I've had the opportunity to travel and experience barbecue culture in Texas, Tennessee, and South Carolina, and a lot of what people around here call barbecue doesn't really compare. I'm happy to say that's not the case at Whiskey Hotel Barbecue. I had shredded brisket, Mac and cheese, and the carrot slaw. The slaw wasn't overdressed and had a nice crunch, the brisket was tender and had good flavor, and the Mac and cheese was creamy. You order off the board based on what is available, so it helps to go early if there's something you really want, but I don't mind being flexible because I'd rather have fresh food and understand you can't just make smoked meats on the fly. My partner and I shared the two meat plate and opted for the pulled pork, shredded brisket, loaded potato salad and carrot slaw. We added a 1/4 pound of meat candy and smoked brisket elote. The pork and brisket were tender and flavorful. The loaded potato salad was the smokiest potato salad I have ever eaten and had shredded cheese and smoked brisket in it - so good! Do not sleep on the elote - it is also smokey with a little heat and so creamy and delicious. The Carolina sauce was chef kiss - mustard forward. The KC BBQ sauce was my favorite - sweet, smokey and a little heat. It has always been hard to find good BBQ close to home - not anymore! Service was friendly. First we were misled by their website. The menu posted showed a full range of items and featured the brisket. When we arrived they only had a bar menu and we were told they only due real bbq in the summer. We ordered a drink and food off of the bar menu and it went downhill quickly. Are food was brought out but it was not what we ordered. They apologized and offered to remake it at know charge. We then waited and waited for a burger to arrive and then the waitress said they messed up again and hadn't started to make it. When it did finally come out it was overcooked to the point of not being appetizing. The service was not bad and they did offer us free dessert for all the trouble. We may venture back in the summertime to try the bbq. Found it odd also that they serve Mac n Cheese in the summertime but it's not a bar menu item... read more

This is legit the best BBQ I've had since Terry Black's in Lockhart, TX five months ago! Absolutely amazing chopped brisket and ribs. The bbq pits out back make it look like you're in central Texas. I've never found anywhere in Illinois that makes a proper Texas-style brisket, until now. Everybody else is serving old dry shoe leather. Whiskey Hotel is the real deal, and you can request the wetter end of the brisket if that's your preference. The pulled pork was fantastic as well. Everything is pricey but that's life these days. $28/lb for sliced brisket. $14 for a brisket sandwich which probably had a half pound on it, not slices but diced and chunks. I recommend skipping the sides and focusing on the meat. We had the pinto beans and cornbread and they were great, but not so unique and fantastic as the meat. My biggest beef (pun intended!) is the hours: Thurs-Sun until 6PM. They really need to have evening hours for the dinner crowd, even it's just one night a week. Maybe they'll make it just fine otherwise, but I'd hate to see them come and go for lack of dinner hours. Every "barbecue" place in the area ought to just buy their meat from here. read more

LOVE their food!! Excellent BBQ done right! We're excited for the opening of their new location in Roscoe, IL. When family and friends from out of town come to visit, they always want to make a visit to Whiskey Hotel to get BBQ pulled pork and beef brisket. The biggest plus of all is they source their pork from a farm they went to check out in person located in Pearl City, IL that raises their pigs humanely.
