I attended a virtual recipe class with The Cupcake Dietitian during the virtual Hikyoga Festival. Berit, the founder, immediately caught my eye! I mean, how cute is that business name. It pays homage to the fact that she loves dessert but also leads a healthy lifestyle.
To be honest, I normally dread "healthy cooking" classes like this. So often, the instructor is not reading the room and proposing recipes that are so unattainable for the average person. I was pleasantly shocked when Berit led us into an easy oven-baked salmon and mango salsa recipe. I could actually understand everything she was teaching and it seemed like a logical, easy recipe for a busy professional. All the ingredients were common things you can find in any grocery store with no issues.
I connected with Berit's overall style. She was approachable, like you were talking to a friend. Upon looking into her further, I see she does nutrition consultation and offers services online even if you're not located in San Diego. This was the first time I have ever encountered a dietitian that felt like a more regular person I could be friends with in real life.
