I'm so happy we found this butcher so close to home! They seem to be the only one open nearby on Sundays, which is how we found them. They're closed Mondays and Tuesdays. We recently purchased a smoker and were so excited to smoke some meat on the upcoming weekend. We decided on buying meat from a butcher to smoke. Looked up nearby places on the internet, and the only one open near us was Top Choice Meats. They received great reviews, so we decided to give them a shot. They're located in a strip mall with plenty of parking available. We were greeted as we walked in (always a good sign). The inside was very clean and organized. The young lady who helped us was super helpful and knowledgeable with all questions asked. We decided on a brisket, but the one in the case was around 8 lbs, which was way too big for just the two of us. She offered to cut it in half. Perfect! We got home, made a rub, and smoked it for about 4 hrs on 250°. Once the internal temperature reached 195°, we removed it to let it rest for about an hour. We sliced it and wow, oh wow, it was outstanding! The flavor of the meat was amazing. We were very happy with our first smoke. Since our first visit was great, we came back this weekend for steak and brats! We would definitely recommend this butcher. We look forward to trying more cuts of meat in the future. read more

A great find for quality meat! With all the garbage being passed off as "healthy" I wanted somewhere to get meat that doesn't have meat glue or harmful hormones. Things are bad enough already without adding to the chemical cesspool we call food. This place had real fresh cuts and they looked amazing. Their roasts and steaks were any size you wanted, and fresh sausage made onsite. I had one of their teriyaki beef sticks and it blew me away. No grease fillers or odd looking parts, just excellent beef and spices. I highly recommend you try them. This is now my go-to spot for all poultry, pork, and beef going forward. It's an interesting meat market which seems to specialize in sirloin cap steaks, game and sausages. I got a 1.75 pound seasoned cap steak and grilled it the next day. It was my first encounter with a sirloin cap steak and it is an interesting cut of meat. Beautiful fat marbling with a diagonal grain and a thick and thin end. I cooked it on a Weber Q on direct high heat. It took 20 minutes to get it to medium rare which was a little surprising. I rarely grill beef that long. The taste and texture were very good. Much better than a flank steak or tri tip. However at $12.49/pound, it is in the same price range as a good ribeye steak, arguably the best grilled steak. I think the cap steak would be great in a steak salad or a killer carne asada. I would get another cap steak from this market for a special occasion. It's a little too pricey and too big to buy regularly but it definitely has its place in my culinary arsenal. Check it out. read more

My husband and I came in this afternoon, and checked out the different meat we talked with the butcher, and he showed us different cuts of meat. I was looking for something for a Valentines dinner I will be cooking so I picked up an Rlk summer sausage, a package of sliced buffalo summer sausage, a small pack of uncured beef bacon, two seasoned beef cap steaks, one unseasoned beef cap steak, and four t-bone steaks, plus my husband got a bunch of different types of pepperoni sticks. It was an expensive day, but the prices were fair the butcher was helpful, and the meat choices are excellent. I even told the butcher about "Yelp" and showed him that they were on yelp and their reviews. They didn't have a picture so I added one for them. Top Choice meat is hands down my favorite meat shop in the Vancouver Area. I recently moved here from Northern California. I was worried that I wouldn't find quality meat up here. My husband and son came home with some hamburger patties and sausage patties. They quality was excellent. I came during regular hours and they were closed so I assumed they took an extra day for the holiday so no biggie. Called today to make sure they were open before I drove 40 minutes to get here at which he said yes we are open for another hour. I rushed to get down here only to find they are out of majority of the items they sell because they are doing a deep clean for the new year. Would have been wonderful to have been told that before I wasn't an hour and a half of driving. I came in for one item and would have settled for three other options but no. Nothing left. They have the meat in the hack but won't cut it since they are closing for a deep clean. If you want a dependable meat place I'd recommend somewhere else. We will never be back. One night a few weeks ago my wife and I got our spirited and never tired 3 year old down for the night and I set about making some rib eye steaks that I bought from a supermarket. I pan seared* them and served them with wonderful vegetables and a pasta side dish. We bit into our steaks and our mouths were filled with..... nothing. A well cooked piece of meat should be a symphony for your mouth, a spiritual event... this was like reruns of I Love Lucy. A few nights later, from another supermarket another choice cut of meat and there was Lucy and Ethyl again. Disappointing. I went over in my mind how I cooked them, seasoned them and everything seemed fine. I checked my cast iron for funkiness, but there was no funk. It had to be the meat. Later that night we were sitting on the couch relaxing after getting the little one to bed for the third or fourth time and were talking about our run of bad meat luck. As I reminisced about the good old days when I would accompany my Mom to the butcher; the smells and the big glass cases and the helpful butcher. Then it hit me, I have seen butchers around, surely some have survived this age of MegaloMart madness and Costco sized servings of half a cow wrapped in Styrofoam and bad saran wrap. I looked, and didn't have to look too far from home and found Top Choice Meat Market. I took my son with me and set about reacquainting myself with meat. What drew me here originally was signs stating that they have Buffalo. I love Buffalo. We walked in and honestly I closed my eyes, took a small sniff and I would have sworn I was six years old and Mom was next to me. I took my son's hand and walked forth unto a veritable field of meat and was greeted by a nice young fellow. I explained that I was shunning supermarket meat and needed a lesson in meat. He took the time and really explained about what cuts he offered that supermarkets do not, he explained his specials and what the store excelled at. I was dizzy with information, or maybe it was my 3 yr old spinning me in circles (I forgot to let go of his hand) and started purchasing natural pork chops, sirloins, Kansas City steaks (small, tall and wonderful), hamburger and German sausages. We ate the bounty of meaty goodness over the next few nights and were just amazed at the difference. Yes, it will cost a little more on some things and I have paid gladly for with the right method of cooking and knowing when to season and when a good sprinkle of kosher salt will do we have been happily enjoying our little secret meat market. This Thanksgiving... all natural never frozen turkey! They know what they are talking about, on Wednesday and Sunday all pork is $1.00 off per pound, and more importantly to my son, they give kids free lollipops. Will I ever shop for meat at the Mega Marts? Probably my chicken because I either drench it in a sauce or season the tar out of it anyway, but I doubt highly that any red meat or pork will grace my shopping cart again soon. *Pan Searing. Thanks to Alton Brown he showed me how to treat a good piece of meat. If you have a choice piece of meat, well marbled, about an inch to inch and a half thick try this when you cannot grill outdoors. Put a good cast iron skillet in a cold oven and preheat to 500 degrees (yes, 500!) and leave it in there a while. Take your meat (rib eye, sirloin and Kansas City steaks work great here) and rub on some canola oil and liberally sprinkle on kosher salt (not table salt, coarse, flaky salt). When the oven is good and hot turn a burner on full hot, carefully with mitts take the cast iron out of the oven (on a Texas range this would be called a branding iron) put on hot burner and then drop in the meat for 30 seconds. Leave it alone, don't even touch it!! Turn over (it will stick a little, but that's ok) for another 30 seconds (this puts a nice crust on it) and then put the cast iron back in the oven for two minutes. Flip, and then another two minutes. Remove from oven, take out of pan and put on a plate and cover loosely with some foil and wait about five minutes (a whole five minutes!). This allows the meat to expel and reabsorb some juices and other tasty science like things. Serve and enjoy. read more

4.5 stars. I love this totally chill, family owned old-fashioned style meat market. It carries extremely healthy, top-quality meats. And per their website, they "hand carve all of our meat (Beef, Pork, Chicken, and Buffalo) to make sure every steak is trimmed just right." Even though they have their own in-house smoker, I didn't get a chance to try any of these meats - instead I purchased some grass-fed buffalo and brought some frozen bones home for my pup. I am still learning how to bring out the flavors in certain dishes, so my buffalo burgers did not turn out that well (a note to others to be cautious when experimenting with different cuts/types/qualities of meats). This meat market is my happy place. (You might fly right past it, as it's tucked away on a lonesome stretch of 500 in an unassuming strip mall next to a somewhat sketchy bar. Do not make this mistake! Stop and check it out!) From the moment I approach the business, I'm attracted to the charmingly retro signage out front (hand-lettered in eye-catching red and white by a local, I was told). Inside, you'll find a great deal more of these cool old school signs, and the unmistakable tang of skilled butchery in the air. Let's see. I think I've been five to ten times? The famed cap steak is quite lovely -- mind that you don't overcook it, for best flavor. I also like to grab some of the very well-priced packs of marinated chicken legs and hindquarters and throw those on the grill while I'm at it. What else. Geez, everything I've tried has blown away the meat I can get at my lame corporate grocery store over in the poorly-served downtown area. Tonight we gave their carne asada a shot. It comes pre-seasoned under a generous cap of sliced raw onion and frilly cilantro and is super thinly sliced, so mind, it grills up fast. Whoa! Blows away the local carniceria I tried and made up into a fine set of tacos for the family. Even the stuffed potatoes I've tried have been very tasty. Grab a few while you are at it; quick and easy, pre-cooked so you just nuke for two minutes and you are golden. By the time you gather all the ingredients to make them, you'll have paid as much. I don't eat meat a lot. I do eat meat regularly. I had never purchased meat from a butcher before. There is a world of difference in quality of flavor and texture from megamarts to here with one exception. The organic beef at TJ and the Vancouver E. Costco are free range, grass feed and, of course, organic. Those meats taste just as good as the meat market. I love that I can purchase buffalo here. If you want more wild meat...such as ostrich or alligator, you will have to go to Chuck's on Mill Plain. The prices are reasonable; great if you catch a sale. The guys behind the counter are patient and informative. I like that this is a local business. Granted, there is also local meat available at the farmers market...they are not there year round and they are not always convenient. If I need meat outside of hamburger, I will go to this butcher. read more

Fiancé and I were in the mood for beef, as we hadn't had any in a long time. Instead of opting for whatever Winco had, he decided to satisfy his craving with some really good, quality meat instead. Do we decided to go here, and we were not disappointed. The staff are very friendly, the man helping us greeted us and even let us know his favorites to give us an idea of what to get. The store smells like spices and is very clean. Ultimately we got the boneless rib cuts, and then we got the Texas marinated steaks. We were not disappointed. I used the boneless rib cuts to make a Vietnamese dish called bo luc lac, the meat was tender and soaked the flavor up beautifully. The Texas marinated steaks go well without any seasoning, but you can definitely add some if you'd like. Very juicy, very tender. We are looking forward to coming back and buying more. read more

Have heard about Top Choice Meat Market's Cap cut so had to try it. I dont eat a lot of red meat (Beef), so when I do, I want it to be special. I stopped in for the first time...saw the Cap...Sticker price Shock ! ! But I bought one anyway and I have to say it was Worth Every Penny Per Pound !! It is now on the top of my list for my Treat Meal ! We've been here three times now and so far so good. It's very welcoming and the guys know their stuff and seem to have very good customer service. Till now we've only tried the brats and beer dogs which are excellent. Next week I'm buying a ribeye roast and probably a couple tri-tip roasts for a friends wedding (assuming they have both of those - as I haven't looked yet).
