My husband tried them at work then took me within the week claiming, "Hannah, you just gotta try these!" The urgency in his voice told me everything: these tacos are GOOD! We got 2x Chorizo and 4x Bacon with all the fixings: potatoes, cheese, fresh pico and 2 kinds of salsa on the side. They come in combos of 2 for about $6 -- great deal in my opinion! My first bite -- explosion of flavor! The tortilla was soft and chewy, the potatoes melded with the eggs n' cheese, the meat tasted juicy but not greasy while the pico lifted and brightened the whole taco. It was savory while being fresh and reminded me of California Mexican! Something, I always want in my life. I got full after two but wished I could have eaten a dozen more. Will be back!

But the locals must know what is up. There was a steady stream of customers. Lucky for us, we arrived on $1 taco Tuesday! There is a sign on the truck that indicates what meats are included in this (steak was not). It took about 15-20 minutes from the time I ordered to get my food. Which makes sense having ordered for 6 people. The blue canopy to the side of the food truck has an assortment of toppings available that are all self serve. That last point is the hardest thing to find! But after stopping here one day on my drive home, this taco truck has become a regular favorite of mine for years now! They offer other items besides tacos but I have never tried them because their tacos are the star. The carne asada tacos are great but my favorite tacos that I have ever tried (and this includes tacos ive tried in Mexico itself) are the Al Pastor tacos with cilantro, onion and the pineapple. It is so, so good! The al pastor meat is marinated nicely and is packed with flavor and the sweetness from the pineapple pair perfectly with it. And like I started out commenting, these tacos are not dripping in oil or grease. In fact, I rarely see any oil in them at all! It makes the entire experience that much better! I like to put their red salsa on for an added kick while my mom likes the green salsa for a milder yet just as tasty flavor. Make sure to put some lime on it too! All in all, the best taco truck of the probably 20+ places i have tried over the years. You can also call ahead your order so that way its ready when you arrive! They are locted in the Save a Lot parking lot, just north of the I-70 and pecos roundabout. It's a yellow and green truck, you cant miss it, and you definitely shouldn't!

There were a lot of people waiting for their food when we arrive, already a good sign. We had three tacos, one pastor, one carnitas, and one asada, they were all delicious but the pastor was definitely the winner. But the overall winner was actually surprisingly the quesadilla with carnitas, for whatever reason it was one of the best quesadillas I've ever had. The salsas that they provide we're also both very delicious, especially the red one. We will definitely be back on the next sunny and warm day in Denver!

My chicken bowl was loaded with rice, beans, marinated chicken, lettuce, tomato, guac, cilantro, cheese, sour cream, and pickled onions.
