Union Star can be kind of hard to find, it is a small whitewashed white building with a small sign prononcing it's name. Inside, you have a counter with various item for sale, a cooler in back of you. In front of you, there are six stainless steel trough's where cheese is made. It took just one small taste and I was hooked. The warm, pillowy, cheddar curds squeaked with delight against my teeth. They shouldn't be called curds, they should be called crack. I was so excited to hear that they are one of the few factories that still produce cheese by hand. It is a very small factory. In fact, it's pretty much one large room. The room has the check-out counter, the refrigerators with cheese for sale are at it's opposite, behind the counter are the vats/cheese making machines and that's about it. There is a door that leads to a refrigerated room with cheese and another for I believe the aging process. The workers there are so proud of what they do an are eager to share with anyone. You can taste all of their hard work right and dedication in each bite. They don't have a huge variety or crazy flavor concoctions but, what they do have is made well. I also appreciated the fact that the store only sells cheese and a few sausages. I wasn't distracted by mountains of shiny things, Packers gear or key chains. It's not a gift shop, it's a cheese shop. I had such a lovey experience here and it's so important to support small/local businesses. Especially one as special as this! Cute little cheese factory in the middle of nowhere. It's a nice place for a quick stop if you are in the area. The area for visitors and easily congested but their variety of cheese is impressive considering it's size. Their curds and sausage were awesome. The man working was really friendly and didn't yell at the seven kids with us who were enjoying the samples a little too much. My family has been stopping here for as long as I can remember when returning from trips to Milwaukee. As a kid I had no idea how good anything was, but my parents suggested I stop here on my way to Milwaukee when I asked for a good cheese stop along the way. I miss Union Star already. We just don't get dairy like this in Denver. Actually, there really isn't another state out of the 49 others that you can go to a place like this almost anywhere in the state. When you walk into the retail store you're actually just in a roped off part of the production area. The cheese curds are so fresh, and those curds are some of the best I've ever consumed (made fresh M, Th, F, & Sa). They also have a ton of other cheeses with a variety of flavors and ages. They must have a dozen types of munster alone. If you love cheese (I know, a small if) and are in central Wisconsin, stop here. Friendly service and all kinds of delicious cheese. I was very disappointed in this place . I have never left a bad review because I just don't want bad business for anyone and I'm also a business owner myself, so I know bad reviews are not good for any new or existing traffic. I am originally from Wisconsin Rapids, close to the Rudolph cheese factory, which is the BEST! My fiancé and I were back in the area for the holidays and decided to check this place out on our way back to Florida. Excited to try something new! First off we were not greeted when we entered, not even acknowledged. They had four standing coolers, one which was not working at all and the cheese was actually warm. Another customer said something about the cooler and the workers response was "yeah.. I know".. Yet they keep cheese in it!? The prices were also a little higher then I am use to. They had NO cheese curds, what cheese place doesn't sell curds in Wisconsin, you can find them at a gas station almost anywhere in the state, but not a cheese factory? I found that odd. They had "flat rate" postal boxes, $13.95 we grabbed one hoping to send the cheese back, where she tells us, very rudely that they don't ship, we would have to go to the post office... Very deceiving! My fiancé who isn't a Wisconsin resident was asking simple questions about their cheese and her response was less then professional, body language, and mannerisms were so rude. We spend over $120.00 in cheese and we didn't even get a thank you. Don't waste your time here, I was very disappointed by the employee and her less then welcoming attitude. I am a frequent customer at Union Star Cheese and I'd like to clear up some confusion about the business. Union Star has 2 cheese plants. The Historic plant in Zittau (on II south of Fremont) is a step back in time when the family owners lived above the factory and both raised a family and produced quality cheese in the same location. The whole family worked together making and selling their cheese out of this factory store. The plant is older but clean and well kept showing pride of ownership. The Zittau plant produces most of the cheddar curds sold at both Union Star stores (Zittau and Willow Creek Cheese on hwy 21 just east of hwy 49 in Berlin). Fresh curd days are Monday, Thursday, Friday, and Saturday after 10am. They make fresh mozzarella string and mozzarella balls every Tuesday. Both stores are open on Sunday but as was always the tradition, Sunday is a day of rest for the cheesemakers while milk is collected from the dairy farms and delivered to the 2 cheese plants to be ready for Monday's cheesemaking. Fresh cheese is made 5 days a week. Production is gauged around the milk production at their 2 local cow dairies. Something the reader may not realize is that milk solids vary by the season. A full vat of milk in July will yield far less cheese than a full vat of milk in the fall and winter months. That is the nature of a cow's lactation curve. Some cheese plants manipulate the milk to remove water and increase solids to increase their yields but Union Star is not one of those plants. Union Star cheese is made with the fresh whole milk from Wisconsin dairy farms. The Willow Creek Cheese plant on hwy 21 in Berlin was built around 2008. It is an extension of the Zittau plant and includes a new curing room which ages the artisan cheeses that require a controlled environment (both temperature and humidity). Willow Creek is the home of Union Star's 'fussy cheeses'. Small batch specialty cheeses are made in this plant as well as the flavored muenster, colby and cheddar. St Jeanne and Red Willow are their 'washed rind' cheeses, la Rouge is their Alpine-style cheese, Feta, Farm house and Port wine cheddar and Dry Jack are some of the small batch varieties. The stores share and sell all of each others products. read more

Union Star makes cheese that is true Wisconsin dairy excellence. I have been going out of my way for the last 50 years to get their curds and brick cheese. There is no other cheese as good anywhere I have been. I currently live in California and their "happy cows" cheese is a bland attempt at making yellow rubber. I hope Union Star will always be there for everyone to enjoy. I have their cheeses shipped to me in cooler weather and have always been delighted when I open the box, brings back fond memories of going there as a child on a Saturday morning and eating a whole bag of curds on the way home. read more
