They have amazing food. I have been working in town for a month and this is my go to spot. An array of options. The staff is so friendly and on top of it. Carlos is the bartender and I usually sit at the bar to eat. He also makes amazing drinks but he is funny and a good conversationalist. The bar drinks are all hand made from scratch.. they use fresh fruit and fresh daily squeezed juices to make the best cocktails. Super nice. Unexpectedly elevated food in the wilds of CO. Simple meets sublime. Margaritas are authentic and delicious. Carnitas on Cuban sandwich is worth writing home. The Dish Room is phenomenal. Must stop if you are anywhere near Burlington. Incredible food, good beer, and outstanding service. I went while stuck in town during a blizzard. Got the John Wayne burger and a side salad. The salad consisted of fresh mixed greens, multicolored carrots, and tomatoes and was very fresh. The burger was a huge 1/2 pound and was cooked to a perfect medium as I requested and had bacon, deep fried onions, bbq sauce, and mayo which took it to another level. My sister recommended this place when our usual first choice (Chen Vuong Thai) was closed, and it did not disappoint. The $10 lunch menu was spot on with a good selection of options. I had the chilaquiles with pulled pork and they were outstanding. My fellow travelers were very impressed with their meals as well. We received outstanding service from our waiter Zachariah. The prime rib here rivals that of the big city steakhouses for a fraction of the price. It was the special- 18oz w/ 2 sides for $32. The 12oz was $24. Tried two not-so-ordinary sides. We were fortunate enough to have called Bradley at The Clairmont Inn and Winery who recommended The Dish Room stating the chef has won awards in competitions and excellent (all true). We sat at 2 of the few bar seats available due to Covid-19 and consider ourselves fortunate because Nathan, albeit very busy, was helpful and warm, giving us great suggestions, all thoroughly enjoyable. Allaini is a wonderfully warm and knowledgeable over the top first class server. The ahi tuna tacos were 10 star delicious. We stayed in Burlington on our drive to Michigan. The Dish Room server, Cindy, knew all matters gluten free but entrees on the menu weren't indicated. We ordered the butternut squash enchilada and the stuffed poblano pepper - both had an incredible flavor. The brew-pub cheese can be served on the side for the pepper to be gluten free. Several additional entrees and a few appetizers were gluten free or could be modified. Decent whisky menu with state craft beers, as well. Several TV screens and seating accommodated for watching a variety of sports. Cindy was friendly and consistently checking on us. read more

Don't let small towns fool you; they know how to put good food on the table! We're on a road trip to the PNW. I have vowed to not eat fast food on these long road trips and places like The Dish Room are exactly the reason. The decor is awesome - very current with reclaimed wood and metal high top tables mixed with booth and table seating; something for everyone. They have an inviting bar area with tvs and a great selection of beer, wine, and cocktails. If I lived in or near Burlington I know I'd be a regular here! We arrived right at noon and were surprised the place wasn't busier. By the time we ordered our food the dining room had filled; they obviously are doing something right. I ordered the BBQ chicken salad. It was so creative and so very good. It is topped with freshly made onion straws that are the perfect addition over a generous bed of lettuce, cheese, corn salsa and a tasty dressing. The chile potatoes are actually potato wedges that are dusted in chile spice, what a delicious compliment to an amazing salad. Hubby had the Cuban sandwich which was equally as amazing. We're back on the road fat and happy!! We will definitely be back on our next road trip. read more

I have driven past Burlington for 40 years. Today I decided to stop and stay in a crazy cheap motel. I got to eat at The Dish- fortuitous and fabulous. I will never dive by on I70 again without eating at The Dish. To say that The Dish is a diamond in the rough is the understatement of the universe. It is a 5 star restaurant anywhere, but to find it in Burlington, CO defines the fun of exploring middle America. I started with a great vanilla porter. Meal was a perfect ribeye, Brussel sprouts and a nice cab. I had more than one+ cab. :) Very good. I am not a desert person, but the bread pudding was heaven. The staff were as professional and friendly as you will find in any big city. They know the menu and clearly enjoy what they do. Ezra has built a great team, and it shows. We spent a week hiking in the mountains and we were ready for a good meal on the way home rather than fast food: this is the place! Lunch was a steak sandwich with peppers and onions, and my wife had a plate of "poppers" with a sweet corn tamale that was to die for. I can only imagine what dinner is like!
