge area and enjoy a drink before your meal if you have a reservation after the first seating. Our reservation was at 5pm and the restaurant opened at 5 so we didn't have much of an opportunity to have a drink beforehand. Every plate was carefully crafted in front of us. We enjoyed every bite but we did have a few favorites; the hamachi, toro, and miso cod. The drinks were fantastic. We had 4 different drinks and each one was unique and delicious. The Lost in Tokyo was so unexpected but amazing, think like boozy cereal milk with more depth. While the price point is more expensive than the average for dining out, this is not your average meal. I'm always hesitant with franchises but Sushi by Bou is a great addition to the SLC restaurant scene and I look forward to visiting again soon! read more

My husband and I flew to Salt Lake, from California, SOLELY to go to Sushi By Bou, on 4/11, for our anniversary! (Literally flew in that afternoon and flew home the next morning!). We had been to SBB in New York and it was such an incredible experience! When I saw this location had opened, I excitedly made a surprise reservation. When we arrived, we noticed the group before us was running behind. There were also several people not dining, that were just there for drinks. We sat and had a cocktail, while we waited. Once seated, the experience was *extremely* rushed, in an effort to make up time (at our expense). There was little to no explanation of each piece and within seconds of swallowing, another piece was being served. The pieces of fish were also sliced extremely small/thin. All in all, our 1 hour experience was shorted by about 15 minutes (maybe slightly more), which was very disappointing. It was also INCREDIBLY uncomfortable having people standing directly behind us, hovering and talking, while we were eating. There was an event scheduled after our seating and the place was packed. People were hovering around us so they could grab our seats when we were done. Drink service was disappointing. My husband had to get up from the sushi bar to go to the bar to order drinks, because the servers were not coming around. They also took a ridiculous amount of time to be made. I put promo code "slc100" in my reservation and it was not acknowledged. When I inquired about it, he said "oh yeah, we can all do a caviar bump" and rushed us through. All in all the food was good and we made the best of the experience, but we would not return or recommend. Maybe it's because they are new. Maybe it will get better over time. But for $337 for 2 people, I wouldn't want to take the chance. I attended the soft opening on Saturday March 7th, team was still finalizing things but what stood out was the amazing staff! Daniel the head sushi chef walked us through every course, let my wife do the blow torch which she loved! The final course was the best piece of sushi I have EVER put in my mouth and the caviar bump was the cherry on top. Located inside the Peery Hotel in downtown, it is a centrally unbeatable location - perfect for a night out in the city or a quick drive from Park City. "Speakeasy" is a trendy word that gets thrown around a lot, but this place nails it! You enter the hotel and look for the secret door. Stepping through it feels like leaving Utah and walking into a high-end/ high energy Tokyo or NYC hideaway. It's small, intimate, and very on trend with a sleek bar/lounge vibe. The setup always allows you to feel front-row to the action. Now for the food and drinks, the Sushi literally melts in your mouth. We sat at the bar and watched the chef work, he was incredibly skilled and chatted with us the whole time. This made the experience feel really personal. I even got to torch the sushi we ate so our sushi was seared to perfection, which made for an even more fun and interactive experience. MoneyGrab! Scammed! Ownership oversold the event. Horrible experience. Made to stand around and "eat and experience" while 70% of the patrons got to sit at the table. We made and had a reservation. All other guests who didnt get a seat at the table had the same question. Why didnt we get a seat? Could we have paid more for a seat? Why wasnt this explained in the exoerience details. So much so that it is either stand for 2 hours for a dinner or sit on a foot stool. Only enough room for 12 people. Had 20 in the space. Horrible experience. Not going back. This was extremely rushed. It's a revolving door. People waiting in the same room getting drinks waiting to be the next group up to the bar to eat. This was not a true omakase experience. The sushi was good not great and we could not hear the description of each it was just put on our plate and we ate it. However at Post Office Taskashe was our chef and you go the whole experience of the type and part of the fish and detail how it was made. About a 3 min explanation of each.
