    This place is somewhat "hidden" a block off the main drag through downtown Cedarburg (Washington…read moreSt.). They have a very large selection of cheeses from Wisconsin, the US, and abroad, with lots of unique offerings. We tried a chicken soup Monterrey jack and a mustard Gouda, both of which we really enjoyed. The chicken soup cheese actually tastes like chicken broth from a rich soup, which was definitely a new experience. The room is decorated and bright, and felt like a great spot to stop on a Saturday afternoon. It's a nice change of pace from the usually-crowded bars through downtown Cedarburg. You should be aware that the tasting room apparently can't serve charcuterie boards themselves because of the class of license (maybe no food service cert.) but they're happy to help you enjoy any of the cheeses you purchased in the store and offer you some wine(s) to accompany them. The bartender graciously offered us some crackers to go with the plate and we were able to put together a satisfying little wine tasting experience! The one thing I would like to see is a few more wines on offer for the wine flights; at the time, they were a bit heavy on sweet white wines, which is just not my taste but may be popular in the area. They also have a cocktail list, beers, and their own brand of several liquors, so there are plenty of options. We will be back for a nice afternoon glass of wine and some cheese. It's also a good source of reasonably priced cheeses and wine if you want to have a picnic at the parks nearby.

My review for atmosphere would be 4-5 stars. Unfortunately too much time doing nothing but waiting and looking around killed the visit. I was there on a Saturday at the noon hour. It was not exceptionally busy, especially for the space they have. We were just there to get a coffee and go. Should be in/out in a few minutes right? Wrong, there was one girl managing the counter and two guys visible in the back area. We waited a full 10 minutes at the counter while the girl took one order ahead of ours. I was getting the this is going to take forever vibe and would have left, but we weren't in a hurry and my wife wanted to try the coffee. So once our order was placed and paid for we proceeded to wait another 20 minutes for two drinks and a scone. In that time the counter girl certainly kept moving, although not with any deliberate speed. The two guys in the kitchen did not come out to help her at all and when delivering only two plates to tables did so at a snail's pace. The place really wasn't busy, but the staff they had struggled mightily to keep pace. This is similar to what my friend reports experiencing time and again. To give credit the counter person did apologize for the wait time to place our order and apologized again for the wait to receive our order. So the drinks (coffee and a chai) were average and the blueberry scone was on the dry side of mid. All in all, really nice atmosphere and decorations. Maybe a place to bring your own drink in, because you may not get one from them for awhile. Definitely not a good place to stop if you are in a rush to get somewhere else.

It's the perfect fancy cozy with velvet and wood. The cocktails are magnificent and the wine selection is great and the flights are so fun. The bartender Em is a sweetheart. This meant I couldn't ask as many questions about how the cocktails were conceived or what they were planning for the upcoming season. There were definitely some that were combinations that I've not seen before! The staff were kind and engaging. I genuinely appreciated the company and conversation as a solo drinker.

I was impressed by the variety I believe Uncorkt has something for everyone to indulge in. They also have a nice selection of snacks. I was a little underwhelmed with the customer service. There were two employees working and a couple of customers enjoying a bottle of wine when we arrived. None of the staff made eye contact with us or said hello. We browsed around a bit and when I picked a beverage I took it to the counter to ask about their process....do we pay then find a seat, do we start a tab, etc. The person that I spoke with informed me I had to pay for my beverage, and was very short with me when I asked clarification questions - I couldn't get a smile or laugh out of her. I'm sure masks make it hard to understand each other, but the whole interaction felt awkward and not very welcoming. Later a local family that this employee knew came in, and she was very nice warm to them, so I guess she just didn't want to warm up to me. My husband said the other employee was helpful & friendly. Made me feel silly thinking I was mistaken,....Then hollered across the floor to get my attention to explain how she was mistaken. Very weird vibes overall. Bar was full so we sat near the windows at the tables and mostly had to go back to refill our flights . Great wine, but service and courtesy was skewed! Will not be going back.
