For anyone who isn't familiar, tinga is a traditional way of making chicken with chipotles, adobo, tomato, and tomatillo (which my autocorrect wants to call "tomato Lloyd). The meat is typically shredded, spicy, and saucy. Traditional toppings include onions and cilantro. They kept it basic, with a large pile of shredded chicken topped with onions and cilantro over what may have been a homemade tortilla (or at least a really good store bought one). The flavor of the meat was on point. Not my favorite taco of all time, but good enough for a 5 star review. The meat smelled good, which, as a once-upon-a-time vegan, is not something I'll say often. The service was really friendly. Most of the food cart operators are super personable. Some of them will try to win your business with jokes and free samples. It was easy to find a place to sit since this food court has a ton of indoor and outdoor seating. Parking was also easy since the parking lot was huge. I love trying new places, and I love when there is an affordable option like a taco or sope I can try before I decide whether or not I want to eat there again.

The first one I had I couldn't believe how legit it was. Went back two days later just to be sure I wasn't dreaming. Nope, it was just as good. The tortillas really help make it stand out, chewy but crisped up perfectly on the outside. The Pastor and Chicken are both solid, though I do a wish there was a little pineapple in the Pastor. The Street tacos are just fine. Small, but as simple as they should be with just the white onions, cilantro, and accompanying lime wedge. Extra appreciate that they're only $3/each. That's all I've tried so far, but will be a regular visitor for the burrito alone. Their 'dining area' leaves a lot to be desired, but I appreciate that they have a covered area to order and wait in the winter months. Service has been good. The hot sauces are great as well.
