Arriving at 11:10 AM, just after opening, we anticipated fresh, high-quality smoked meats and homemade sides. What we received was an uninspiring meal that leads me to question the legitimacy of its Top 50 status--and frankly, its place in the Top 100. This visit was a letdown, especially compared to the twelve other far superior BBQ joints we tasted this past week. The Meats: Misses and One Minor Hit The foundation of the barbecue here was weak, suggesting corner-cutting or, worse, reheating of old product. * Brisket: This was the biggest disappointment. The slice was terrible--dry, lacking juice, and with a bark that was chewy rather than crisp. It looked and tasted suspiciously like leftovers reheated from the day before, which is unacceptable minutes after opening. * Ribs: Nothing special here. They lacked the depth of smoke flavor and suffered from a distracting, undesirable "hammy" taste. There wasn't much meat on the bone, and the glaze was applied too lightly, failing to add any necessary sweetness or texture. * Jalapeño Cheese Sausage: This was the sole highlight of the meat offerings. It was a nice standard sausage with a good peppery snap to the casing and a satisfying ooze of cheddar cheese. It offered a nice, reliable counterpoint to the lackluster smoked proteins. Failed Opportunity: The Texas Twinkie The infamous Texas Twinkie completely missed the mark. While the basic concept of a bacon-wrapped, cream-cheese-stuffed jalapeño is sound, the execution here was poor. The filling was overwhelmingly cream cheese, which completely sucked the flavor out of the jalapeño and bacon. It was a great opportunity wasted by failing to include a bit of smoked brisket or chicken to give it complexity. Sides: Bland, Bland, Bland The sides tasted uninspired, suggesting they were prepared from a can or box rather than crafted from scratch--an unforgivable sin for a purported Top 50 establishment. * Creamed Corn: It was creamy but utterly bland. It needed significant elevation--perhaps charring the corn kernels or adding some diced jalapeño pieces for heat and brightness. * Mexican Rice: This was mushy and flavorless. It desperately lacked the savory depth and spice expected of Mexican rice. A small addition of pork or brisket trimmings would have provided necessary flavor and prevented it from tasting so generic. Dessert: An Unprofessional Finish The Grapefruit Pie was the final letdown. The filling tasted okay, but the crust was clearly store-bought. To be considered a Texas elite, every component should be homemade and excellent. This felt like an amateur concession. Final Verdict Overall, Teddys BBQ was profoundly uninspiring. Given that we arrived right after opening, expecting the freshest quality, and having recently toured 12 genuinely great BBQ places, this location falls far short. It simply does not belong in the Top 50, or even the Top 100. Teddys has a lot of room for improvement if it wants to justify its ranking.

I really enjoy the food here. Whoever the chef is actually seasons the food and cooks it correctly. Everything I've ever eaten here was full of flavor and cooked the right way. I am a chef myself so I know when people cut corners and I can tell when something isn't cooked correctly or when the chef doesn't know what they're doing. Well I can tell you at this restaurant the chef absolutely knows what they're doing. The food is excellent. It's one of the best places to eat in Weslaco. The burgers are amazing and so flavorful, and the potatoes with the aïoli on them are to die for. This is a solid choice for anybody who wants a meal that's worth the money. Sounds good in principle. But the proof is in the pudding as they say, or the food and how good it is. They start the meal with an assortment of fresh house-made tortilla chips and salsas that range from a "pretty warm" pico de gallo to a "blazing hot" sauce made with habaneros. They also brought us so charro beans, "on the house" which when mixed with a little lime and the aforementioned salsa were maybe the best part of the meal. I don't think I've had any charros their equal. I'd come back just for them if nothing else. I had the Chicharron Ribeye on Molchahete which is a rib eye steak, cut in bite sized cubes, seared then placed atop some lettuce and fresh house-made guacamole, served with fresh, house made corn tortillas. (You had me at house-made corn tortillas!). The steak bites were a little overcooked for my tastes and, if I'm being honest, the steak was at best, a USDA Select Grade based on a lack of tenderness. I'd hope that for the price they'd use at least USDA Choice or higher grade. Anyway it wasn't very tender but the flavor was ok. In total there was enough steak for three or four nice sized tacos with really good guacamole, some onion, cilantro and lime to squeeze on top. The wife ordered RibEye Enchiladas which were, according to her, just ok. They were smothered in a heavy sauce and even heavier layer of melted cheese, detracting from the flavor of the ribeye. Neither of us were that impressed with our entrees. The sides were better than the mains. That's never a good thing. Our friends split an order of RibEye Panchos, which in most of the rest of the world are known as nachos - tortilla chips, chunks of ribeye steak, cheese, salsa, etc. They seemed to enjoy their meal and had leftovers to carry out. Our server, a sweet young gal was exceptional at her job, very informative about the restaurant and let us know that after five years in the same location, they would soon be moving, although the new location was at present, a secret. Our drinks were never empty and she offered us more charros, chips and salsa...whatever we wanted. My entree was $19.99 and the wife's was $18.99. Adding in my iced tea plus tax brought the total to a bit over $46 which isn't horrible, especially seeing we're talking ribeye steak, but, for this steak, it's quality and quantity, perhaps a little high. They do offer a Sunday Brunch, which we may try in the future. Perhaps they had a bad batch of tough steaks, I don't know. I'll certainly give them another visit before crossing them off my list in order to be fair. Here's to looking forward to that next visit.
