We read other reviews and the menu had a lot of great food choices but when we saw the tasting menu (either 6 or 9 courses), we had to see what Chef Ornelas would put together and we are glad that we did! **My disclaimer is that we do not speak Spanish very well and we weren't planning on this experience so keeping up with the all of the food items was difficult.** House drink - La Tuba which is coconut cream and apple vinegar with apples and walnuts...very refreshing House Appetizer - mini pork belly taco which was so tender and full of flavor. It really set the tone for what was to come.... The six courses then came out and consisted of an octopus ceviche-like dish, roasted beet appetizer, octopus tamale entree, oil fish entree, steak entree and a cheese cake desert. House desert - a pineapple and mango (I think) ice cream Everything was great but the octopus dishes were both amazing! I had NO IDEA how good octopis could be when done right. I would recommend that you try the octopus tamale...you will not regret it. The cheese cake was not your normal cheese cake but an amazing take on a classic desert. You have to give this place a try...it was an incredible experience bursting with flavors and combinations that we might not have tried if we were picking dishes from the menu. The 9 course meal here was absolutely unforgettable, in every single way. The chef and sommelier are artists, they created the most spectacular dishes, paired perfectly with the wine pairings. I was especially impressed that the pairings were all white, but suited all the dishes. Our server, David, and his beautiful assistant (I'm sorry I didn't get her name, but she was Amazing), and the sommelier, gave us the most seamless service, it was like a choreographed dance, not one step was out of place. Wow. The 9 course (3 hour) tasting menu was a memorable experience. Who knew that mole and lemon went so well with piglet terrine? Chef Ornelas did. The food was outstanding and the wine (and beer) pairing took it to the next level. Service was friendly and engaging. This was a beautiful venue, and I'm so glad I researched this place! We visited this restaurant on our second day in PV. If you're looking for high end, but absolutely delicious and creative food- please do support this restaurant. Our waiter, Daniel Garcia, was such a treat to have. For the ladies, he actually pulled out a full purse stand! He was attentive to detail, offered good choices for our dietary restrictions (celiac and anaphylaxis to shell fish). There were two complimentary parts from the chef: a cleansing non alcoholic cocktail from the root of the coconut tree, and an amuse bouche (almost like a Spanish version of a mini samosa!). The decor is eclectic, trendy but refined. The music was a great mix of jazz, and good relaxing music at a decibel which was enjoyable enough not to talk over people. If I ever come back to PV, I will be coming here. read more

Located on the river, it offer indoor and outdoor seating. A beautiful setting. The chef has created a very unique menu. Our group ordered several different entrees and shared tastes. Really hip surroundings, cool cocktails, interesting Mexican wine list (who knew nice wines were produced in this country?), and fabulous food! I had the best short ribs of my life, along with puréed cauliflower with a taste of truffle oil, and it was stunning. App of fried calamari and puréed carrots was great too, but it seems like menu changes often, so these might be gone by the time you get here. Just trust the kitchen for a wonderful meal, whatever you order, and, of course, the prices here are about one quarter of NYC, where this place would be sold out daily! Yowza! read more

It was so good I'd consider making the 30 minute cab ride from our spot back to Tintoque for just this dish! The Wagyu was the other standout of the night w the steak melting in your mouth and the subtle nuance of truffle left lingering on your palate... Carnal pleasure at its finest, do not miss this dish! The surprise hitter of the bunch was the Sour Cheese Cake which had my Man and I not-so-politely sparring w our tiny little spoons to scoop up the last drop! Great Food, Great ambiance and great experience! We have had food all over the world and have tried 1 and 2 Michelin starts. The dishes that this chef presented us were full of flavors hard to compare. All Mexican ingredients with a twist of knowledge from experiences the chef has had throughout the world. We asked if we can talk to the chef and he came to our table. Joel was pleasant to talk to, friendly and very down to earth. We would go back to Puerto Vallarta just to have again this experience. BTW, the price was a fraction of what you can pay in any Michelin rated restaurants and the quality, presentation and taste was superior to any of them in many ways. It's Worth the Price This restaurant was recommended by the concierge at the resort. I was not disappointed in the least. The ambience was awesome. It reminds of a classy place set in the 1940s era. I was greeted by a friendly hostess who asked my sitting location preference. I asked her to recommend a spot. She placed me near the kitchen where I could see the operations up close. I was immediately greeted by the maitre d with a warm smile and friendly tone. My waiter came over to introduce himself. The food is excellent. I wanted Redfish which is common in this part of Mexico but they were out. I had Sol Fish as an alternative. I was not disappointed. The chef prepared it perfectly and placed over a cauliflower puree and pork belly reduction sauce. I highly recommend this place and I will be back. read more

This was the best meal we had in Puerto Vallarta (and possibly in my life so far.) Dishes are contemporary and feature ingredients local to Puerto Vallarta and the Banderas Bay. Every dish was impeccable and beautiful. Each dish had an element of surprise, flavors came with depth and dimension. We ordered two appetizers: the 30 hour baked tomato and ceviche. The 30 hour baked tomato had a gel-like texture and was served with bread. The ceviche was killer and left a lime green cilantro sauce that we felt compelled to finish by dipping our bread. We had the shrimp tamale and catch of the day with pineapple puree for our entrees.The shrimp tamale is a star dish. It's comforting--kind of like the best mac and cheese you've ever had but better because it's a seafood tamale. For desserts we had wild almond sorbet (almonds sourced from the streets of Puerto Vallarta) and cold chocolate cake. The cold chocolate cake did not come in the form of a traditional cake. We got chocolate paper, peanut butter, crunch, vanilla ice cream, all of which tastes like a cold chocolate cake once eaten together. Daniel Garcia, our server, described our dishes vividly and provided an elevated dining experience. If you are a foodie do not miss this place! Located across from Starbucks. We sat close to the open kitchen and enjoyed watching the kitchen in action. They have some interesting speciality drinks. We asked for suggestion from Miguel and he was spot on. Order the shrimp appetizer. My hubby had the baked tomato (30 hours) and goat cheese, it was wonderful. We had the catch of the day and the oil fish, both excellent. We finished up with pot de creme. If I could give higher stars I would. Met the chef afterwards. This might be one of the Top 10 restaurant experiences I have had in North America in the last several years and on par with the best restaurants in all of Mexico and Western U.S.A. The preparations are as flavorful and enjoyable to view as they are to eat. I had heard it was pricy, and compared to bargain locations it is, but it is very much a high value restaurant. The 9 course tasting menu is the way to go. Ask them to pair up cocktails and wines and relax and enjoy as they not only have an excellent kitchen the bar and bar staff are very qualified. We went here for dinner after reading all of the reviews here on yelp. I should start by saying this dinner started off great and the food was excellent, however our experience turned slightly sour as the night wore on. We are tourist and dont really speak Spanish, although van can understand bits and pieces. Right away we noticed that everyone around us spoke Spanish with the servers, we were the only ones struggling with our Spanglish. Still though, the servers made it fun and we were able to communicate just fine. However, as the night wore on, it seems like we were being overlooked constantly whereas other tables were constantly being checked on. Early in the night I thought this was happening, however I didnt say anything until my wife said she had the same exact thought. From there, we noticed other things as well. When ordering dinner, we asked for the tasting menu, and it seemed the answer we got was that "it was too busy for the tasting menu." I guess my issue here was with the way the response was given rather than the response itself, as our server basically pointed to the menu we had and said "order from there, its good." When servers came to clear plates away after our dinner, I had kindly asked to have my leftovers packed (the pork belly tacos were super tasty), and they threw it away instead of packing to go, and then wasn't acknowledged. Every table, after main dinner was cleared away, servers came to ask if there was interest in dessert. After our dinner was cleared the server came and dropped the check, as if they wanted us to leave. And yes we were interested in dessert, but were turned off by this point. The food and ambience was great, however we did not have the same experience with service as other reviews for this restaurant. Hoping this experience was just a one off, but bummed the night turned out the way it did. Will think twice before going back based on our experience, as there are other restaurants in the PV area that are more moderately priced with similar level of dining experience. Otherwise, if you find yourself at Tintoque and have a spanish speaker in your group, I would have that individual butter up the servers and do the ordering for the table, and I'm sure the experience level will go up a notch from our experience. read more

This is a gem in Puerto Vallarta! This is my first time to this area and like most tourists, we eat out A LOT. I challenge anyone to find a better restaurant in town. Caveat: it is finer dining. I.E. no burgers and fries on the menu. Definitely for someone/group to celebrate of enjoy a great dining experience. I recommend the tasting menu. If you like flavors and want to taste the best local ingredients can give, this is your best option. We did the 9 course meal + 1 shared plate. We had the new menu. Some of the dishes were very good. Portions were on the smaller side, even for small plates. A couple of the dishes...I can't even describe or determine whether I actually liked them...they were way too unique and I only had a couple of bites. This is expensive by Mexican standards. What a place. We had our very best meal in pv here. Everything was well executed, from the "compliments of the chef" additions through to the deserts. My wife had a drink special with Myrtle in it, which kinda blew our minds. We briefly mentioned that our son was turning 15 in a few days, and they brought out a special dessert for him, gratis. Amazing service, amazing foods, and some of the most well designed sauces we've had here. They'd hold up in any major city, so I'm amazed to find them here. read more
