I love this place. The staff are very friendly. They passed by the Seasons today and I got the house special and the ramen stir, both of which taste great. They will be opening an actual shop at the Seasons. The house special has a variety of ingredients: shitake mushrooms, some long white mushrooms that this Asian doesn't really know. The pork broth delivers a rich flavor chilling all the way to my spine. Do you know what the best is? I waited twice in the air cold of 57 degrees of wonderful Arizona. This was a very difficult place to rate. We had three dishes: the House Ramen, the Ramen Burger, and the Noodle Stir. The ramen burger is a solid 5 star experience. Don't make any changes to it, I beg you. The ramen burger is amazing and perfect as is. Yes, it's messy, but they give you a fork to snag the last lovely bits. The House Ramen- it's good, not great. A bit too salty but maybe that's just my own palette. The egg is fantastic - get another one if you're planning to ramen. Noodle Stir - uhhh, skip it. Fat Noodle was there for the Mochitsuki festival at the downtown Pima County Community College campus. A culturally fitting food truck for the event, they made a killing from the participants. Very disappointed that they were out of the ramen burgers. It was only 11:45 when we struck out. You would think they would be more prepared...We had the ramen, of course, and the fried noodles. The noodles are really quite good. Fresh and good tasting. The broth of the ramen was pretty tasty, too. Not bad for some "gaijins" making the stuff. The fried noodles were just OK for us. The flavor of the sauce could be better. It just didn't have much impact. We are used to making our own yakisoba, but this was nothing like it. Gotta comment on the price to quantity ratio: Very over priced. The bowl of ramen was a fat $10 and the fried noodles were $9. Look at the pictures as they give you a pretty good idea about how much you get. For $8, I could get nearly twice as much ramen at Ikkyu and better tasting, too. I think their noodles are the bomb, but Ikkyu's ramen is still hard to beat. So, somewhat of a 3+, 4 star experience minus a star for the very high prices for very small portions. Still would like to try a ramen burger just once, I guess, but that is also $9, $10 bucks. Gonzalez has spent many months perfecting his recipe before launching the food truck a couple months ago, and I must say it was well worth the wait - he's done a fantastic job with his recipe! Warm pork-broth that's been slow cooked for 12 hours, with the right balance of oils, hand-made Ramen noodles from locally sourced flour, a plethora of locally sourced vegetables, a couple slices of tender pork cutlet, and topped with a hard-boiled egg. I got the House Ramen It wasn't the best ramen I've had but not the worst either, pretty impressive considering it's coming outif a Food truck operation. Noodles were tender and I hear they are homemade which is a respectable art in itself. The egg was fantastic... I'd love to know how they get the yolk to such a creamy texture not too hard boiled from the dishes around me they seem to pull it off consistently. The squid like mushroom was a fancy little garnish to the top. Satisfying and I would hit them up again if we cross paths down the road at thr right place and right time but I also probably won't become a groupie seeking them out specifically when I'm thinking about going somewhere for dinner. read more

This was pretty bad. The ramen noodles were not really ramen, more like the cheapest brand noodles you can buy at the Asian supermarket. Really no bite or chew at all. This place was high on my list to try. I really wanted to try the ramen burger. So, I sent my husband out to get us some food. We ordered two FN ramens and one ramen burger. We also ordered two appetizers. (Egg rolls, and gyoza) My daughter is visiting and I thought this would be more than enough food. I was wrong. First of all we didn't get our burger. They instead put in two tiny bao buns. The ramens were alright, but very small. The appetizers were decent and the dipping sauces were tasty. These pint sized meals cost us over fifty dollars. Holy Cow, this knocked my socks off. FN came to our plant site, hopefully they will be invited to come back. I had the Ramen burger. My cheap ass will happily hand over $8 for another burger. The noodle buns were grilled and crispy leaving a nice soft moist middle. The patty was better than expected too. Facebook says a Pork belly patty or something, this patty was all beef. The siracha mayo sauce was tasty, I just wish I had asked for a side of sauce to dip. My coworker had the House Ramen and enhoyed it as well. We tried Tucson Fat Noodle tonight. I had the house bowl, which was quite good. It had pork and chicken, and a hard-boiled egg in it, plus a nice touch of perfectly cooked veggies. My husband had the ramen burger. It looed like a root and seed burger, organic and full of veggies with a bun made out of ramen noodles. He said it didn't have a lot of flavor until added the Sricha Sauce. Service was good, they were at 1055 brewery, and they brought the food inside to us. I would go back! read more

I've been looking for this food truck for a while, since they are relatively difficult to locate or their schedule doesn't correspond well with mine. Anyhow, I was not dissapointed. We were able to catch Fat Noodle outside of Tap and Bottle for a celebratory event. Like many of the reviews here suggest, I found the amount to be relatively small, but it was enough to satiate me for the time. We were lucky enough to be the last two orders, as they had run out of joodles. Our order: the spicy ramen special. This ramen is good. I would place it above Yoshimatsu and Sushi Garden and would agree that Ikkyu takes the cake for the best ramen in town. However, Fat Noodle is less of a drive. The handmade noodles are delicious and the broth was admirable. I really enjoyed the amount of meat that they put in and found this to be extremely satisfying. I rated 4 out of 5 stars due to the difficulty in locating this plaxe and the steep pruce. I will be back. read more

Really good. Tried on a whim cause we love ramen, the truck is cute, and it was parked at our local fave Casa Video. We got two House ramen for four not-very-hungry, but very curious people with varying interest in/experience of 'real' ramen. (Not the grocery store, 5-fora-dollar kind.) Everyone loved it and we agreed it was the perfect amount of food but that if we'd been hungrier we'd have nearly finished a serving each--they are very large! Been following FN on FB since becoming a bigger ramen fan after visiting Japan this past year and looking for an opportunity to try the ramen Tucson has to offer. Went with my wife yesterday, ordered the spicy ramen and shiitake ramen with a side of gyoza. The gyoza was great, among the best in Tucson. The ramen for both of us lacked depth of flavor. Spicy was spicy, but that was it really. Shiitake was also shallow flavored. Good ramen, like pho, needs depth. The noodles, seemingly made in house, were excellent. It's a far drive for us to make coming from the southeast side, so we think Raijin is worth the drive until we see reviews of better quality out of TFN. read more

I cannot rate based on my personal experience of the food. My food never came out. We waited over an hour after ordering and it was never made. This is an obscenely long time for a food truck, but truthfully too long for any establishment. Especially for a ramen bowl. After 45 minutes or so, a couple people mentioned to the staff that we were still waiting for ramen bowls, and the acknowledged us with a "yes we know...". We were part of a veterans benefit and we were provided food tickets, good for one meal at Fat Noodle, which was parked outside Borderlands Brewery. The people who did get their food said it wasnt very good anyway, and joked that I wasnt missing out on anything. Another mentioned he has tried to order their ramen burger several other times and they never have it available. After waiting and waiting, we eventually had to leave the area. As a big supporter of our local food trucks, I cannot recommend this truck based on my experience today. read more

I went with a group and had 5 different items on the menu. The miso ramen, the spicy miso ramen, the FN ramen, FN ramen burger, and the FN spring rolls. The only one who left satisfied was the one who had the burger. He is not a fan of ramen and we found it ironic that he was the only one who enjoyed his meal since he was the only reluctant one to eat there. I forgot, we also had a child who had the Kid's bowl and her mother mentioned the chicken in her bowl was good. Ok, the broth was homemade and meaty, the noodles homemade (as opposed to most fof the noodle places in town). But 9$ for a small bowl of ramen from a food truck you have to eat standing up?
