The rib tips were meaty and not all cartilage with most of the meat chopped off like some places. The meat was very tasty with that bark and a deep grilled flavor that I really liked, like a backyard bbq. I really like that he uses charcoal to cook his food because it's so hard to find places that cook with charcoal anymore and he seems like a like a really nice guy and he let me take my pictures which helps his business. My second thought was that's a nice bark. My third thought was that's a nice smoke ring. The 1/2 rack was a proper 1/2 rack with moist meat that comes clean off the bone. They didn't have that little chew that I like. The ribs were tasty with a nice smoke flavor that has a little kick finish. I can't speak on the rest of the meat's because I'm a rib guy all my life. Overall the BBQ ribs are solid and they have a place in the Milwaukee BBQ community. Did they de thrown my favorite BBQ no but I can get really good ribs with out driving an hour.
