So a lack of care for the quality of meats and poor trading and quality control to send out steamed/stewey cuts on the bottom side. The 16 ounce ribeye looked like a 12 ounce New York strip, so I asked the server to verify that the steak was a 16 ounce ribeye. She went to the kitchen and came back and said yes that it was a 16 ounce ribeye. Both ends of the steak were just fat and gristle, however, the inside of the steak was good. The next time I want a good ribeye I'll either cook it at home or I'll go to the Pine Bluff Casino; I know they have good ribeye stakes. FYI, I've grilled ribeye steaks for years, that is the only cut I buy for myself, my husband loves New York Strips, so the difference is clear to me.
