I love this pho, I grew up in Denver and got some of the best pho! Very authentic and amazing however ever since I moved further from Denver I've had trouble finding a good authentic pho. It always was unflavored or just.. not as good. THAT WAS UNTIL I FOUND THIS PLACE! It's soooo good. Authentic, flavorful, and delicious!! And most importantly CONSISTENT. The customer service is one of the worst My complaint was they have 3 versions of their menu, with different index for their items. For example P11 in the paper menu is a different dish than P11 in the web menu and even different from the DoorDash menu. Then I have to wait for the manager/owner and after a lot of interruption... she said they have more than 3 different menus, they got 5!! Trying to minimize my concern. We were a long-time customers at What the Pho in Parker. However, I and my friends have noticed this place is getting worse. Price has gone up substantially but the volume of foods have gone down. Genuinely surprised about how good the Banh Mi and Beef Rib pho here. They do it a lot better than other Vietnamese places I've tried in Denver. They source the bread directly from Federal and the Beef Rib was the best I've ever had in a pho. It was juicy, tender, and thicc. Much better than Faifo Noodle House imo. The coconut coffee is also amazing! We get it everytime. My only feedback is I wish the other meats tasted better and that the tendon was more soft. I wasn't a huge fan of any of the sliced meats. Exploring Colorado for the week visiting grandparents. We tried out this restaurant in Parker. A bit dissappointed. I don't think this would count as authentic vietnamese food but more of a vietnamese american fusion food. The pho doesn't have much of the pho taste and smell. The meatball were cut in slice instead of quarters and the rare steak are too meaty and no fat! The service was great. They were quick and fast. Food comes out quick too. The restaurant is very spacy. It has booth seating. The combination vermicelli have a curry taste to it which is not what I prefer. Over all, 2 out of 5 stars. Ordered it through door dash because I had the worst flu ever, and it was piping hot when it arrived! That's never happened. I've never had Pho before but my husband suggested it since I could finally eat again and I figured it was a good time to try it. Everything was sooo good and I already can't wait to order it again. Now that I've had it I need to work on the exact flavor I'm going for but I can't wait to try different variations from here. Walking in, I was immediately greeted! You can choose anywhere you'd like to sit. Even though I was by myself, I preferred the booth. I ordered the chicken pho and man, it was exactly what I needed after being sick to my stomach alllll day prior. It came out hot and tasted fresh. Inside there were a few booths available and a few people ordering to go. We ordered a Thai tea, spring rolls, beef pho and vegetarian pho. The spring rolls had shrimp inside with peanut sauce. My mom seems to enjoy it. The vegetarian pho had tofu with flavorful broth. They provided bean sprouts, limes and extras to add flavor to it. I like it spicy so I added some shiracha to taste. There was another sauce my mom added to her pho that she said wasn't too spicy.The pho came out hot keeping us toasty. The waiter was nice and kept checking up on us. What the Pho? quietly arrived in Parker over the holidays, and I'm thrilled to say that I've found my new favorite pho spot in Parker/Lone Tree/Castle Rock. The location is clean and modern. From the pho to the spring rolls, the food is fresh and great. The service is super friendly, and it feels like a real sitdown restaurant. Located in the former Jozi's Kitchen spot near Safeway, What the Pho? is next to Poke Bowl just off Parker Road, near Planet Fitness. They offer pho bowls, banh mi, and even have Korean dishes for dinner. We have a lot of pho options in Parker, but WTP stands among the best of them. I had the rare steak pho (my go-to at any pho restaurant), and it was one of the best bowls of pho I've had in the Denver Metro area. The broth was light and flavorful. The toppings were bright and served on a real plate. And of course, the size of the bowl was general. We also had the fresh spring rolls, which came with a freshly Vitamixed peanut sauce. We love this place and go pretty often for take out. It's the only place I've found on this side of town with authentic bahn mi, but they're so good I'd drive over to federal for one. The baguettes have a delicate, crisp crust and warm, soft interior. The pickled veg are great - not too strong tasting. I get the pork. Hubby likes the beef with a fried egg and asks for light mayo.
