You can order off their limited menu or just talk to him about your feelings, likes, and dislikes. From there, you get a tailored cheese sandwich exceeding any expectations you might have built up. You don't pay until you've at least tasted it - even if you opt'd for take out. "If you don't like it, I'll eat it" the owner will tell you. You might opt for fruit or veggies on top. I think they have their name on the window. You walk in. Two gentlemen dressed to the 9's welcome you in every possible language (that's likely an exaggeration) until they find the dialect you speak. They welcome you and make you feel comfortable. You wait until they take care of the customers that came before you. It can get a little cramped inside. You grab a drink, you show it to the to gents working, they respond, "Yes yes yes anything for you!". While you wait, you browse the guestbook. People from all over the world come here for the amazing cheese and sandwiches. When it's your turn to make your sandwich they listen to what you like, dislike and make a suggestion. These sandwiches are made like a fine piece of art. They measure the cheese to the nearest millimeter (not true, they don't use the metric system). The salami/pepperoni are perfectly tucked under their tomato blanket. The tomatoes are so fresh and actually add a nice flavor. One of the sandwiches I tried had pear in it which blended so nicely. All the ingredients sit inside the freshest baget for you to eat. It makes a perfect crunch for the sandwich. Get the Fiona and a freshly squeezed orange juice. My wife and I went back two days later to enjoy another sandwich on the train ride to Brugge. The two gentlemen working were very interested in our trip and even helped us with navigating the train. Shoutout to this gem of a place and the guy who works there! I didn't get his name but his personality shines in the quality and dedication to his food. He speaks English and Spanish. I wanted to practice my Spanish and had no problem explaining to me his recommendations. I wanted something with chorizo and asked I liked queso fuerte o suave and I chose the strong cheese which then he recommended two options. One with a marscapone and bleu cheese (I think) or another with Italian herbs and something else I can't remember but I got the one with Italian herbs. He then cleaned off a table told me to sit and relax while I waited. Damn did he not skimp on the cheese. He had mini premade cheese wheels(? I don't know the word for them) and I was expecting just a thin layer, maybe half of the cheese). But he put that whole thing on there!! And then more of the other cheese! I even saw him layering the tomato and chorizo in the manner than he wanted so that each bite was perfect. I wanted it for take away (para llevar) so half the sandwich was in a bag wrapped up and the other half was on the plate and he encouraged I try and taste it before I left. If I didn't like he, he would give me something else. I wish I was able to sit there and finish it because it was so damn good. But I had to run. By the time I was able to eat it, the cheese kind of melted and was not like my first bite but still amazing. How can I leave 100 stars for Tonton? We got super lucky. We made it a point to make this our first stop of the day. We arrived around 10am and did not encounter a line! Woot woot. Garby invited us in and had us sit down at a table. We were welcomed into his "home" as he explained his shop and what was to to come next. He handed us menus but asked us for our likes/dislikes. He recommended 3 different sandwiches based on our responses. In the meantime, we each had a cup of his homemade soup which was absolutely delicious!!!!!!!!! It was a cold day and a cup of hot soup really started off our morning right. Once we decided on our sandwiches (we ended up ordering 4...2 to eat and 2 to go), we watched Garby do his magic. He bakes his own bread, makes his own chorizo, and makes his own olive tapenade. It's a one man show and the care shows in his sandwiches. He is t skimpy with the meat and cheese. He used a block for each sandwich which I have no problem with whatsoever! We watched as he met with other guests as they walked in. He never cut corners. He gave every single person the best customer service I've ever seen. He has you take a bite of your sandwich before you leave to ensure you like it. If not, he'll make you a different one! I can't imagine disliking any sandwich there. All 4 were amazing and I am so sad that this spot is all the way in Brussels. We got to Tonton Garby at 2pm on a Friday, and were surprised that the line was relatively short - about six people in front of us. Little did we know we'd be standing in line for a little over an hour. Tonton spoke Spanish to the people in front of us, and French to the people in front of them, and perfect English to us. He asked what our preferences of cheese were, and if we eat meat or not. He showed us the menu and recommended the sandwiches with goat cheese and chorizo. Despite how busy his shop gets with both locals and tourists, he treats each and every customer like they're the only one that matters, and he emphasized over and over again that his goal was to make you "happy or money back!" It was worth stopping in just to meet this legendary sandwich maker--the minute we arrived, we sat down at one of the three tables in the tiny shop, and Garby's son brought us complementary cups of split pea soup (made only with fresh ingredients!) as we waited. Then Tonton Garby asked a few questions about our preferences and provided a few top recommendations from his menu, along with an explanation of the ingredients. After we ordered, the man got to work, creating each sandwich with care and attention to detail. My pick was the Baguette Fiona, a crusty baguette with homemade black olive tapenade; chevre italie mio amore (a Belgian goat cheese so named because it was crusted with herbs and red chili); slices of chili gouda; chorizo; and tomatoes. Each ingredient was sliced fresh and layered with precision onto the bread, and the resulting combination was delicious--the creamy, spicy flavor of the cheeses, the saltiness of the olive tapenade, the smokiness of the chorizo, and the brightness of the tomato all came together perfectly! Another popular item on the menu were the omelette baguettes, and we got one with brie, honey, and freshly cracked black pepper. And don't let the line (there is almost always a line) discourage you. Trust me: you will get the same personalized experience as the people ahead of you, and the same amazing sandwiches. When you get to the counter, the owner will greet you like an old friend. Every sandwich is fully customized, so the owner will ask you a number of questions about what you like and don't like to eat. He will then discuss with you the variety of cheeses that he thinks you will enjoy and let your sample them (it's really a cheese shop and so there are a *lot* of cheese choices). Next he will discuss the toppings, including meats, veggies and spreads. Note, too, the trays of bread on the wall behind him. He bakes then all himself. Once you've picked out your ingredients he will then assemble it for you. If you are fortunate enough to see an open seat at one of the tables inside, grab it and he will bring your sandwich to you (the tables are communal, so make some new friends while you wait). And note that he will tell you that if you don't like the sandwich, you won't pay for it (I'm guessing that no one had ever had to take him up on this offer). The sandwiches are pure bliss. This kind of attention to detail does mean that he can spend up to 10 minutes on one customer, so be prepared to wait in line. Garby uses fresh baguettes, high quality cheeses, and an endless amount of energy and care to keep customers coming back. I tried a sandwich with goat cheese studded with cranberries and thinly sliced chorizo, which perfectly satisfied my sweet and savory cravings. The sandwich doctor made sure to tell me, "No obligation. Tell me if you don't like it, and I can make you a different one." I compare this type of customer service to honest politicians - incredibly hard to find, but something to treasure immensely when you do. I would vote for Mr. Garby as my president any day.
