I love pastries, especially paired with coffee or coco. I went here a long time ago with my aunt, where she bought me truffles. I love the mocha (or any coffee) they serve; it's all done with style. The designs are beautiful. I like their pastries as well. They are delicious, creamy but not too sweet nor too overpowering. I had the pleasure to enjoy time as usually they are very busy and the tables are always full. I feel like if you go beyond 4pm on a weekday, you will not have a spot. Thierry is a WONDERFUL little chocolaterie patisserie cafe located at 1059 Alberni street in Vancouver. Chef Thierry Busset is a legend. This gentleman creates some of the most FANTASTIC, TASTY little works of art in all of Vancouver. The desserts and pastries they sell here are truly on ANOTHER LEVEL. In my opinion this is the best dessert cafe in Western Canada. Chef Gordon Ramsay has worked with Thierry in the past and called him "one of the finest pastry chefs in the world" thats some pretty high praise from a world renowned chef. On this visit I tried the Chocolate Trio Cake. Holy moly was this cake delicious. White, milk and dark chocolatey goodness, please try it, and thank me later. I also got a piece of Chocolate Marquise. This was the highlight of the night for me. Hazelnut dacquoise, salted caramel with chocolate mousse. So dang good! You really can't go wrong at Thierry's. I can pretty much guarantee that any thing you purchase at Thierry's will be of the highest quality. I also ordered some sort of tea, I can't remember what it was called but it was sweet like honey and also had hints of blueberry, it was the best tea I've ever had. If you're ever in the area YOU HAVE TO stop by Thierry's. The service is great, the interior is clean and the patio is perfect for a summer nightcap! The only reason Thierry's gets three stars over the two I'm inclined to give is, because their croissants are truly the BEST in the City! Oh SOoo.. Flakey!!! And did I mention their Passion Fruit Jelly?! OMGawd.... It's a must to pick up on my way home from the Airport, each and every time I pop back into town. The (first world) Challenge is... you have to go early so they don't sell out of their morning pastries. That said, early is when the coffee crowd takes over the counter - literally... The Barista is certainly keeping up (well done btw) but no one is managing the room. In other words - traffic flow which is unclear and consequently congested. That comment could describe any morning of the week there, but today add to the back-up and confusion, as I direct newbies to the ordering side of the counter, while I wait for my croissant to be warmed, I am pleasantly surprised by the fact my coffee is ready! Yay for me... but alas there was no room for my traditional honey shot, let alone cream, it was filled to the brim. No biggy, it just took an unnecessary step to correct. Not the issue. My issue is that as I stood patiently with my coffee, I was surprised to witness a gal behind the counter toss a croissant out of the oven onto the counter, with a pair of to tongs. I wait a few seconds, catch the gal in charge of the tongs eye, and ask, "Is that mine?" to which I was told, "Yes...", but that it was burnt so they'd have to toast another. Sigh... But hey, it happens... Especially in my kitchen, so I ask if it can be brought to my table so I can sit down with my coffee. This is my issue... It was at this very moment I received a look as if my request was from some Entitled Diva! To her credit, the server's voice, tone and language did not match the look of exhausted tolerance on her face. "Certainly", I was told, but really... I should not have had to ask. Will this prevent me from returning, heck no... the menu, the decor, the music all make this one of my favourite cafe's in my Alberni St. 'hood. Plus, I've been to Paris enough to know customer service is the last priority. I'd just like to remind Thierry & Co. this is indeed Canada. P.S. Your customers shouldn't have to direct traffic. Stopped by here for an afternoon treat. The passion fruit cake was my favorite out of all the things I tried. The cake is tart but is had a nice mousse texture that was light and just melted in our mouth. I also got 4oz of the drinking chocolate. It is a little more on the sweet side and I think 4oz is enough for a taste. The chocolate was rich and velvety. Tried a croissant but was not impressed. Still good though, it was buttery, however, the texture was a little off. A little on the dry side. I always stop by here to bring back a few goodies on my way back to Seattle. We bought the hazelnut tart (~9 CAD), twice baked almond croissant and hazelnut pastry. The focus at this cake shop is obvious the cakes, not the service aspect of the customer experience. Every single cake purchase we've made this year has been met with an experience with staff either at time of order or collection that has been the absolute opposite of the cake delivered: poor. Loved Thierry's so much that I came twice in one day - once in the morning and again in the evening because I just couldn't resist. Every pastry in the case looked so delicious and I was tempted to try a bit of everything. I had the liquid chocolate (in hazelnut), macarons, a ham and cheese croissant (that was really stuffed with ham!), and some of their chocolates. Everything was so, so good and you can really taste the quality in their food. The liquid chocolate was divine and I wish I had enough space to try all the flavors they had. I will say it is pricey though - pretty standard pricing for a fancy chocolate shop - but it is expensive (especially the chocolate pieces.) read more

After we had dinner at Granville Island Markets we headed our way back and found this delicious dessert location. She had never had a macaroon so that was our mission to try some. The cake we got was so rich and so smooth tasting! The macaroons here are some of the best I've ever had! I've had some before with crispy, crunchy outer shells but these ones are perfectly smooth and soft as you bite in and the raspberry one has a jam filled center to bite into instead of just the filling. Thierry Chocolaterie Patisserie Cafe is a bit of a dessert mecca, but once my girlfriend and I sorted through the facade we marked our dessert outing as just okay on account of standard and in some ways overpriced cookies, pastries, and hot chocolate. Star 1: How were the service and atmosphere? Thierry has a classy air to it that's reminiscent of a laduree or pierre herme; but in practice the place is a bit chaotic. There's no real line so when things get crowded everyone is clamoring over themselves and others, and the open seating becomes a dog eat dog world in the evening. The atmosphere isn't worth punishing, but it wasn't quite the quaint laid back dessert I was looking for. Star. Star 2: How were the portions relative to the cost? Pastries range between $2.50 and maybe $7.00, and macarons are $3.50 each. That's not crazy, but there are more affordable (and honestly better) options in town. The drinking chocolate was absurdly priced for a small 4 oz. portion, and while it was rich it didn't change my life. Star, but this one is close. Stars 3 and 4: How was the food? Everything from the pumpkin macarons to the drinking chocolate was just okay. We had maybe four different pastries ranging from shortbread to bread bends, but an hour after the dessert neither of us could point at any part of the meal that really blew us away. No Stars. They also have some to-go, pre- wrapped items if you're looking to get gifts and a list of drinks near the cash. I ended up choosing the Chocolate Marquise ($8): hazelnut dacquoise, salted caramel, crisp praline and chocolate mousse. Passed by the storefront and there was a line up the first day so thought I would look it up and go the next day to grab pastries for breakfast. Went when they opened at 8am on a Saturday. There were only 3 items available: croissant, pain au chocolate and their almond croissant. It was Easter weekend so I grabbed a couple of their gorgeous chocolate eggs and a marble loaf and some pistachio financiers. I was disappointed to only get croissants. A bit weird that the bakery opens with only 3 items available from their menu. The croissants were warm and tasty, but overly greasy. Maybe they needed to cool off a bit. I would rate them a "C". The chocolate eggs were "A+" good quality chocolate, almost too pretty to eat. The pistachio financiers were "B+" - a tad dry. The marble loaf which was very overpriced (should be half the price), I had high hopes for due to the price ($22~), but it was dry = C. Coffees (americano and latte) were good. All that and two coffee drinks brought my bill to over $100 CAD. I would give them a second try for maybe some other goodies, but honestly, based on what I got, seemed overpriced and overhyped, except for the chocolates which were exceptional. This is one of the cafes I have visited numerous times over the years. The pastries and dessert selection is usually good. There is a heated patio which is very welcoming during the rainy weather. Sometimes, it seems like there is never enough seating for the number of customers waiting for a table. We lucked out that we did not have to wait too long for a table to seat five of us during this past weekend. I ordered a peach danish and a hot chocolate. Peach danish was fresh. Then, a newspaper flies to life at a nearby table just as I turn toward the register. I'm surprised and smitten that my to-go order is already prepared, and so beautifully packaged. Not to mention, there is a genuine smile upon the cashier's face. She thanks me for coming in and asks if I'd like a receipt. Upon exiting, the patio chirps with not only the song of birds, but also, the buzz of a happy espresso and coffee quartet. Those four ladies look ready for whatever this day may bring and my guess is that it's a delightful shopping outing at the nearby Nordstrom. Or maybe Tiffany's too. Why not? The day is ours. I hear that this sweet little mecca is open until midnight. I wish I could visit twice in one day. Someday, I'm certain that I will. Until then, like a book of poetic and wonderful words, I am packing pastry. * Hooray - its back! * Ok, I admit, I always got a laugh at the name Cin Cin every time I saw the quiet chuckle all of the Japanese people walking by had when they tried to pronounce it and realized that it sounded just like Chin Chin (look it up in your Japanese slang dictionary). He had a good pedigree, having been the pastry chef at two three Michelin starred restaurants in London, but didn't have the restaurant put off any of that star chef mentality or attitude. He just quietly delivered consistently excellent desserts which made it a lovely spot to stop in for dessert after dinner elsewhere. When he left, I stopped going in as the dessert program suffered. One of my old favourites from back in the good old days at Cin Cin was his chocolate tart. Well, Thierry Busset is back. And so is his delicious chocolate tart - hooray! His new spot, named simply Thierry, does put off a bit more marketing hype than before including the obligatory quote from Gordon Ramsay saying he is, "one of the finest pastry chefs in the world." I call BS on the marketing, but damn his chocolate tart is good. The new space is a casual one focused on pastry, chocolate, and coffee. You order at the counter and if it is something more complex they give you a number and bring it to your table. The chocolate tart caught my eye, as it was my old favourite, and I just had to get a slice. This is a decadent slice of chocolate goodness. Don't let the size fool you, with the richness it is more than adequate as a portion. Holy macarooons! I felt like a kid in a candy store at Thierry's Patisserie because I love these high end pastries. Vancouver is long overdue for more dessert destinations like Thierry's. Thierry Busset has been one of Vancouver's better known pastry chefs and now he has the chance to shine on his own! The ambiance was very classy and sophisticated as it's located in the heart of downtown beside the likes of Hermes and Tiffany's. The designer he used was the same for Thomas Haas, his rival pastry chef. It's hard to choose on the initial visit as the visual display is very stunning with an array of French pastries, croissants, macarons, and chocolates. This time around, we shared a blueberry tart. Delicious, the berries were very fresh and plump. The crust was absolutely perfect, buttery and crisp. The cream was light, smooth, and very creamy with the perfect texture. The macarons are priced at $1.75 each but we went for the 7 pack for $11.95. It's quite pricey but it's a little bigger than the average macaron. Sure, they were really good but the presentation needed a little work as it was a little rough around the edges. But, I can't complain as we pretty much ate all 7 macarons before we got home. I came here after a failed attempt of eating Yelp approved donuts in the area. When I arrived on a Friday evening Thierry was packed-both inside and outside on their patio. We were looking for a quick dessert and coffee to cheer us up after a crappy dinner. Their selection was beautiful. The display case was full of dessert cakes, macarons, and chocolates, even at 8pm. Service was friendly and efficient despite the busy environment. The dessert are on the pricier side for what they are, but given the intricate detailing of the pastries it makes sense. I've loved Thierry's work for years, but lately, it seems that the service and food quality has gone down. It's almost like they are content riding the reputation of the "Thierry" name, but no longer strive to meet the high standards behind it. My last 3 visits can be summed up as follows: 1) A more senior employee telling a junior employee to "don't worry about it" and to "just serve it like that" (during the hot chocolate festival, when a couple pieces from the overall presentation were missing). 2) A blueberry tart where there was so much salt added to the crust, it tasted like you were eating a spoonful of salt. 3) Most recently, an employee very visibly rushing my order and moving on to the next guest before I was done ordering (there wasn't anyone else after that guest). Then, the blackberry and banana mousse cake had frozen blackberries inside, when the website description indicates "fresh blackberries". Had a sweet tooth so stumbled across this place while walking around downtown. Decided to try the lemon tart, as well as a lychee & jasmine macaron. Lemon tart was phenomenal... just the right amount of tartness paired with the buttery crust. On top of the lemon tart was a layer of crunchy caramelized sugar. Now to the macarons, I would say the filling was a little different than a lot of other macarons I have tried. They definitely have a "thick" layer of filling, which was not bad. Flavor wise, was able to taste the jasmine & lychee in both. If I lived in Vancouver would definitely be back to try the other array of pastries. read more

The liquid chocolate is their chocolate, melted down, with a bit of cream to make it drinkable. So rich--I should have gotten he smaller size (even though we shared).
