    El Cabo Verde exemplifies fresh. It's in a new development that's attractive, clean, and well…read moredesigned. And that's before you even walk in the front door or take a seat out side. The fresh theme continues with the chips and salsa. All of it's made in house, and these were some of the best chips and salsa I've had in a while. The chips are a light and thin and a little bit tricky to dip without breaking. Two sauces, green and red, are provided and each tastes--not to belabor the term-- fresh. The chile relleno is served on its own in a soup bowl with a light sauce and choice of protein on the outside. The poblano pepper itself is stuffed with cheese, as is proper for chile relleno. Again the sauce, the chili itself, and all the ingredients tasted fresh and light. Unlike most Mexican places, rice and beans is brought on a separate plate and not merged with whatever primary entree you've selected. Here again, fresh: there is rice that's almost like a basmati, and refried black beans that are refreshing change from the typical pinto bean base. Service is prompt, knowledgeable and attentive. I had the pleasure of having Angelo for my waiter. The restaurant staff is predominantly Hispanic, the kind of folks ICE likes to round up. (I really hope this reference become dated real fast). The point is these folks are familiar with Mexican food beyond just the concept of this restaurant. The clientele appears to be primarily local and a steady stream of them were coming through at 3:00 on a Sunday afternoon. Access is convenient from i-49 and not too far from I-20.
