The Tex-Mex Cookbook. Two things I found interesting were that instead of the standard red and green salsa served this restaurant serve serves a kind of spicy coleslaw along with the red salsa. Additionally, I learned that what we think of as Piccadilly, ground beef with nuts, raisins, peppers; here, it is just shredded beef what I know of as carne deshebrada. But because of my love of the cuisine of Mexico, I always like to check out how it varies in the states of Texas, New Mexico, Colorado, and now Wyoming. And then something interesting happened.
