There were no tables available when we arrived, but we figured the wait might be worth it. **It absolutely was.** While we waited, they offered us some wine and a little bite--almost like a small pastry filled with cheese and tomato--which was such a thoughtful touch and made the wait feel effortless. Once seated, we ordered more wine along with two Roman classics: **Cacio e Pepe and Carbonara.** The **Cacio e Pepe** was exactly what we hoped for: beautifully creamy, cheesy, and well balanced without feeling overly heavy or greasy. The pepper came through nicely, complementing the richness of the cheese rather than overpowering it. The **Carbonara** was equally impressive. The pasta had that wonderful fresh, silky texture, the sauce was rich and intensely cheesy, and the pancetta was perfectly crispy and salty. This is probably the best meal you can find in Piazza Navona. It's certainly the best rated restaurant in the square (I checked). The ambiance can't be beat. Sitting outside in one of the most famous squares in Rome is a dream of many. The food is actually really good. We had calamari, focaccia with ricotta, olives and tomatoes, and caprese salad. Everything was tasty! Our entire group of four veered away from Roman classics for dinner and opted for the bolognese. I'm perfectly aware that you "shouldn't order" other regional dishes but we were in the mood and quite frankly it was delicious! A couple folks in our group had limoncello spritzes and said they really loved them here (more than another restaurant we tried later in the week). I had a hugo spritz and honestly it was my least favorite. It was way too heavy on the lime and I couldn't even taste the elderflower. He gets to know every customer on a first name basis. I'd go back more to see him than to have a sandwich. Seriously, he's pretty awesome. The menu is simple and focused on sandwiches featuring their famous porchetta so we tried two recommendations from the peppy proprietor. While waiting, I got a miniature bottle of Chardonnay and my spouse sipped a Coke Zero. The Traiano Porchetta sandwich (12€ - 4 stars) is an original creation of the out-going owner with a mighty Mustard-flavored blend of Roast Pork, Sun-dried Tomatoes, and Grilled Eggplant. I like mustard and, therefore, liked this specialty much more than my wife, but we ended up ignoring portions of the so-so bun. Pane & Vino Special Porchetta (12€ - 4 stars) was a huge sandwich with the sliced Roast Pork Porchetta plus Mozzarella Cheese, Grilled Eggplant, Grilled Peppers, Mushrooms, Lettuce, and Mayo on classic Italian Pane. It needed more mayonnaise or a sprinkle of balsamic and olive oil for my tastes, but there was no denying it was a hearty hero. There are lots of pane bread and sandwich shops in Rome, but there is only one -- Pane & Vino -- run by the most welcoming of owners ever. I got the carbonara that's supposedly "fresh" but I am convinced it was not. The pasta was so hard and way too salty. After a few days in Rome, I can confirm this is probably the worst pasta I have had. There are washrooms in the back of the market. Along with table service for coffee and drinks.
