This was our first time to Quanto Basta. They don't take reservations and the place is tiny, so I'd recommend going on the early side. I had a margherita pizza, which I thought was really good. As others have mentioned this pizza is not "American" style, it's Napolitano, which I think translates literally on Google to "don't drown your pizza in mozzarella, this isn't Domino's stuffed crust." My friend had a salad to start, that had a lot of different flavors to it -- a mix of fruit and greens and fennel and... and... For my taste, it was a little too-too. But it was fresh as everything else we had was. Server was super nice and accommodating - we chose to sit outside, and it started raining. Heads up -- only a few of the outdoor tables fit under the glass awning, and the covering doesn't cover completely. So I'd definitely recommend going when there's a lower chance of rain. One other thing I'll add around ambiance is that the area for dishes/plates is right by the back door, and the sprayers are loud. Made it a bit difficult to hear at times but I imagine it's not an issue (or is less of an issue) if you sit inside. But for the pizza itself? Go. read more

How did I not eat here before? Nathan and Emily created some classics but also some unlike any available locally such as the leek and bottarga or limone (yes, limone). Sit at the bar - best seats in the restaurant and a great place to watch pizza maestro Emily rank out pizza after pizza! Everyone's favorite was the Diavola...the pickled peperoncini was a nice change to this standard pizza. I liked the salsiccia & bitter greens, but wish it was also available with red sauce. A Portland newsletter I follow and respect recently came out with an edition centered around the best pizza in Portland and I was flabbergasted, maybe even insulted, that Quanto Basta was not sitting at the top of that list. The pizza is chewy, flavorful and delicious. You may be left desiring more cheese, but alas, Quanto Basta follows Italian culinary tradition and goes light on the cheese, bringing balance to the dish rather than the gooey gluttony that we're used to. Trust me, it works. When I'm feeling extra hungry, I can eat a pie by myself (hello, Amatriciana). The rotating pizza always makes me pause for consideration as they use in season produce. Decent cocktails and a notable tiramisu. I love the chic but approachable ambiance, the neighborhood friendly service and the simplicity of the kitchen (or, how simple and effortless they make it all seem). The wood-fired pizza was excellent, amazing dough with great texture and beautiful crust. We had the Limone and the Amatriciana, both really flavorful. I do think the pizzas could've used just a bit more cheese, but overall they were thoughtfully crafted. We asked to add burrata and were politely declined, with a kind and clear explanation about the chef's intentional balance. I actually appreciated that! It showed care without coming off as snobby. Holy wow! After visiting Rome earlier this year, I've been on the hunt for good Italian food - especially pizza, and I love me some supplí too. We went to Quanto for the pizza, and were not disappointed. The dough is soooo fresh and flavorful, and thin but didn't get soggy like some Neapolitan-style pizza. The sauce and guanciale were on point and the pie was baked to perfection in the Italian oven, crispy and chewy in just the right balance. The supplí was also an excellent find and very tasty. Desserts are on point too. Gabriela is a font of knowledge about wine, and the list reflects that expertise - and she can also tell you about how they source their other ingredients, locally and sustainably as much as possible. Clearly, the team here cares about authenticity and quality, as well as creativity. Atmosphere is casual / not stuffy, yet great for foodies! The margarita pizza was a true Napoleon pizza like those we have had in Naples, Italy. The sourdough crust was divine and the toppings are fresh and locally sourced. The patio was small, but pleasant on a beautiful summer evening and the service was fast and friendly. Would dine here again if we weren't leaving town tomorrow! read more

Solid Pizza spot that is definitely worth checking out. Pizza is rough because there's so many styles/preferences..with take that into consideration when going into Quanto Basta. The the interior is intimate and gorgeous, and the staff were friendly. The Pizzas themselves (we got 3) were all packed with great flavor and definitely memorable (note, they are small so you easily order 1 per person). The only "miss" for me was that the pizzas felt a bit more Italian traditional in that it very thin (not crispy thin, just thin). For me, a Pizza needs a bit more bite to it outside of just the crust (again, if you vibe with thinner pies, then this is your spot). Definitely recommend checking out! read more

Highest of recommendations. My lovely wife and I found our way here for our 12th Wedding Anniversary. We had expectations which were gracefully surpassed. The pizza is an expression of love and the slow ferment sour dough sets a wonderful base for a variety of toppings. Let me not get ahead of myself. Calamari. Incredibly light and the fried lemon. Wow! A shared Sicilian Fennel and Orange Salad grounded us for the carbs to come. These were the perfect starters to go with our Negroni cocktails. As we enjoyed the bustle of the little restaurant, we were amazed by the artistry of the pizza making. Malleable dough. Precise toppings. Prodigious heat. All the while, pizza master Betsy and crew welcomed each new guest with true human connection. I had a feeling of connection here that cannot be fabricated or bought. Believe me when I say, a true gem. Now to the pizza! We enjoyed the gamut. Classic Margherita and the boldly seasonal Zucca (Summer Squash, anchovies, and herbs). Absolutely fantastic flavors. I wish I could have tried them all. I would just say you should plan on ordering the affogato for after dinner (espresso over house-made Bay Leaf ice cream). She came out and said they don't do curbside pick up anymore but she decided to do it anyways which was very nice! It's a nice small little place which holds a lot of energy and passion it seems. And the pizza was very very good. Class of wood fire oven pizza with amazing texture and leoparding on the crust. The tomato sauce was so delicious and the Ingredients seemed to be of very high quality. They came in paper bags as seen in the picture which was a little odd but I sort of liked it. Small shop on Congress Street, away from the most commercial areas but an easy walk from most of them. Neapolitan pizza that's very light, droopy, bready, and leopard-spotted, and the base--or undercarriage, as a well known pizza aficionado might say--is the key component. Not only is there flavor from the dough, but it really grabs the oven fire flavor as well, with dark spots both above and below. Toppings are minimal, or as the translation of Quanto Basta goes, "just enough." If that's not enough, this pizza isn't for you, but I really liked it. I attacked the menu noticing that some pies have tomato but not cheese (like the "Rossa"), some have cheese but no tomato ("Limone"), and some have both ("L'Amatriciana"). So that's how I checked the boxes, going with those three. All were fantastic. I'd be lying if I said I wouldn't want more of the toppings, but these were still excellent pies that showcased the dough and the oven. They're light enough that you can eat a whole one. Friendly staff. Casual but sophisticated atmosphere suitable for a low key first date. All-Italian beer and wine list. Sometimes you gotta give up the Allagash for once and be taken to another place. Quanto Basta started out as a food truck that now has a beautiful brick and mortar pizza shop in Portland's East End. They serve wood fired pizza among other small bites. The interior is small, yet incredibly thoughtfully decorated--it's walk in only (no reservations), so I wouldn't recommend bringing a large party here. It's an intimate space. I ordered a warm anchovy-based dip (kept hot by a lit candle underneath) with an assortment of raw veggies, and WOW. It was delicious and perfect to dip my pizza in afterwards. As for pizza, l ordered the Margherita, which is a classic choice and did not disappoint. Service was friendly, food was excellent, decor was beautiful--can't wait to be back soon. read more

Order at the register and then find a table among a few inside or out in the little patio out back. It definitely gets busy, so go right when they open to avoid waiting :) The suppli (kind of like arancini) are piping hot and delicious, and the pizzas are all incredible. Make sure you add the burrata to your pizza for a lil extra fun. Spritz's were the perfect pizza night addition. Quanto Basta is a small spot with friendly service and excellent food. Although not exactly a warm space in the cooler months it was better at the "bar" across from the pizza oven they suggested. They specialize in Neapolitan-style pizza and have a few small plates aside from maybe 4 pizzas or so to choose from on a given night. The crust, to us, really stands out as different-Sourdough, light, airy, not thick, but also not super thin and flavorful from the wood fired cooking. My wife and I both agree-Quanto Basta has carefully chosen flavors that are well balanced and different than your typical spot and different from other pizza we've had. We've been in a few times- each time we've had the Margherita and also tried their rotating menu pizzas-an amazing veggie special with eggplant, squash and pesto with greens and most recently had a spiced sausage, roasted peppers with chili oil and all sorts of other goodness! Recently they did a fresh fennel, orange, nut, olive and onion salad we ordered for a small plate and it was excellent! Wine and beer list is Italian- although they do offer one local craft beer from Oxbow Brewing. We'll be back for sure and would recommend. read more

Orders are placed at the register then someone brings the food to your table. We started with the rice ball appetizer. They were over cooked and had a burnt taste to them. The pizza crust is light and a little chewy. The spicy sausage & broccoli was tasty. Not very spicy though. I think that was the only meat option. I think my problem is that I don't love authentic Italian pizza. I'm visiting Italy in a few weeks (humblebrag) and I already wish I was just dining at Brickyard Hollow. I want bags and bags of cheese and more greasy cup and char pepperonis than I can count. And Quanto Basta is definitely not that. I'd actually call it sparse. Very limited cheese, sauce and toppings. It's like paying for a $100 bottle of wine but secretly wishing you could just pound the Porta 6 in the fridge. It's not for me, but I respect the obvious premium ingredients and technique. The doughy crust is near perfect. It's a legit pizza oven, set to 830 degrees, and the pizzas cook in maybe three minutes. The creative Italian take on the Negroni was fun, the service was great, and the room is bright and sleek. It appeared to be mostly regulars, as the staff greeted everyone by name. There's a lot to like about Quanto Basta, but depending on your preference of pizza, it also might not be for you. read more

We were excited for some real Neapolitan pizza in Portland. Unfortunately Quanto Basta was a swing and a miss. Any time we try a new place serving a Neapolitan pie, we get the margherita. It's the benchmark. Quanto's margherita was mostly dough. It was also pre-sliced which was odd. The pre-slicing also showcased their extremely stingy use of ingredients. One of my slices had literally zero cheese and only a faint smear of sauce. The pie was closer to a circle of puffy focaccia with a hint of cheese and sauce, than a true Neapolitan pizza. Guys, go to Anthony Mangieri's place in NYC, Una Pizza Napoletana, or Song' E Napule, to see how it's done right. You're going to have to pony up for more cheese and sauce if you want to be taken seriously. Kudos for the dough and the char though. I'll give you that. You're halfway there. read more

We went here based on some neighbors' comments and are so glad. What a nice surprise! The food is real- rich in flavors and texture. Our sausage pizza with broccolini was amazing. Usually we need a take out box when we eat pizza but not here. It is too good not to eat as intended. The warm umami dip served with the vegetable crudo was a great start. The cannoli was a small flavorful fresh treat to end the meal. Cocktails, wine, and the NA drinks were awesome and there was great advice from our server on the pairings. Been here 3 times. It is a very small restaurant, but cozy. Service is good. However, you order from the counter. I am conflicted in my thoughts about the pizza. It tasted really good! But, it is VERY chewy. Not crunchy at all. Which is weird, because they put a nice char on the crust. Very light crust. I'll go back. But don't expect a big, cheesy pizza from this place. Okay. I've had pizza from two of the top joints in America. Una Pizza Napoletana in NYC (BEST of my life!) and Pizzaria Bianco in Phoenix. And I adore the slab pizza at Macucci's. And I love a good NYC slice. So, granted, I set a high standard. I like lots of different styles. This pizza, for me, is just...no. Sorry but the crust? What is happening there? It's....suuuuuuper chewy and doughy. It seemed barely done, though it was. I got the one with Italian Sausage and Broccolini, recommended by the charming bartender. This might be a style enjoyed by some. I'd had this place on my list to try for a good while. Oh well. Glad I finally tried it, just not for me. I've been here once before when they first opened, food was alright but there wasn't enough sauce or cheese on the pizza. Tried to come back tonight to give it another go, we arrived at 6:30 to put our name on the list because we assumed there would be a wait. They said there would be a table between 7:30-8pm. We got the "we're ready for you text" to head over to the restaurant at 7:36. There was no table ready for us, and they said we could hang and have a drink until there was. We thought we might grab a drink at a bar next door but they told us it would be really soon and to not leave. We all ordered a round of drinks and proceeded to wait over 45 minutes, standing in the corner where there were two stools for the four of us but at least we finally found a good spot to wait that was out of the way. The server came over and asked us if we wanted to order food while we were waiting and we said no we would like to wait for a table. He came back 10 minutes later and told us that there would be two spots at the bar and a two top opening up, but we would not all be able to sit together. After waiting an hour at this point. We gave up and left close to 9pm, super hungry now with very limited options for finding dinner so late. The server never once acknowledged that there was any mess up on their end or inconvenience to us, no "sorry our bad", no "hey guys it looks like we're not going to have a table for you tonight, maybe you should go somewhere else". He actually told us not to get a drink somewhere else and also tried to get us to order dinner when he knew there was no table for us. As someone who as worked in the industry for years, I can think of a dozen ways I would have handled the same situation.
