Gentle lighting washed over the clean, calm interior, and for a moment, the noise of the wet evening seemed to fall away. It was the kind of quiet exhale you only notice after stepping out of the cold. The curry laksa arrived first, a vibrant bowl of yellow curry filled with broccoli, cauliflower, bok choy, vegan shrimp, kale noodles, mushrooms, and coconut milk. Against the grey evening outside, its golden broth looked almost sunlit. It was a dish that seemed perfectly suited to the night, the kind of steaming bowl you imagine wrapping your hands around while rain taps against the windows. The broth was a little watery, but it still carried that small, familiar embrace you reach for on a wet night. The laksa is a dish so many seem to praise, and at first glance, it was easy to understand why. The bright curry, generous vegetables, and colourful ingredients made it look hopeful and inviting. But as we worked our way through the bowl, the balance began to feel a little off. There was considerably more soup than noodles, leaving the dish feeling lighter than expected. The broccoli and cauliflower also had that unmistakable frozen texture, which took away some of the freshness I was hoping for. It wasn't bad, but it felt muted. Like a song that should have been louder, this was a laksa that seemed to have lost a little of its spark somewhere between the kitchen and the table. Then came the smoked eggplant, and suddenly the evening took a more interesting turn. An entire eggplant arrived at the table, beautifully tender and deeply smoky, almost reminiscent of the aroma of a prized cigar. It was topped with Impossible meat, peanuts, salino, and dried shallot, creating a mixture of textures that made every bite feel a little different. The eggplant practically collapsed beneath the fork, its smoky flesh contrasting with the savoury meat and the little bursts of crunch from the peanuts and shallot. The menu mentioned a pineapple sauce, although if it was there, it had quietly disappeared into the background. I couldn't really find it beneath the other flavours. Even so, the eggplant itself had enough character to hold my attention. And then, almost as if the restaurant wanted to remind us exactly why we had come, the Hestia Saffron Curry arrived. This was the moment everything came together. Thick, fragrant, and unapologetically flavourful, the curry carried the kind of warmth that seems to travel beyond the bowl. The saffron shavings melted into the sauce, leaving behind a rich golden colour and an aroma that immediately drew us closer. Beside it sat a little pot of sticky rice, almost ceremonial in its presentation, waiting to be folded into the curry. The sauce clung beautifully to the rice, rich without feeling overwhelming, and each bite brought another layer of fragrance and warmth. There was something deeply comforting about it, the sort of food that doesn't simply fill you up but makes you slow down for a moment. The king oyster mushrooms were very good, but there was a ton of pink mayo dousing it. I would have preferred the sauce be in a separate bowl so we could choose how much dipping we'd like to do. The saffron tofu bowl was sensational! Perfectly spiced and full of a huge variety of well-cooked veggies plus the saffron rice was good too.
