They have plenty of already made knives that you can purchase, but the best thing is an experience of forging your own knife. I chose to make my own knife from a horseshoe. You have one of the blacksmith's working with you the entire time. They handle heating up the metal and giving you very clear direction on what to do. You get to do all of the pounding on an anvil to shape your knife. Once all of that was done, they take it to be sanded and polished and sharpened up. Each knife came with its own sheath. The entire process probably took about 45 minutes, but was the most fun thing to do and you end up with your own knife that you made yourself. The pricing was very reasonable at $50 for one knife made from the horseshoe I went with the mid range price, but there are other options available. I would highly recommend this experience to anyone in the area!!

I took a half dozen good German cooking knives over there to be sharpened, dropped them off while I shopped the farmers' market, and they were ready by the time I was ready to leave. I think they may be sharper now than when I bought them. Just an outstanding job. And at a price that was lower than the first place I tried. I'm very happy with the results and the value, and will try to make it habit to get all my good kitchen over to him on an annual basis. Very highly recommended.

    Anyone who has worked in the food service industry kitchens, be it line, prep, sous, or even…read moreexecutive can testify: your knives are your job, and the lifeblood of cooking. Not only can dull knives ruin ingredients, they are far more dangerous than the average layman realizes. This is why there are so many sharpening services that cater directly to the chefs and cooks in the industry. But, what if you just cook at home? What if your knives are starting to wear and become a little on the dull side? Where can you go? What do you look for? Here's what I advise: look for a place or individual who works openly; by this I mean you can see his grinder, of which there should be at least two; three if they're really good. Secondly, they don't mind you seeing/watching them work. If all they do is take your cutlery to the back, and say to come back in a day or two- go elsewhere. And thirdly (but optional): they give you a demonstration of the sharpness- both to proof their work, and demonstrate the edge of the knife. And lastly, they offer a guarantee to their work. This is not only what you should look for and expect, but it's the level of service that you'll receive if you utilize the services from X-Calibur. X-Calibur owner, Scott Jennings, knows the importance of both sharpened utilities, as well as the value of good quality cutlery. He'll examine each item, determining what needs to be done, and how long it'll take. If you have only one or two, stick around and watch Mr. Jennings work his magic, but be forewarned: he's so good at what he does, you'll think "That's easy! I could do this!", but just like Buddy Guy playing guitar, it may look easy, but it's years and years of practice and experience that got him to being able to do his craft with ease. At the time of this writing, his prices are quite reasonable, and meets all the above-mentioned criteria. So please, take my recommendation regardless if you just cook at home, or work in a Michelin-rated establishment: Try out and use Scott Jennings/X-Calibur for your sharpening needs. You will not regret it.
