The Ribeye was wonderful and so accommodating! I was planning a welcome meal for the beginning of a conference. I gave the headcount, and although not everyone who RSVPd yes showed up and some guests trickled in at various times, the restaurant made everything run very smoothly. Most of all, some guests showed up at 6:00 p.m. when the reservation was set for 6:30 p.m., and they were allowed to sit. The organization, attentiveness, and flexibility was absolutely fantastic. And the staff were so nice and pleasant. It was a nice touch to have a welcome meal for the conference, the guests had a great time, good conversations, and were excited to see each other again after a 2-year COVID conference hiatus. It's so hard to find a good salad bar anymore, but this one is exceptional! All the salads are homemade and delicious! I got the shrimp & baked potato. The shrimp were HUGE and delicious. I wasn't impressed then, and I'm not impressed now. My husband and I both ordered ribeyes, mine rare-warm and his medium rare. Both were cooked pretty much the same. Not sure why they are served on hot skillets, as that ruins any attempt to maintain the level that the steak is cooked -- my "rare warm" was hot. There was no flavor to the ribeyes. The quality of the cut was bad, and I don't think they even had salt and pepper on them. We've had better ribeyes from County Market cooked on the stove. For sides, I had the steak fries and he had the baked potato. Neither were anything special. I'm sure the steak fries come frozen. For the price of entrees, I really think fresh cut fries should be expected. People have ranted and raved for years about The Ribeye and how it's the crown jewel of Champaign. My husband and I had dinner last night. We had not been to the Ribeye for 20 years. I was pleased with the ambiance and the food. Had the crab cakes served with greens, remoulade and lemon. Delicious! Steve enjoyed his ribeye and baked potato. Steak on a sizzling platter. Yum! Wheat bread loaf with soft butter. So good! The salad bar seemed more exciting years ago but still delivered. Made a luscious green salad for my dinner. Went back for ambrosia, pudding and Waldorf salad for dessert. Steve liked his Hefeweizen but I didn't really like my old fashioned. It was too sweet. If I had room I'd have ordered one of the ice cream drinks like Pink Squirrel or Grasshopper. We'll be back for the Monday and Tuesday specials. We always have consistent food and AMAZING SERVICE at The Ribeye. They've added a couple of offerings recently, like crab cakes, mac and cheese, and steamed broccoli. The new bread they offer is ridiculously good. It's really rich and creamy, if you can describe bread that way. The Ribeye is a nice place for special occasions. Husband and I were traveling through Champaign and decided to stop for supper. We each ordered rib-eyes and they were cooked to perfection. The salad bar offers numerous choices of fresh, homemade vegetable and pasta salads along with lettuce for tossed salad if that's your preference. The bread served was freshly baked and warm. Just had a great meal at "The Ribeye." Strange place for a vegetarian to eat, but the salad bar was saying my name. I was worried about ordering just the salad bar. The waiter treated me like a family member. In fact, he greeted several other patrons by name. Probably a local legend. Anyway, the salad bar was extremely fresh and clean. The Ribeye came highly recommended by a friend. My mistake might have been ordering chicken instead of steak. It was so salty I couldn't eat it. In their defense, I often have salt issues in restaurants, and the pleasant and attentive server offered to replace it. I chose instead to take advantage of their nice salad bar and take the chicken home to season chicken soup. My friends assured me their steaks were excellent. Brian may be the best waiter that I've ever had, attentive without hovering, perfectly timed bringing food and drinks, extremely helpful and kind. They serve your food on a hot skillet protected by a wooden dish and I love that this means even half way through your steak your food isn't cold at all. I have enjoyed The Ribeye for many years but hadn't been for quite sometime so we made a visit Saturday evening. We arrived about 6:30 and it wasn't terribly busy so we were seated immediately even without reservations. The staff here is always very friendly and this was no different. Our server was prompt on taking our drink orders, a nice Cabernet for us both. Unfortunately, mine had cork dust (I think) floating on top of the wine. I am surprised and disappointed I had to ask her to bring me another. She should have noticed and never brought it to the table. We both ordered ribeyes with twice-baked potatoes and headed off to the salad bar. The salad bar is always one of the highlights as they have homemade salads you don't see anywhere else. I love that salad bar! Our steaks arrived on the sizzling platter in an appropriate amount of time. Mine was ordered medium-rare and while it had some pink inside I was disappointed at the lack of a sear or grill marks on the steak. The flavor was okay but not impressive. My wife ordered hers medium-well and it had a nice sear. It seemed appropriate in the color and was still moist. The flavor of the steaks was good but not impressive as there was little seasoning. The twice-baked potatoes were as excellent as I remember and the sauteed mushrooms were good. Oh, and the fresh bread was very good. The total for our bill was about as expected for what we received, not cheap but definitely not overpriced. Overall, The Ribeye has not changed in years. It's probably time to update the quite old pictures and decor. The menu has also not changed in years so it may be time to update the choices to add some variety. Champaign has many new restaurants that offer impressive steaks so I'm not sure I'll visit the The Ribeye again. But if you want a huge salad bar with many great salads and a good ribeye in a 1970/80's setting, it's still the place to go. read more

The 80's belonged to the Illini and the Ribeye belongs to the 80's. This is one of those traditional joints that dot Champaign-Urbana that has a homey, comfortable feel to it, like an old leather chair. The dark decor hasn't changed in thirty years with its mirrored wall tiles and Tiffany lamps in orange and blue adorning the dining room. Don't expect an experience like you'd get at Morton's or the Capital Grille or Smith and Wollensky's. Bone marrow truffles or creamed spinach will not be found on the menu. What you will get though is a hearty meal delivered with friendly, attentive service. You need to be hungry for beef though as that's what the Ribeye offers best from its kitchen. Ribeye steaks are ordered by the ounce in two-ounce increments starting at 8 ounces and heading up to 2 lbs. Your meal will be cooked in special broilers to take advantage of the Maillard reaction that occurs in this environment. That's how steakhouses get the unique flavors that form when proteins and sugars react deliciously under high heat conditions. There are a few other choices on the menu if you're not a carnivore but you're missing half the fun if you don't pick the beef. Your steak arrives sizzling hot atop a heated cast-iron skillet along with your choice of potato or other starch. While waiting for your main course, you'll receive a loaf of freshly baked bread at your table, and you'll be invited to partake in the very well-stocked salad bar. This has to be one of the best bars anywhere. You can assemble a nice dinner salad with a variety of greens and condiments such as pepperoncini or pickled beets, as well as sample the home-made carrot-raisin salad, Spanish rice, and several other regular, tasty creations. You'll have to take care not to fill up on these although you may be tempted to do so. The salad bar is a major part of the whole home-cooked vibe this restaurant puts forward. Brian is my favorite server as he always takes good care of his guests, but I've never had a bad service experience in all the years I've visited. How can you go wrong with a name like this? I arrived a little early and glad I did, this place fills up (always a good sign!). Even with a recent price increase due to food costs and supply chain, the meal was very affordable. It's also nice to have a salad bar option with dinner as it seems these have been going away. The produce on the bar was fresh and plentiful. The ribeye came on a hot cast iron platter and the steak was propped to the side, so when you slid it on the plate the searing was fantastic. The waitress was very pleasant and attentive, I received my meal very timely. Then I left-without my credit card...I called the next day and Jim said no problem, he'd put it in the mail, which I received. Went with the family. Wonderful service but really expected a better steak. The cut of meat was not great. I got a 10oz steak which I expected to be a small but thicker chunk-o-meat. Instead it was a thinly cut piece of ribeye.. very thin. The plate it comes out on is scorching hot which normally is awesome but I had medium rare steak for about 30 seconds.. the rest of my steak was well-done because it kept cooking on the plate. A friend and I went to the ribeye recently and neither of us enjoyed ourselves. The wine was bad, the twice baked potato was gluey, the steaks arrive cooked and then just overcook because they're served on sizzling skillets. Almost every premade salad on the salad bar seemed to be dressed in sugary mayonnaise. There were peanuts in the pea salad and it wasn't posted anywhere about the allergen. We found this restaurant because it was a two minute walk from our hotel we were staying! There was already a homie vibe as soon as I walked into the restaurant. Luckily, there was no wait and we got seated immediately. The waiter was super friendly and down to earth. He was polite and explained everything on the menu. I recognized that people even recognized our waiter and vice versa! The menu is fairly simple. Their most popular item, the ribeye, comes in two sizes, 8 or 10 ounce. However, you can get even more for $1.50 per ounce above 10 ounces! You can also add mushrooms or onions, and you also choose between baked potato, fries, or rice. You get a choice of wheat or white bread as well! The food came within 10 minutes and came on sizzling hot skillets which I thought added to the whole aesthetic! One down side was that the fries turned soggy because of the oil, and everything has a layer of oil soaked underneath. I ordered a medium rare, however I think it was a little more cooked because of the skillet. Nonetheless, the ribeye was very flavorful even without the A1 sauce and the onions I also ordered were a nice kick to it! Along with the entree, you also get a salad buffet!! The apple and creamy pasta were my personal favorite. They were sweet and crispy (really don't know how to describe it but try it out). Overall, I would definitely recommend this place! My wife and I tried The Ribeye on a weeknight, got there right at 4:30 pm. we were seated pretty quickly and proceeded to place our order for the Monday Special, and asked for each of us to have a 8 Oz Ribeye. I asked for some lemons f Dr or our water (never received) and my wife asked if she could have a soda rather than the Wine that was part of the Special. our waitress said "sorry no substitutes ", instead of what another waitress told her table, "sure thing, we'll just take a couple dollars of the price of the Wine". so we took it as Soda was not available. As far as the food: very tasty salad bar, A pretty large baked potato with plenty of butter and sour cream. But the steak, was just okay, both of us asked for medium, mine was just right, my wife's was a bit overdone. But i was disappointed in how thin the steak was, and how much fat was on it.
